Salads, Favorite People and a New Recipe!

After a 6 MILE RUN and weight training.…I was a hungry beast.

The only thing that could satisfy my screaming belly was a salad the size of my niece.  It was a winning idea to go to Fudruckers (with my awesomest bro and sister-in-law Danny and Shelly) for my collosal salad and B could get a burger.

That was until they brought out a salad with ICEBERG LETTUCE!!! WHO DOES THAT.

I showed Fudruckers and went to their condiments section and loaded my plate with romaine, pico, tomatoes onions and pickles.  MUHAHAHA.  No one will get a way with selling me $9 of water lettuce.

I promise, he really does love me constantly taking pictures of him when back in the good ol’ days he could eat his burger peacefully without me saying, “okay, now take a big bite of your burger and at the same time hold up a fry with creepy eyes while giving my blog friends a big smile to show them how much you love them.”

Before we knew it, it was time for more food.  Of course I had to go to Yogurtland one more time before we left.  It wouldn’t be right to leave without a kiss goodbye.  I met my beautiful Hawaiian Makena (bff’s since forever) and her two daughters and family (practically my family too).

I got my usual, 5 different flavors with at least a scoopful of each topping.  Mix it all together and love every bite.

Goodbye MAKENA (she leaves next month) until I come visit you in Hawaii (I guess I should ask Billy about this first before putting it on the blog, oh well).

Gotta love photos where you realize that when you smile your cheeks push your lower eye lid up so that you are completely squinting.  PS Makena is training for the MAUI MARATHON this Fall….I really do need to go be her number one fan right?!?!

After a trip to Runners Corner (I’ll show you the goods later) we went and did laundry and hung out with my parents and celebrated an early father’s day with the WORLD’S GREATEST DAD!!! Yep, he is honestly the coolest/funniest/smartest/KINDEST/happiest Dad in the whole wide world…LOVE YOU DADIO!!!

After dinner we were flipping through my mom’s Food Network magazine and this rice pudding caught our eye.  One quick trip to the grocery store and we were ready to make some rice pudding on top of blackberries. This was my first time EATING rice pudding ever and it was AMAZING.  Seriously, try it now.

Bring 2 cups rice, 1 2/3 cups milk, 1/2 tsp vanilla and a pinch of salt to a simmer in a saucepan over medium heat.  Cook, stirring occasionally, until creamy, 6 to 8 minutes. Remove from the heat, stir in 3/4 cups white chocolate chips and let sit a few minutes. Serve over WHATEVER FRUIT YOU WANT!!

-Yes, it sounds nasty but KETCHUP and sometimes bbq sauce!!

How do you entertain yourself on a road trip?

-I am going to finally reply to emails…..sorry it took me forever!!!   I will also be munching on the cooler of food I packed, reading, watching Friends and telling BIlly all of my best jokes.

I’ve never tried rice pudding but after seeing that your recipe includes chocolate I think I may have to give it a try! To keep busy on a road trip, I usually bring several books and my Nintendo DS (yes, I am 25 years old and have a children’s gaming toy). I’ll also create road trip playlists on my ipod to help pass the time. I’ve never been to CA but I’m actually going for the first time this summer! I’m visiting a friend for a week and she’s going to take me to LA and Hollywood and Disneyland and I can’t wait!!! Hope you have a safe drive out there!

Seriously- iceberg lettuce at a restaurant is just plain ridic! I LOVE Cali! My aunt and uncle used to love in Santa Monica- it’s absolutely gorgeous. Definitely take a walk along the pier. I’m not sure where you are going, but if you’re more up north- Monterey and San Francisco are super cool places to visit. Also, Yosemite National Park is ahhmazing. But, that may just have to be a trip in itself ;)

You should have him take you up there, because your hike up half dome will give you an endorphin high, and a body hurts so good to rival some of your epic long runs. It’s awesome!

6 miles? Yay! Looks like you are well on your way! Congrats! I’ve only been to San Fran and that was 3 years ago! Would love to visit more of Cali! I love baked potatoes, butter and sour cream, salt and pepper are my favorites. On road trips I read, I know, weird, but it doesn’t make me sick!

California is the best! My cousins used to live in San Diego, so I’ve been there once and San Fran a few times. I really wanna move to San Fran after college – it’s beautiful out there!

I have been to Cali a few times, mainly to LA/Anaheim area. But this summer we are taking a 10 day road trip down the west coast all the way to San Fran and then to Anaheim for the Disneyland Half Marathon, I can’t wait!

I entertain myself by playing games with the hubby, like I spy ;) haha. This time around I sense some blog reading though.

