Totally normal that…

Totally normal that all of my best friends are under the age of 12.

IMG 0568

First of many 1,000s of lbs of watermelon that I will be eating this season.  I eat an absurd amount of watermelon.  Everything about the watermelon is just so perfect.

IMG 0569

My sister was sick yesterday so I took over her kiddos for the evening.  Having 5 mouths to feed gave me some motivation to actually make a real dinner for once.

The key to making baked chicken taquitos at home—>  Buy the uncooked corn tortillas because once you cook them on the stove they are so much easier to roll (without them breaking) than the normal corn tortillas.

IMG 0570

I cooked 2 chicken breasts in the crockpot and once they were done I shredded the chicken, added 1 tbsp of taco seasoning, a can of rotel tomatoes/diced green chillies and some cheddar cheese.  Put the chicken mixture inside of the cooked tortillas and baked them at 350 degrees for 20 minutes.  The kids absolutely loved them.

Megan’s birthday is TODAY so we went out to celebrate her birthday eve at her favorite hang out spot.  I met Megan through the blog 3 years ago, meeting people via the internet is clearly the way to go…

IMG 0744

Very fitting that they had the froyo flavor Birthday Cupcake last night.

IMG 0574

I am good to go on the dairy again.  That was a tough 3.462 days.  Megan brought us THESE amazing banana whoopies because there wasn’t enough sugar in our bowls already.

IMG 0742

I loved this post from Kara Goucher’s Instagram yesterday:

IMG 0557

Rest day for me.  I love taking the day off before a long run so that I have fresh legs to get in a killer multiple hour run the next day.

Brooke will be gone for our normal Sunday morning pancake tradition so we are moving our favorite tradition to this morning instead.  You gotta do what you gotta do.

Today is sort of a rest day for me, I am flying to Japan today so I just woke up early to get in a quick at-home workout of burpees, squats, crunches, and push ups so I won’t feel so blah while I’m sitting all day.

I follow Mindy Kaling on Instagram and I think she’s so funny. Check her out if you aren’t already following her.

Ps I’m totally making those taquitos, I love that they’re a healthy version of the frozen ones that I love so much but are so bad for me

I like to follow ultrarunner Timothy Olsen on Instagram:

http://instagram.com/timothyallenolson

He’s always posting pics from his training runs which include lots of miles and lots of vert!

Thanks for the tip about the corn tortillas. Mine ALWAYS fall apart and I had pretty much given up and resigned myself to the fact that I would need to eat them with a fork. I’m definitely trying your tip! :)

Reply

Did you listen to his interview with Rich Roll on Rich’s podcast? It was AWESOME.

Reply

I didn’t, but I am going to check it out now! Thank you!!

LOVE Rich Roll and never miss a podcast.

I read his book – awesome!

I like all Mexican food! But here in Canada we are quite limited to good Mexician – even Chipotle is hard to find!

I took a rest day yesterday – back at it for a long run this morning because the weather is nice and I have the day off work/Max is going to daycare.

I am a great person to follow on instagram – @Rebeccaruns is my handle :-) I also like to follow @olivetorun @runladylike and all the runners/olympians

Reply

That dinner looks great! I had Chipotle last night…yummmm. I like ALL Mexican food. Give me all of it. Actually I’ll pass on enchiladas..

Today is my rest day – I’m the same as you. I like to rest the day before the long run (although my long run is only 8 miles tomorrow :) ) I usually rest Fridays and one other random day per week.

I RARELY get sick (knock on wood). Eat healthy and sleep a lot! That’s my secret.

Reply

I love any type of taco- I especially like taking fresh fish (salmon, cod, whatever) and marinating it quickly in lime juice and chili powder, grilling it- then doing a taco with the fish, a lime based slaw, avocado, and a spicy sweet salsa! (maybe a crema or sour cream, too!)
I am so bad at instagram. I’ll need to steal suggestions, too!
First post-marathon jog/shakeout today. I’ve done some elliptical, but since I can go down the stairs facing forwards today, I think it is time to run :)

Reply

Thanks for the tortilla top and those enchiladas sound delish and super easy. I’ll be giving them a try! Rest day for me too! Have a great weekend!

Reply

ooh, homemade taquito’s! I’ve got to try making that, I’m seriously lacking in my homemade mexican food skills.

Reply

Chicken fajitas are my jam!!

Reply

I’m so going to try those tortilla’s they look great and I love making things from scratch as you know exactly what goes in them.

