The key to happiness.

I have decided that I will start every holiday for the rest of my life with waffles, bacon and eggs.  When you eat a breakfast like this one you just know it is going to be an awesome day.  Our key to good waffles is to add 1 tsp. vanilla and 1 tsp. cinnamon to the recipe for waffles on the back of the Bisquick box.

Brooke had her first ever Easter basket and loved the grass the most.

She also rocked her Easter dress from Target to church.  Why does she all of the sudden look so much older?!?!

Fresh homemade rolls are the key to happiness.

Our Easter spread was incredible.

DSC 0684

We had veggies, salad, ham, funeral potatoes, Billy’s famous deviled eggs and the rolls that are impossible to eat just one of especially when you put homemade jam on them.

The carrot cake won!  Have you ever seen a more beautiful frosting in your life?

Brooke was especially stoked last night because she got a new toy from a friend…

I will be repeating the phrase, ‘DON’T you dare run today even though your legs feel 100% because your coach is 1,000,000 times smarter than you are,’ to myself all day long so that I foliow what he said and wait a few more days to be reunited with my treadmill, Brooks PureFlows and Garmin.

PS in less than a week we will be in our new two bedroom apartment!  Let me know if you want to come help move our treadmill and couch… I will feed you;)

What did you have for Easter dinner?

Who is running today?  Remember I need to live through you for just a few more days so give me the details about what you are running!!

What would be your ideal breakfast?

Brooke is the cutest! We had ham for lunch and dinner both Saturday and Sunday…so I think I am ham-ed out for the next year! I’m also using all of my energy not to run for the next week per my doctor’s orders…but I can start again next Monday :)

Rolls of any kind are definitely the key to happiness. I remember when my mom used to make them for dinner growing up and we would always fight over the last one. I get very possessive over food sometimes… I love yours and Brooke’s easter outfits! Way more stylish and Eastery than my outfit yesterday.

Reply

Haha! Be careful moving that treadmill! When Mike and I moved ours from the main floor to the basement, there were threats of divorce :).

Reply

Brooke’s Easter outfit is so adorable! I ate entirely too many desserts yesterday and ended the night right with some Peeps!

Reply

How sweet Brooke looks-your baby is growing up right before our eyes! Thanks for sharing that with us. That carrot cake is making my mouth water on the first day of a week long sugar detox-yikes!!

Reply

Oh my gosh YUM. Seeing all of that goodness makes me feel kind of sad that I didn’t get to see my family for a more traditional easter meal. Hubby and I were solo for dinner and made nachos with leftover barbacoa. Delicious, but not the same.

Reply

My ideal breakfast is pineapple and strawberries or white peaches, plums, and strawberries.

Easter breakfast was far more memorable than dinner, as our girl was up at 345 am and decided to play. Scott and I figured, why not take Bring Our Bunny (BOB Ironman) with us on a walk to a coffee shop at 545 am.

We enjoyed a breakfast date while the cute girl decided to sleep. We watched the sunrise over the mountains and said thanks for all that we have.

Stuffed crepes. Hands down my favorite breakfast, especially if they’re stuffed with whipped cream cheese and jam or bananas and chocolate. If you offer to feed me those, then I may just be willing to come help you move your couch and treadmill ;) Brooke is just too darned adorable, and I’m pretty sure I was just as obsessed with the grass as she was when I was that little.

Reply

Our church does a breakfast every year for Easter and we had stuffed blueberry French toast and it was delicious! And then we drove 3 hours to my moms and back just to have her cooking :)

Reply

Such gorgeous pictures in this post!!! Especially the one of you looking at Brooke. Yay for running again soon :-) I’m happy for you!!!