I love rice pudding! One of my favorite desserts!

That is my biggest dang restaurant pet peeve… stupid iceberg lettuce!!! So cheap and watery!
That rice pudding sounds simple and really tasty!
Road trip= 12-hour drives from NC to MI…so we listen to books on tape/cd, watch movies on the laptop, listen to ridiculous old cds, take naps, eat jelly beans and twizzlers, and battle over how many/few rest stops we have to make because SOMEONE (Me) drinks too much water in the car. :) Have a safe trip!

CA! Hooray! I hope you have tons of fun! Well, there’s plenty to do down here! There’s actually a LOT of really great running and cycling tracks and, of course, plenty of pools. We have Disneyland, water parks, movies in the park, concerts in the park, yoga in the park, dollar theaters, great restaurants, and the list goes on!

Ketchup on a baked potato does not sound gross at all! Ketchup is my FAVORITE condiment!

Yay, for a road trip to California. I have never been there but would love to go or move one day. I’m sure they have endless running trails and healthy food resturaunts. Plus miles of coastline to run on too!

UM You and your friend are SO BEAUTIFUL! Let’s all meet in Hawaii! Seriously though. I will come and cheer Makena on too. I’ll run the first 13.1 with her and you take it halfway and run her to the finish line! Whoo!

Cali is next on my list of places to go. I want to see it SO BAD. I heard it’s amazing and the food options are ridiculous!

Rice pudding is AMAZING. I first tried it when I visited NYC at this place called Rice Dreams. They have different flavoured rice puddings and crazy toppings. Kind of like the same idea as Yogurtland but with rice pudding. You would LOVE it.

I love rice pudding so much! I eat it plain, without any fruit…whoops!
On a baked potato I always put ketchup–just like french fries (ish). SO excited for you to be heading to California, that’s going to be such a fun summer! I’ll try not to be too jealous

I just went to my first self-serve frozen yogurt place last night! Yo-Lo in Memphis (visiting my sister from St. Louis.) OMG, it was fantastic! Must find the closest one to me in The Lou!

On a roadtrip, I take a dramamine, a pillow, and sleep the WHOLE way there. haha. When I am awake though, I look at all the people we pass. It’s funny and disgusting at the same time. It’s amazing what people do in the car…nobody seems to understand that they’re WINDOWS. You can see THROUGH them. LOL.

You should so go to Hawaii on July 5th! I’m going to be there for a week! :) woohooooo!!!!

I live in California in Orange County. We are having good weather here now-cloudy and cool in the mornings and bright and sunny afternoons. Perfect for early running and later day beach-going. Have a great trip :)

Have an awesome time in Cali — let me know what great things to see when I visit in a few months (best friend is moving there next week). And roadtrip playlists are a must! I make them for even just 20 minute drives — any chance I can to pretend like I’m a DJ.

This is my first time ‘commenting’ but I love, love, love reading your posts everyday — what else do us teachers do in the summer? — it’s so nice to have an blog pal on my journy to become more active and more of a foodie… if that’s possible.

Hey! You should go to the Wild Animal Park in San Diego! I loved it. CA also has the best food co-op stores ever – the fresh produce was so good.

Btw, I love your blog. I wish I had found it before my trip to Utah last December – we could have met @ Yogurtland!

I don’t think I’ve ever had rice pudding either, but I love white chocolate chips and that recipe looks delicious! Favorite baked potato topping has always been melted cheese! Have fun on your road trip!

I’ve been to CA a couple of times but not enough to have wise words about what to do there. My fave thing was of course, the beach!

Oh I’d totally get in on the ketchup on the baked potato, as well as bbq sauce. Also, salsa, sour cream, beans and cheese – a taco potato. YUM. (PS- I love Fudruckers! They used to have one in Omaha, but I think they got rid of it. I’ll check it out when I’m in town in July)

I like to listen to the same music on repeat while trying to fall asleep. When that doesn’t work, I read about two pages of a book. But finally, I always end up reading a gossip mag. Can’t help myself.

I love rice pudding but I think I prefer BREAD pudding. Anything with bread in it makes me happy.

I love rice pudding, my mom made it a lot while I was growing up. I read to entertain myself on road trips, which mostly I hate now that I have kids.

You’re coming to So CA!! Yay!! If you’re not too creeped out by your readers, maybe we should have a Hunger Runner meet up by the beach for an easy jog (I say easy b/c you’re way faster than all of us) or meet up for Fro-yo! Those are probably my favorite two things to do here…. run in the gorgeous weather and eat!