I have had multiple multiple multiple rest days…. Recovering from a knee reconstruction and really struggling mentally with the sitting around. Reading all your runs and followers comments to live through the running right now. Have definitely learnt what a huge part of my life runnung and training is and I will NEVER take it for granted again!!

Reply

I can not wait to buy my first watermelon of the season!

Reply

The dinner looks amazing! I’m sooo glad you can eat dairy again! Daily ice cream/fro yo is a must…I’m convinced it is keeping away stress fractures. :)

Enjoy your morning with Brookers!

I also follow Kara and I loved her post! I am also looking for awesome people to follow on instagram.
I usually take my rest day on Sunday, the day after my long run. But I uusally take it easier on Friday so my legs feel fresh on Saturday. However, since I’m not training for anything right now and dont have a specifc distance to run tomorrow, I took body pump this morning. I have a feeling my legs will feel pretty heavy tomorrow!

Reply

I could eat Mexican all the time!
My favourite instagram feeds: National Geographic (natgeo), Tourism Jasper (tourismjasper) which has gorgeous pictures of our National Park, and Kilian Jornet (kilianjornet) for his beautiful running and skiing photos!

I love instagram so much. It is way better than instagram! I like following celebs and runners and my friends of course :)

I haven’t been really sick in a longgggg time (knock on wood) so I hope to keep that streak going and I’m glad you are feeling better!

I’m taking an impromptu rest day today because I have a 5k tomorrow. I was going to do weight training at lunch, but just decided against it.

I love love love Mexican food. I love making enchiladas in the oven though and I have perfected either chicken, carnita, or black bean and butternut squash enchiladas…they are AMAZING! The hubs approves :)

HAPPY FRIDAY!!!!!

Reply

I had a migraine on Wednesday so that was the last time I was sick. It was the first one in about 6 months which is some kind of record for me. Which is awesome.
Do margaritas count as food? They’re definitely my favorite Mexican food. After that? Probably enchiladas.

Reply

Your dinner looks amazing!! I could eat Mexican foods all the time… I love a good taco, enchiladas, home-made gaucomole, margaritas, corona’s, etc :)

Reply

Birthday Cupcake????? Ugh if it’s anything like cake batter, I’d be addicted within seconds and totally regret not getting the bigger cup to fill to the brim. And yum!! Great job on the dinner, it looks and sounds beyond good! I love me a good burrito, I know I know, I’m so fancy haha ;)

I saw that post from Kara Goucher and loved it! She is so motivational. I just saw her at the Boston Marathon expo and she was awesome!

Have a great weekend!

I love following Kaley Cuoco from Big Bang Theory. She seems like such a normal person but she posts some of the funnest photos! I love that photo as well from Kara! I always take a rest day before my long run Sunday {so resting on Saturday!} Have a great weekend!

I rarely get sick and I hope I don’t jinx myself for saying that! lol. I’ve noticed that drinking green smoothies almost everyday has really improved my immune system!

I love Mexican food! I have a Mexican friend who’s mom makes fresh tortillas and it’s way better than anything that’s store bought or at restaurants!

Reply

Yes- forgiving yourself/letting go of the guilt beating is so so important! I love the picture with Kara…
I’m a fan of any sort of cake/cupcake flavor with froyo. YUMMMM.

I follow a gazillion dogs on instagram…is that weird?

I also hardly ever get sick. Wait! Hold the farm, maybe I’m part dog. That would explain a lot…

Reply

I was last sick over easter and it was cruel. No Easter eating for me. I was sick to my stomach (violently) and am finally just back to normal.

Fave Mexican dish is most definitely chips and guac.

Reply

I took Tuesday and Thursday off this week after running the Boston Marathon, with a short shakeout on Wednesday. I love runemz on Instagram because she is so motivating! She runs so darn much!

Reply

I follow Mama Laughlin, Kara Goucher, you :)
I don’t get sick often, but I did have surgery on my broken hand in February, no good!
I took Wednesday off from running, I have a 1/2 marathon on Sunday, so I’ll probably do a quick shakeout run tomorrow.
I pretty much love all Mexican food and those tortillas are amazing! Have you tried the flour ones? You seriously can’t go wrong with fresh tortillas.