The hungry caterpillar is one of the books I remember reading all the time in my childhood! My family has the best homemade roll recipe that involves a disturbing amount of butter

Reply

So….where can I find Brooke’s shoes in big girl sizes??? Adorable!!!!
We had waaaay too much for Easter dinner. Meatloaf, ham, sausage, scalloped potatoes, potato salad, cold green bean salad, cole slaw, baked beans, jello salad, rolls, deviled eggs, cheesecake, jello poke cake. And I didn’t even run yesterday!!! I will make up for that later today.
My fave breakfast is one of my special sandwiches, which consists of a toasted Eggo waffle with two pieces of turkey bacon, piece of cheese and a touch of syrup. Mmmmmmm……

Reply

I ADORE that picture of you and Brooke!! Beautiful! That carrot cake had me drooling and it was stunning! We did an Easter brunch at my husbands Aunts’ house. It was pretty good, not the best. {she’s not the best cook}. Just being honest….lol. We still had a great time. I had some tasty cinnamon oatmeal, fresh strawberries and mango with coconut flakes, my share of mimosas, and a yummy bacon, egg and potato casserole. And a piece of yummy bundt cake that I made.

http://danastonerock.blogspot.com/2013/03/chocolate-covered-vanilla-cake.html

My idal breakfast would involve thick french toast or homemade waffles, fresh strawberries and fresh whipped cream. Fresh fruit on the side and some kind of egg/cheese casserole thing. And hasbrowns galore!

I am on a no sugar detox for a few days(due to all the sweets consumed this weekend) but that carrot cake is making me rethink my decision. It looks awesome!!

As usual Brooke looks absolutely adorable. I love her smiley face!!

Reply

I want to see a picture of YOUR Easter dress, lady! Looks cute!

Reply

Sunday I made my first carrot cake. I used about 10lbs of frosting too. Glad your legs are feeling better, you’ll be running soon!!

Reply

I am so boring but am going through a major oatmeal kick so that would be my breakfast of choice! I had dinner at my bf’s parents and his mom made a DELICIOUS dinner with chicken ham, stuffing, potatoes, gravy ect :) So fabulous!

Just and easy 3 on the schedule tonight- but I’m thankful because Belfast is SO cold!

Reply

I made slow-cooker vegetarian lasagna, salad, and I made garlicky, crescent rolls (which were amazing!). For dessert we had cupcakes and brownies. AMAZING! I ran today and saw some interesting things… it’s the first run where I felt GREAT after my IT issue… so I’m happy to say that I’m hopefully back in full force! I did 4 miles at a slow 9:30 pace, but felt good afterwards and bonded with my foam roller and ice packs just to be safe :D

Reply

My ideal breakfast has to be French toast. So good!

Reply

We had ham, potatoes and veggies too!

Reply

That cake is incredible! 3+ layers is heaven. I did 8.5 this morning and have 3.5 over lunch. Racking up the miles before my April marathon!

Reply

Your Easter spread looks amazing!! Love Brooke’s Easter basket :)

Reply

Your Easter spread looks so good!!! We had more of a Easter brunch, with ham, eggs, coffee cake muffins and fruit. It tasted really good. No plans on running today, but will be running 5 miles tomorrow at about 5:30 in the morning before we head off to Colorado to visit my brother.

Reply

I would totally help you move if I were in CA! Haha. And Brooke does look older (and adorable) in that Easter dress picture with you! Maybe it’s the lighting? She must stay little forever :)

Reply

My favorite breakfast is either french toast or pancakes with lots and lots of fruit. I’m pretty sure I could eat them every day.

Reply

What a beautiful Easter Feast! That cake… and those rolls…. and those waffles.. I need a waffle maker now. Will probably have to go buy one today after seeing that…

Reply

Oh my goodness Brooke is so gorgeous-just like her momma! Moving is such a pain but will be worth it when you’re in your new place.

Carrot cake is the key to my heart. So good.

Reply

I LOVE the picture of you two together in all the pink. Adorable.

Also, yum to the waffles!

Reply

My ideal breakfast are those waffles shaped like Mickey Mouse heads that you get at DisneyWorld!!! They are sooo yummy…..but if I can’t be at Disney I will take fluffy waffles or pancakes with strawberries anyday!
I am running today but I am not sure what yet. I am thinking about doing speed work, maybe mile repeats on the track but not really wanting to so I am not sure what I will end up doing. I could probably really use a coach to just tell what to be doing instead of deciding a few minutes before :)! But anyways, I am waiting because it is 20 cold degrees now but supposed to be 38 later.
How many miles do you put on your pure flows? Did you have to transition to them? I am trying to go more minimal….but it is not proving to be very easy!