-butter and salt on the potato… I’m a purist!
-My husband and I make Top 5 lists on road trips, bring along lots of mix cd’s, and have important discussions… like what we’re going to buy our parents for christmas…. that always takes a year to decide.

Janae! I miss you and I love that pink shirt. I’m pretty ticked about golds not having their group exercise classes anymore. What will I do without my janae spin class fix when i make it back to provo? Have an AMAZING summer in Cali and I will continue being a faithful follower :)

Hahaha, I love rice pudding…haven’t had it for a reallylong time, but my grandpa used to make the most amazing one that had this yummy skin on top. yeah, sounds gross, but MAN was it delicious! :-) Do I see white chocolate chips on yours? Good call ;-)
I love hummus with grated carrot all mixed up together, piled atop a baked potato. Soooo good, nothing better imho. I actually have a huge aversion to tomato ketchup so we can agree to disagree on that one, lol! The smell makes me feel squemish…and don’teven get me started on baked beans. Ew! :-P

I love rice pudding! In my country it’s a traditional christmas food, but i eat it through the year. Here it’s traditionally served with plum sauce but i prefer strawberries. I also recommend to try have it for a few hours in the fridge, then stir in some cream, more sugar and orange slices and you have a fresh dessert!

I’ve only been to CA a couple of times, but I did enjoy my time at Disney World!

I don’t remember the last time I had a baked potato, but I did have some amazing French fries after my marathon yesterday! They tasted so good after running 26. 2!

I get some good quality reading in when I go on road trips.

When I lived in the UK for three months a became ADDICTED to jacket potatoes (baked potatoes) with canned beans and cheddar cheese. I just at and saying that made me hungry again!

I live in San Diego and there happens to be a Yogurtland right down the street from where I live, so dont worry you wont have to go without! Its on Garnet in Pacific Beach and I know there are others around the San Diego area if thats where you’ll be. Also, youre going to have such a great time running! My favorite run is from Torrey Pines all The way up Coast to Encinitas. Its along the beautiful beaches and cliffs the whole way! You’re going to have a great summer!

I live in cali 9 months of the year up int he bay area for school. :) I mostly like it… I probalby would like it better in SoCal coz it’d be even warmer ;)

Where are you headed in Cali? I live on a military base in Northern California, but would LOVE to treat you to a froyo if you are in my area!

Hey chica rica – you know this transplanted Americano woman (in AUS) is from SaMo (Santa Monica – for those not in the know…) anyway – it should be absolutely beautiful there now – perhaps a bit cooler than you are used to, but being next to the ocean should help. I still have my condo in SaMo, 4 blocks from the ocean, if you guys need a place to crash – it just comes with my dog and cat – who are super mellow and super cute. What to do there? You will love the running down San Vicente Blvd. – and in Palisades Park, which overlooks the ocean. The infamous SaMo Stairs are at the north end of 4th street – you can run down the cement stairs, jog about one block north to the wood stairs – climb back up those and then jog back south to the cement stairs, and do a few circuits – or vice versa. I just prefer going up the wood stairs cuz there’s a bit more space and they are wider apart than the cement stairs. You might even seem some celebs.

AND you being the world’s largest salad eater will absolutely adore the SaMo farmer’s markets – there’s one on Wed and Sat- Wednesdays is HUGE – all the chefs from around LA shop there. It’s located at 3rd Street Promenade (awesome shopping) and Arizona. There’s also one a Sundays on Main Street at Ocean Park Blvd. which is a nice morning – you can walk or jog from my pad down the beach – and there are lots of food stands – so you could always buy some of the world’s largest pancakes and then sit on the grass and people watch – listen to some nice music and watch the kiddies ride the ponies…

Rice pudding makes me think of my Mom and snow days. Every time we would have a snow day when I was in Elementary School she would make a big bowl of rice pudding, she even had her own frosting to go on top that was made with powdered sugar…YUM!

How beautiful are you and your friend!? Wish I was going to Hawaii. I agree you need to cheer her on. Guess you better start saving now. I’m a teacher too, so I can only dream of going. :/ Anyways, I’ve never had rice pudding. I’ve had tapioca…yuck! I remember my mom used to make us rice and biscuits with TONS of butter and sugar!! Ahh, to b a kid again. :) I’m glad you are getting stronger and able to run more know. I’ve only been injured once (pulled groin) and not able to run. It was awful. Stupid me tried to keep running and that’s why I was on crutches. Running is an addiction(so is ice cream. I eat more than anyone I know!)…u have been patient and I know you will bounce right back to speedy girl. :)

thank you SO MUCH for the rice pudding recipe. I will be making that as soon as the blackberries in my boyfriend’s backyard and ripe and he picks them for me.