Reply

Favorite Mexican….hmm let’s see, anything covered in cheese and guac so pretty much any and all of it! I’m going chimichanga though…so bad for your heart, yet so good for your soul. And I took Tues as my rest day and Thurs I didn’t run but I did some strength training and other cardio types. Have a wonderful weekend.

Reply

You count as one of my favorites of course (though I hope I don’t count for you since 99.9% of my posts are coffee LOL. ;).

I’ve been taking some easier weeks lately to prepare for marathon training in a few weeks to start.

Reply

Carne asada is my favorite dish.

I was sick for a few weeks. My neighbor said it was “malaise.” I wasn’t sick enough to go to the dr. I was starting to wonder if I could be pregnant.

I need to try those tortillas.

Reply

I made my son tacos this week and he was thrilled. I really need to do that more often. Birthday cupcake is such a cute flavor name; I sometimes like the names of the flavors better than the actual taste lol. Lately they all taste the same even when they call them something else!

Reply

Omg you are eating watermelon with a spoon…. Quite possibly the most absurd thing I have seen today… :P

Hehe greetings from Australia!

Reply

Ugh last time I was sick it was with the 24 hour stomach bug. THE WORST. That was two weeks ago.

Today is a rest day for me! So I can get a great long run in tomorrow. :)

My favorite Mexican dish…that’s a tough one. I love tacos, or taco salad.

Reply

I loved Kara Goucher’s IG yesterday as well. Her son is about my son’s age and she was a huge inspiration for me as I got back into running after he was born.

I’m way impressed that all the kids loved dinner! I have 3 and there’s maybe only 1 thing I make that they’ll all eat! You must have a secret touch or something ;)

Reply

Love, love love that instagram from Kara. Needed that today!

Reply

I’m on a long running break while I finish nursing school. I know for some people running clears their head but it’s the opposite for me and it’s just more to think about and stress over. So it’s just me and the books, care plans, and lab stations until late May.

Last time I was sick it was the stomach virus our town passed around. Lots of fun.

I don’t know if I can choose a fave Mexican food dish! I just love them so much I have to rotate: fajitas, tacos, enchilladas…..

Reply

I am knocking on wood because I cannot remember the last time I was sick.

Reply

Well done on the dinner!

I’m kinda anti-social when it comes to social media (I’m a non-facebooker OMG!), but I’ve recently gotten hooked on Instagram and other than my friends and family I love boxersofinstagram (yes, I’m a crazy boxer owner)…
The last time I was REALLY sick was two years ago, down for the count for like a week – ugh!! But I rarely get sick, because as I chant to myself all winter “sickness is not an option!”… The kiddos and hubby get sick, but mommys don’t have time to get sick :)
I’m sneaking in a quick three miles today, which for you is probably considered a rest but for me it’s a real run :) And I love all things Mexican – tacos, flautas, fajitas, guac, albondiga soup – yum!!!!

Have a great weekend!! Hopefully you have lots of distractions planned until Brooke is back home ;)

Reply

Favorite to follow on Instagram: Tuxedotrio (the most adorable 3 cats that look like they are wearing suits EVER)

And favorite Mexican meal?! That’s tough–I LIKE IT ALL. I mean…chips. I could eat baskets and baskets of free chips. I’m also a sucker for an enchilada. I need Mexicano now!

Reply

Oooooh that dinner sounds fantastic!!! My husband would love that. WILL be making stat!

Last time I was sick was like 2 years ago–seriously.

Reply

Brooke is too cute with her cousins and I want to try those chicken taquitos! Last time I was sick was last year – I had pneumonia when I was 8 weeks pregnant, not a good combo at all.

Favorite Mexican dish is anything with guacamole on it. Seriously. Anything.

Reply

I took a rest day Sunday (post race) and Tuesday… Some times they are technically rest days, just more like I can’t fit it into my schedule days:(

I LOVE burritos…When I was in college there was a place called the Burrito Bar and their burritos were ginormous and fabulous…. now that I think about it, the next time I’m visiting my SIL in Staten Island, I WILL be eating there

Enjoy your rest day! You have easily earned it:)

I love following ashruns100s!!! I started following her blog and Instagram after you did the interview with her!!! She is so inspirational and kicks butt!!!!

Favorite Mexican dish: steak fajita quesadillas. Sooooo good.

My husband manages an IG account of just our dogs. So weird, I know, but I love it. @phillipsfurchildren

Reply

I love Mexican food so much I may be making that for dinner but I want it right now. Right. now. The banana I just had didn’t do it for me. It doesn’t help that I really don’t like bananas.