Reply

my ideal breakfast is pancakes, eggs, and bacon…basically I don’t like to choose and want everything!!!

Reply

I’m so glad you had a great Easter! No one in my family really likes ham so we had steak and salmon, twice baked potatoes, deciles eggs, salad, asparagus, this carrot/pineapple slaw similar to chikfila’s, the best bread I think I’ve ever tasted (yes I had 4 pieces) and pineapple upside down cake and lemon bars

Today officially starts taper for Boston, so 6 easy miles! I think my legs are more than ready for this taper.

Reply

My favorite breakfast is french toast with bananas and a side of potatoes of some sort! What are funeral potatoes? Breakfast food really is the best. I’ll be running today! It’s supposed to be warmish here, so I’ll be doing a 30 minute (or 45, haven’t decided if I wanna switch my training schedule around yet) run! It’s super hilly so I think taking 2 days off after the hardest 9 miles ever was a good idea. But I’m really excited for my run today and I can only imagine how excited you are to get back out and running too!

Reply

I did 15 miles on trails on Saturday and 8 miles on a bike path on Sunday. Today is a “rest” day, so I just biked to work (20 miles round trip).

It’s so hard to keep taking time off, especially when you start feeling better again, but safe is always better than sorry!

Reply

We had ham, potato salad, rolls, fruit salad, and a green salad, oh yeah!, and deviled eggs. It was all so amazing!!!! No running for me today, Weights instead, running tomorrow :)

Reply

I’m home all week-I’ll help you, but not on Friday. LOL

Reply

She looks like such big girl sitting there w/ her Easter basket! Today is my last day of spring break so I am going to run at some point, but not sure when yet.

Reply

YUM! All of that food looks amazing! We had ham for our Easter dinner! I ran 7 easy miles today- feeling super tight though!!!

Reply

Brooke is seriously the prettiest baby I have ever seen! I love her Easter dress!!

Reply

Thanks so much!!!!

Reply

Brooke looked so cute in her Easter outfit! I think she got older all of a sudden! Precious! That food spread looks delicious! Hoping you can get back into running real soon :)

I had some ham, potatoes, coleslaw, and desserts for dinner last night :)

Reply

Your dinner looked amazing! I cannot turn down good bread!

It’s sunny and in the 50s here, so I plan to hit the trail for 10 this afternoon! I am really looking forward to running outside now that spring has sort of arrived!

More time off to be sure about your injury is def smart! I’ve run too early several times and was sidelined for much longer.

Reply

You two look adorable! And your spread of food seriously looks amazing! My sister sent me home with all the homemade rolls, I’m a lucky girl=)

Reply

SIGH I’m also resting from an injury and it is SO HARD. I got mad at someone I saw running outside this weekend, I can’t wait to run!

My perfect breakfast is eggs, an English muffin and hashbrowns. Or Greek yogurt pancakes. Or crepes. I love breakfast!

Reply

Hahahah I totally get mad too when I see other runners out!

Reply

Adorable pics! And those rolls look so good. Bread is one of my BFFs. ;-)

I’m heading out to run in the freezing rain shortly. Here’s to not busting it.

Reply

Brooke is so precious! Ya’ll’s Easter looks like a good one!

Reply

whoa, girl – that cake does look good!

Reply

Why is Brooke so dang adorable!? I love her Easter outfit (and yours too by the way). My ideal breakfast would probably be chocolate chip pancakes. The thing is, the pancakes have to be larger then my head and must be slathered in syrup and whipped cream to qualify. In total, they must have more sugar then I need to eat in a month to be considered “ideal”.

Glad you had a fun Easter. I always find it weird that you call those potatoes “Funeral Potatoes”. It’s a Utah thing, right? It just seems somewhat morbid. lol.

Reply

Will you please come make me the chocolate chip pancakes the size of my head?!? They sound incredible!

Reply

oooh wow, I’ve missed a lot – congrats on the new apartment!! exciting!!

Reply

We had BBQ brisket and a million delicious sides for our Easter lunch!

I’ve got a 4 mile run and body pump on the schedule for tonight!

