Now this was an incredible dinner and I thought of it all on my own (or I really probably saw it on Pinterest or Instagram or something and subconsciously couldn’t forget about it because I wanted it so bad).  

I cut a green pepper in half, took out the seeds and then layered it with salsa, brown rice, cooked cubed chicken and my favorite seasonings (Trader Joe’s South African Smoke Seasoning Blend) baked it at 415 degrees for about 12 minutes (keep checking it to make sure it doesn’t burn) or until the green pepper softens and looks cooked.  

Plus some avocado because heaven forbid I not eat all of my food before I leave so that it doesn’t go bad.

Last night after Brooke went down Candice picked me up for our date and we met Heather for a power yoga class. PS I love that I met them both through the internet (blogging and instagram).

The class we went to was amazing and I will definitely keep going to this teacher.  It was challenging but she explained everything perfectly and it was just the right mix of stretching and strength.  She played music from some of my absolute favorites… Death Cab for Cutie, Florence and the Machine, Sara Bareilles (GRAVITY.. one of my all time favorite songs ever) and Coldplay.  I kind of need her playlist.  

This break from running/cardio is at the perfect time because it is getting me to yoga every single day which is great in the long run for my running and overall flexibility but also for my emotional health.  There are things I am still working really hard to process through and I never really get a chance during the day because I am busy with Brookers but during yoga I am really able to take the time to think and work through things.  I always feel so much better afterwards.

Cross-training also helps me to remember that I really do love so many different types of fitness.  If running isn’t your thing then find what you do love and do that!  Try out as many things as you want until you find what you love the most.

And because I am going away the girls wanted to get in a froyo run before I left for Kentucky.

Honestly.  This is my 100% honest opinion.  I have never had a better froyo flavor than this one.  If you have a yogurtland in your area then I insist that you go try this one today.

The really exciting part of the yogurtland trip was that I got mine for free!  Each day they put up a random weight on the sign and if you can get your froyo to be that weight then you get it for free.  Last night it was 12.3 ounces (wow, that is a lot of froyo) and I nailed it (Heather did too) … as you can imagine 5 bucks of free froyo made me just a little beyond happy.

And we are off to Kentucky.  Brooke was a little confused about why in the world I was getting her up in the 5 o’clock hour but she will see it is all worth it because in just a few hours she will be with her 5 cousins.  Thanks mom for taking us to the airport!

PS THANK YOU so much for all of your suggestions on what to pack for Brooke on the plane.  There is enough food for 3 days now, stickers, I wrapped some of the toys (um.. amazing idea you guys!), magnets, an old wallet with random things for her to take out and put back in and a few other great ideas you guys gave me.  THANK YOU!  You have saved us:)

Mmmmm avocado. I love it on fish tacos but it’s also really good on sandwiches. I used to take a really ripe one and mash it up a little bit then use it on a sandwich in place of mayo.
Lip gloss all the way. Laura Mercier makes some good ones.

Your mom is so cute! :) Yoga is AWESOME!! I am a little type A, so when I first tried it out I was wary of it…but it really does mellow you out and just melt problems away. Check out hot yoga! Makes you feel like a whole new person.

One time I got the magic number on the scale at Uswirl. They were about to ring mine up for free and then the scale changed! The kid said, oh sorry that happens sometimes. So I didn’t get mine free and it seemed so rigged!

I love chapstick and lipstick, but the lipstick has to be a good smooth one that is moisturizing also!

It reduces stress and increases energy! Seriously, running is my therapy.

I wear Carmex all the time. Sometimes I’ll add gloss on top. But seriously, I currently have 1 Carmex in my pocket, a few in my purse, one on my night stand. You get the idea.

My favorite reason is that all you need is a pair of running shoes!!!! I just did my first tri, and it is INSANE how much gear you need!!! I was so worried about forgetting something because there’s just so much to keep track of! In that respect, give me a running race any day! :)

I really appreciate the fact that you are taking a break from running. We often get sucked into the “must be distance ready” thing, where we feel like we always have to keep running, even when it just doesn’t feel good or natural. I am so glad I rediscovered my love for weight training, yoga, pilates, spin, hiking by backing off from the running mileage :)

Kentucky! I’m guessing you’ve been there before, because you have family there, but it’s so beautiful. Maybe I’m biased because I love horses. I visited there once when my ex and I were fleeing yet another New Orleans hurricane, and we went to see the Horse Park. Great state!