Reply

Those taquitos look good! Today is my rest day and I’m pretty excited about it!

Reply

I love following Lauren Fleshman on IG (bc she’s hilarious and awesome)! National Geographic is also worth a follow.

Reply

Today was a slower and steady run for me, and I loved it. Yesterday I pushed and my legs needed a break, and tomorrow I’ll be ready to hit the ground running! See what I did there :)

Reply

I love making flautas and taquitos! I’m going to have to try those tortillas because yes, I run into that same problem and it’s annoying!!

My favorite Mexican dish (hard to choose cause it’s probably my favorite cuisine) is grilled shrimp tacos.

Last time I was sick was just a couple of weeks ago I had just a cold.

My rest days are always Wednesdays. Works out well cause it’s the day my first grader gets out of school early.

Have a great weekend!

I haven’t been sick in a while (knock on wood) at least that I can remember. I follow Run Eat Repeat on Instagram. She’s fun and hilarious!

I made chicken taquitos last night with the tortilla land tortillas also. Weird! I used this recipe and they were so delicious. http://dropdeadgorgeousdaily.com/2012/02/taste-it-quick-and-easy-creamy-chicken-taquitos/

I don’t really get sick much. I saw another commenter said she had a migraine the other day, but I get those so often that I don’t consider them “sick”…they’re just part of life for me. Favorite Mexican food…I love chile rellenos but can’t eat them anymore :( I used to love getting a chile relleno plate and turning it into little chile relleno soft tacos. I don’t follow a whole lot of IG’ers but I do have a lot of fun on there. Rest day? Apparently, there’s no rest for the rehabbers ;-) I’ll be suiting up in full rain gear to go for my whopping 10-minute walk in today’s storm. Oh, wait! Since I’m walking I’ll only need an umbrella! #rehabworkoutperks

I took rest days Monday and Tuesday so the rest of the week is all running!

I love a sit down Mexican restaurant where you can get sizzling chicken fajitas and fresh guacamole!!

Reply

there is so much watermelon in my daughter’s hair right now it borders on the obscene.

Dogs of IG is prob my favorite because they are so cute! I got that one from you though! I also follow Erin Andrews because she is always doing fun sports stuff. Other bloggers-Olive to Run and Run Eat Repeat are both good too. For something kinda cheesy and adorable-Disney Taught Us.

I could eat Mexican food for every meal! I love all dishes.

Reply

I looooove watermelon. I’m so addicted to it. My husband grew it in our garden last year and omg it was incredible!!!

I read Karas post from earlier this week abt how she he knew this wasn’t the year for her to do Boston bc in Boston you have to give it your BEST. She is so cool and inspiring! (Just like YOU!)

Reply

I did my long run today so I could take off Sunday! We are having my daughter’s 8th birthday party so it’s going to be busy.

I love avocado with any mexican dish! and refried black beans.

Reply

Where do you find those uncooked tortillas?!!! Are they refridgerated?
I want to make that!!!
I did speed today! Just signed up for another 1/2 next month….time to train!

I like to follow bloggers I like, of course, but I also follow random photographers who have a completely different, exotic life that I will never have. I love @thomaspeschak and @zakshelhamer.

Mondays are usually my rest days, but this week is all in a wack cause of Boston Marathon being on Monday.

I follow a lot of random blogs and friends that post but sometimes I just a pick a hashtag and see what people have posted.

Reply

Choosing a favorite Mexican food dish is like choose a favorite child… Nearly impossible. Enchiladas, quesadillas, tacos, burritos – I love ’em all.

Enjoy your rest day! During my half marathon training, I always loved a rest day right before my long run. My legs felt extra fresh!

Reply

Oh my goodness! I got SO sick with Shingles last November! Totally a sickness reserved for the elderly but it decided it didn’t want to pass me up! It was horrible and so painful! Really got in the way of my workout flow!

Reply

Rest day for me too! Short run tomorrow and then 9 miles on Sunday.

Have you tried Lonestar fish tacos in Cottonwood Heights? They are amazing!

Reply

Those taquitos look DELICIOUS!

I’m actually sick right now, but I can tell my cold is almost gone :) just in time for the WEEKEND! Woo!

Reply

I had a stomach thing night before last which of course freaked me out since my half is in 2 days! Didn’t stop me from taking a hike with my kids. I am so making those taquitos next week! Hope ur sissy feels better never fun being sick with 3 kids. U must be such a blessing to her!!