Reply

Brooke really is starting to look older, she is starting to look more like her Mama every day!

And you’re KILLING me with those pictures of waffles! I think my favourite food ever is homemade waffles with fresh fruit & whipped cream :) We went on vacation last year and I ate them every single day for breakfast. So good!!

Reply

My ideal breakfast is Belgium waffles too!! Looks like quite a spread…makes mine look pretty sad in comparison.

Reply

Yum! Your dinner and breakfast look amazing!! I had pork chops, mashed potatoes and salad. It was great!

I didn’t run today but I went to my first spinning class. Whoa. It was really hard! I may have to email you about it so we can discuss it more.

Reply

OH!! and French toast is my all time FAVORITE breakfast! If I had it with scrambled eggs and sausage links that would just be the best ever.

Reply

Love her little Easter dress and good choice on the literature! So cute.

Your Easter dinner was way better than ours. Grilled veggies, sweet potato fries and salmon. Fine, but nothing as good as yours. That frosting looks ridic.

Reply

BROOKE IS SO CUTE!!!!! That photo of the two of you is ADORABLE and she is looking older!

Reply

My ideal breakfast would be a veggie omelette with dry wheat toast on the side. My usual breakfast is PB and banana sandwich… with coffee, of course.

Reply

My ideal breakfast is pancakes with banana, chocolate chips, and pb chips swimming in syrup. Adding vanilla to any mix makes it 100xs better! I love it! Your Easter spread looks like something you would get in a restaurant. YUMMY! Happy Belated Easter :-)

Reply

I’d totally come help for that carrot cake :) If I lived in your state.

Reply

We just got a waffle iron as a gift and I can’t wait until our new house is done so that we can take it out of storage and actually use it!
Brooke looks too cute! I had to resist getting our little one an Easter dress since she’s not actually due until the end of July :)

Reply

Homemade rolls!!! ANd carrot cake!! YUMM.

Her dress is adorbs. And yep, Easter was amazing!! :)

Reply

I made a delicious ham with salad, deviled eggs (my mom’s recipe) spicy tuna cakes and asparagus. It was super fun just being with my kids!
With the great weather in Utah and everyone racing I feel your pain. Just a few more weeks to go for me and I’m back on my foot!
Best breakfast is everything! I love pancakes, eggs, bacon, omelets….

Reply

Found a Cafe Rio in the Salt Lake City airport! Holy amazingness! You were not joking about this salad! I could eat it every day for the rest of my life!

Reply

funeral potatoes?

Reply

I always put vanilla and cinnamon in my waffles- and pancakes, too! SO much better than just plain! Brooke does look so grown up :) And adorable in that dress!

xo

Reply

Pancakes and biscuits and gravy are pretty much tied for best breakfast ever. Or Easter was really quiet, but we did end the night with some pretty banging enchiladas, though :) I’m just about to head out for an easy three miles, and I’ll send you good vibes while I’m doing them – only a few more days!

Reply

Okay, I have to know! What is on top of those deviled eggs? Is it jalapenos? Some sort of pickled slices?

Reply

They are jalapeños! You have to try them that way!!!

Reply

Your ideal breakfast is my ideal breakfast! :-) For Easter dinner, we had filet Mignon, asparagus, corn on the cob, and deviled egg chicks (that I saw on Pinterest).

I have to ask, what are funeral potatoes?

Reply

A lot of people seemed to have the eggs, bacon and waffles for breakfast yesterday. It absolutely sounds yummy :)

Easter dinner included: ham, fried prawns, shrimp, sweet potato fries, rice pilaf, bread, steamed veggies and loads of dessert.

I ran yesterday and it felt pretty good. Not speedy at all, but good for me :) I’m running the RnR SF half this weekend!!

Reply

Ooh I love the idea of adding vanilla and cinnamon, sounds delicious!

I’ve been eating Easter candy pretty much nonstop, does that count?