Burt’s Bees (peppermint kind) chapstick all the way. I am never without one. In fact, I take one with me to all my half marathons, put it on right before I line up, and then throw it to my boyfriend to hold haha. A major plus is that my boyfriend likes it and he says that sometimes he’ll lick his lips and when they taste like peppermint he is reminded of me :)

Avocado is good on anything!! I love it on toast with a runny egg in the morning. It also makes any salad or other dish better!

I’m a lip gloss girl when I wear anything. Lipstick is so bright and such a commitment. Plus, I am a remedial makeup wearer-I never know what looks good on me. :)

Favorite thing with avocado… EVERYTHING! I just love it so much, yum! I’ve been cutting out grains, but I used to this for lunch everyday – brown rice cakes, mashed avocado, sea salt… it’s perfection, I promise.

The anytime anywhere one is the biggest reason, I think! Chapstick or bust for me, and I eat avocado with everything, but the one thing I think it has to be with is a salad. I pretty much don’t eat salads if there’s no avocado on it.

Good luck with the trip. Keeping kids busy and happy on a plane is tough, to say the least. It doesn’t help that I get as cranky as they do!

Avocado is SOO good. I’m off dairy for the time being because it bothers the baby, so avocado mixed with salsa has pretty much saved taco night over here.

I think the question is, what DOESN’T taste amazing with avocado? Avocado makes everything better. That avocado and pineapple salsa on the chicken I made last night was sooo good. But I love to eat with eggs and pico. I love to slice it and put it in turkey, wrap it up and sprinkle it with pepper. Aaaand now I want an avocado. Good thing I have some on hand. Always :)

Ahh I used to travel with my mom A TON when I was younger and she would wrap gifts and it 100% kept me occupied. Best idea ever.

Running also helps support my workout-clothes-addiction ;) Gives me a reason to buy insane amounts of leggings, spandex, sports bras, shoes, etc

Definitely “It makes your heart happy.” A good run does that in every sense of the word…like you know that feeling after a good run where you’re out of breath and your soul is just happy and you’re thinking “Thaaat’s the stuff.”? <– that is when my heart is both healthy AND happy. :)

Free fro-yo is my favorite. Which is why I am religious about my 16 handles card- every time I reach a certain amount spent (I’m afraid to know how much), I get $5 free of froyo!

Running is my favorite way to explore and see new places – plus it allows me to be spontaneous. All of the other reasons listed are true for me too! Favorite place for an avocado is on a gigantic salad because it adds so much flavor and a nice smooth texture!

Lip Gloss is my go-to when I’m out, but if I’m around the house I just stick with chap stick.

Right now lip balm (Lip Smackers Coca-Cola is flavor of choice) or a frosty color stick -nice lip balm quality and stays on for some time. :)

I was reading this post with my 2 y.o. daughter on my lap, and when I got to the picture of Brooke with the lip gloss, she got really interested. Every time I tried to keep reading, she said, “Go back up. I need see something.” She wanted to know what Brooke had, and I told her it was her mommy’s makeup. I asked her if little girls are supposed to play with their mommy’s makeup, and she responded, “Yeah, she smart!” Your little one is already a role model! Have fun in Kentucky!

Avocado has been a fav of mine from even before I called it avocado. I grew up in Jamaica and there, we call it pear. I used to love eating it on spiced bun, which is like a heavy sweet bread. I love savory and sweet together.

I’m so jealous of all the amazing, awesome, supportive friends you have! I have no friends here, besides my boyfriend and, geez, sometimes a girl just needs a girls night!

I need to print out that “Reasons to Run” picture and pin it up somewhere where I can see it everyday. I’ve only worked out twice the past 2.5 weeks or so, partly because I’ve been working for my boyfriend on my days off, and for a few hours on Monday and Friday when I work so I have been utterly and completely exhausted. But I’m also just lazy and haven’t been able to force myself out of bed early enough to run. How about you come and visit me in Pagosa Springs and you can walk with my while I run (I’m sure your walk is probably my run) and that’ll help motivate me ;) I’ll take you on some beautiful hikes, we can go rafting down the river, we can go to the natural hot springs, and I can’t think of too terribly much more.