Reply

I just got a cold yesterday and today it has been brutal! I hate being sick.

Today is a rest day for me as well! I took Monday off and I am taking today off. Tomorrow I will do my semi-long run. Cutting it shorter because I am racing a 10 miler the following weekend!

I have never seen those uncooked corn tortillas in the store…definitely intriguing. I wonder if they sell them in the stores near me. I love mexican….Shrimp Tacos are pretty good…and guacamole with everything.

Reply

I’m a fajita person, and that quote is so inspiring! I need to follow more cool people on instagram.

Reply

The last time I was sick was when my son brought home a gastrointestinal bug from daycare. He was a little bit sick, but not horrible. I was the sickest I’ve ever been in my life (including having food poisoning) that I ended up passing out twice the next day. We went to the emergency room because of it and they found that I was severely dehydrated. I could barely move. I ended up on an IV and received three bags of fluids. I would never wish that on anyone!!

Reply

Rest day tomorrow for me, I had to take an extra one this week as after speed work I did *something* to my foot and I now can barely walk… it was so sudden it really shocked me. I’m hoping it’s not plantar fasciitis again *shudders*

Reply

You can follow me, but it’s mostly pictures of my puppy instead of running recently! I love Lauren Fleshman’s instagram – she is so funny! I also follow Kara’s.

I’m currently slow cooking chicken and beef to make your taquitos. After making the s’more bars, I’m sold on about any food you post!

Reply

Apparently it’s time for a rest day for me… Or maybe two. This mornings run was totally tears of frustration. My legs were tired and hurt. We are heading out of town for two days for my husbands endurocross race (dirt bikes). I’m going to try to make myself take both days off and focus on sunbathing and beer. I must need more than one day off because the shortest runs are torture right now. Not that any of my runs are very long at this point, but I’m still a running baby and sometimes I forget that. I love it too much to want to rest.

Reply

I am actually sick right now… fun. Best guess is flu or food poisoning. Last night and this morning, I literally wanted to just die.

Reply

My fav Mexican food is all Mexican food. Seriously, if its covered in avocado, I’ll love it.

Reply

Yum! I am taking the rest of this week off – just ran a marathon on Monday:).

Reply

Thank you for the Kara share. I DNF the Boston Marathon. I woke up with a stomach bug and could keep nothing down. I got to mile 9 before stopping and was taken to the emergency room. I have been going over everything, could I have walk the rest of the way, should I have tried harder. I need to forgive my body and move on. Thank You!

Reply

Sorry to hear that! I hope you’re feeling better and taking good care of yourself! xx

I met my VERY first blog-reader this week, and it was terrifying (I’m not as outgoing as I may seem lol) and amazing at the same time. Hoping more blog-friends contact me to meet up with them, because I have no idea where in the world people live.

Reply

Last time I was sick I had the horrible cold/flu that went around this winter — it lasted forever!

Reply

Hmmm, this post makes me wonder if I should start an instagram account.

No rest day today! Beaver, my treadmill, received a lot of love from me earlier this morning. Rest day will be on Sunday.

The flu hit me a few months ago. It was not pretty.

This is kind of embarrassing, but I really love the chicken quesadillas from Taco Bell. I know I’d be a lot cooler if I frequented authentic Mexican restaurants more. But Taco Bell has won my heart.

Reply

Last time I was sick was last weekend. I had a fever and zero energy. It was lame.

I’m pretty much taking this weekend off, my boyfriend has been out of town for two months and he’s back just for the weekend.

I know it’s not really Mexican, but I love nachos. Like, a lot.

Reply

I took a rest day today too! This is my first COMPLETE rest day for months. No yoga, no walks, no 8 minute abs! Telling myself I need it!

Reply

my favorite Mexican dish is a toss up, make chicken fajitas and then the next day use the leftovers in quesadillas

Reply

Fav Mexican dish? Doritos! . . . Well, I guess that doesn’t count, but then again, isn’t all Mexican food the same (flat bread, beef mince, lettuce, tomato, salso, sour cream, etc.) but just arranged in slightly different configurations? I think I’ll have nachos.

Reply

All of my days are rest days for the past couple of weeks. I’ve been walking a few miles everyday, but I’m way too uncomfortable to run now. It’s kind of a fun vacation from running. I’m hoping it means I’m even faster when I come back to it.