Reply

My Easter dinner consisted of: roasted chicken, garlic & herb mixed potatoes, fresh steamed broccoli & cheese and home-made buttermilk biscuits! It was me & hubby’s first Easter dinner as a married couple & thankfully, it came out Great! … just wished I had enough room in my tummy to eat it all. :-p

Breakfast has been a hit or miss lately. My ideal breakfast is normally a nice bowl of maple brown oatmeal with a little peanutter and cinnamon, but lately, I just haven’t had the taste for it. So lately, “ideal” can range from an egg & cheese croissant to a banana with peanut butter. C’est la vie! :)

Reply

*peanut butter… not sure what a ‘peanutter’ is, lol!

Reply

Thank you for sharing bits of her first Easter. She is seriously one of the cutest babies I’ve ever seen.

Reply

Easter dinner was homemade Cafe Rio sweet pork and it was delicious! I did five miles this morning and it felt excellent since I haven’t been able to run for a bit due to an injury. Hmm the perfect breakfast… probably waffles with a lot of syrup!

Reply

Brooke is too cute. I did 10.55 miles before heading to tailgating and opening day of the Brewers in Milwaukee. Fun times.

Reply

That carrot cake looks amazing and, as always, Brooke is ridiculously adorable. I did a slow EASY 5 miles today after my 24 miler on Saturday :)

Reply

I heart Brooke! She is so adorable. I always go and hug my children after I look at her cute picture. We had ham yesterday. Your meal looked amazing. I ran a 16 miler on Saturday and a 2 mile recovery run yesterday. I can’t wait for you to start running again.

Every Saturday, we make waffles for brunch, and we do the EXACT same thing: cinnamon + vanilla turns boxed waffles into goooold.

Reply

Just had to Google to find out what funeral potatoes are… SO glad I did. This is a total game changer/life changer.

Reply

Whoa, hello amazing looking carrot cake! Where have you been all of my life?

What did you have for Easter dinner?
-Ham, slow cooked in pineapple and brown sugar. Mashed potatoes, broccoli and cheese casserole, green bean casserole, romanian salad, meatballs, homemade bread AND a piece of homemade coconut cake with cream cheese icing! Needless to say, I look like I’m expecting a 10lb baby today.

Who is running today?
-ME! Actually, I already did. I did a 5 mile speed run on my c900 to run off the baby I just described above. Then I’m doing a fast mile once I digest my dinner to see where I rank. I do that about once a week. Aiming for a 6:30 mile by the end of summer.

What would be your ideal breakfast?
Well, one of the best breakfasts I’ve ever had included a Harvest Grain & Nut Pancake with blueberries from IHOP. BEST pancakes I ever had. Then, because I LOVE eggs, I would have to have dippy on the side. :)

Reply

I have to ask, what are funeral potatoes?

Reply

I ran 5 miles today! I am so sorry you can’t run! I feel so bad for you; I have had times where I have had to stop running and I absolutely hate it!

I have to ask you, what kind of camera do you use? Because you have the best pictures out of all of the blogs I read! They are so good!

Reply

You have such a beautiful family. God bless you all :)

Reply

that picture of you and brooke is absolutely precious!

Reply

I just moved this past weekend! And the only thing I can say is that at least everything is physically in the new apartment lol. It takes forever to get settled! Thanks for the waffle tip! I’ll have to try that soon!

Reply

We had sushi for our Easter dinner…Ok ok, not very traditional but it was just the two of us and I didn’t want to cook so what’s better than sushi???

I ran 4 easy miles today- I was supposed to meet with one of the captains of my new running team but that didn’t work out: I never met her before and I emailed her while staying on a huge line for the bathroom at Starbucks saying that I’d be out to meet her soon. Apparently she didn’t see the email because when I got out 15 minutes later she had already left. I was kind of disappointed but what can you do?

Reply

Good luck moving! I love crepes for breakfast…here’s the recipe my hubs brought back from his mission: http://karainthekitchen.com/?p=704

Reply

What are funeral potatoes? haha

Reply

I “need” the cake and roll recipes!! Pretty please!!! LOL. Brooke is just too cute for words!!! Give her a squeeze for me.

Hugs,

Sue

OMG Brooke looks so ridiculously cute in her Easter dress! My girl is also loving standing at her activity table right now. It makes them look SO old and mature though! (A little sad..but exciting!)
