Best thing to wake up to, Brooke’s World Record, His PR + light years behind.

(Bra ((it’s ribbed, and it’s my favorite… go a size up if you order it!), shorts, long-sleeve.

It’s not super normal to run in a sports bra and gloves, but I’ll blame it on my hormones.

I met up with four girls to join them at the track. One is running Boston in a few days, and her final workout was 3 x 1 mile at her marathon pace. I was really excited about that because her marathon pace is just a bit faster than my mile rep pace, so I knew I’d have someone to chase. We did a 3-mile w/u, 3 x 1 mile on the track with 2-minute standing recoveries, and c/d to 11 miles.

My splits were 5:55, 5:57 & 6:01…. My watch ran out of batteries right after the 2nd repeat, so I used the Strava app to track the rest of the run.

Remember, if you are afraid to run with people faster than you (one of these friends just took 12th in the Olympic Trials!!!), don’t.  I am light years behind these women in races, but it only inspired me to run faster than if I hadn’t gone with them.

Ummmm, can you think of a better note to wake up to?

I think Brooke set a world record for creating the smallest paper fortune teller.  It took my eyes 4 seconds to even adjust to be able to see it.

Andrew hit an 8-minute PR on an 8-mile mountain biking trail segment that he has done often over the years.  That feeling…

And I’m thrilled to be out on my lawn chair, eating popsicles while the kids are riding bikes with their friends.  If you ever come to visit Utah, I need you to try Creamies while you are here.  They are so creamy and perfect… this coconut one is my current favorite.  Most Utah races during the warmer months have these in the finish line area, which is another plus of coming to run a race here.  PS While we were in Southern Utah for Spring Break, we met and talked with someone on the Utah Tourism board in the hot tub for a while, and I told him that I basically work for them with how much I try to convince you guys to come visit for the last (almost) 14 years.

We had 5-ingredient Pesto Chicken Pasta AGAIN because we all can’t get enough of it.

I love how you can tell how Skye talks by how she spelled some words (“wif” instead of with). Adorable!
We make chicken Caesar salads or salad wraps a LOT. I make a mean Caesar dressing and you really can’t go wrong with homemade croutons!
Vermont is famous for maple syrup but the maple creamees are where it’s at– maple soft-serve ice cream. Oh I want one so bad right now. A REALLY VT thing is to do a maple/ blackberry swirl!

The day she says with instead of wif will actually break my heart. CAN I HAVE YOUR DRESSING RECIPE? Brooke adores caesar salad, I would love to make it homemade for her. Okay, if I don’t have a maple/blackberry swirl creamees soon, I am going to be upset. That sounds amazing! This is my first book that I have read from her and I can’t put it down. INGREDIENTS:
1-1/4 cup of light olive oil, divided (basically plain olive oil, NOT extra virgin)
1 egg **AT ROOM TEMP** I honestly let it sit on the counter all day. This is the most finicky part for me.
1/2 teaspoon mustard powder (I use dijon mustard)
1/2 teaspoon salt
1/2 to 1 lemon, juiced
~2 tsp anchovy paste (you can use fresh anchovies but I think the paste blends better and can be saved for longer)
1 tsp Worcester sauce
1 clove garlic, minced
INSTRUCTIONS:
Place the egg, 1/4 cup of olive oil, mustard, salt, anchovy paste, Worcester sauce, and garlic in a mixing bowl, blender, or food processor. Mix thoroughly.
**I love using my mini Cuisinart bc I can add the remaining oil through the little holes on top of the lid and it drizzles in really slowly. I haven’t had as much luck with blenders like the Nutribullet, but maybe with the Vitamix?**
While the food processor or blender is running (or while mixing in a bowl with a stick blender), slowly drizzle in the remaining cup of olive oil. I do about 1/4 cup at a time.
After you’ve added all the oil and the mixture has emulsified, add lemon juice to taste, stirring gently with a spoon to incorporate. Add salt and pepper to taste.

Confession. I’m from near-Chicago and I am not a fan of deep dish pizza. It’s more like a casserole than pizza. Chicago is one of the best cities for food/restaurants so I think it’s a shame that pizza go to a deep dish place rather than one of the many other outstanding restaurants.
Can’t wait for my first time in Utah next week. I wouldn’t be as excited if I haven’t seen all the amazing places you show us!
Goals: When you cross the border in Utah, a sign welcomes you “Janae Baron welcomes you to Utah!” hehe

RIGHT BEHIND DES. I talked to her about that yesterday on our run and how incredible that is… my friend is so humble! I would make a t-shirt with that information on it and wear it everywhere I went. That is a perfect way to describe it… a casserole. When I come to Chicago someday, I need you to give me a food itinerary! I am so tempted to drive down and meet you. Janae, I really do think the tourism board owes you one! I’m not sure I would have wound up in Utah running St George (and now LOVING St. George, SLC, etc) had it not been for your blog :D Soooo grateful for that.

Your pasta meal looks amazing! I like to buy the chicken schwarma (next to the pesto chicken at TJ’s). I make bowls with the chicken, roasted sweet potatoes, roasted zucchini or other vegetables, feta, and sometimes add in hummus and walnuts. It is so good.
Also the greatest treat from my state is Bluebell ice cream! Have a great day!!!

Popsicles at the finish line of a race sounds heavenly! I need that to happen at my half next month. I’m not sure if this race still happens, but there was a 5K/10K in and around Knott’s Berry Farm (benefiting a special needs school in the area), and they gave you a slice of their famous blackberry pie at the finish. So yummy.
Congratulations to Andrew!!! 8 minute PR, wahoo.

I’m from TN and came for the St George marathon two years ago (when it was warm,ha) and had the creamies post race. So good!

Skye’s note is the very best! Funny, not sure if it is hormones or not but sports bra + ear cover headband+ gloves is my FAVORITE way to do speedwork (and my fave running weather). Tank and gloves is second favorite. My hands are really sensitive to cold so I need gloves under 60 degrees… and no way I’m wearing a tank if it is over 45 lol.
