Friday Favorites & Very Proud!

Let’s start off today’s post by catching up a bit on the last two days (even though our daily happenings are pretty much the same thing each day right now)!

Beck had his two week appointment and he has put on 6 ounces… We were all very proud of him.

While we were at the doctor’s office Skye scored new bandaids.  The nurse asked her if she wanted Spiderman or Princess bandaids and she went for Spiderman!

Not going to lie, I am having so much fun with how cute baby boy clothing is.  All of the baby boy stuff is new territory for me and I’m loving it.  PS speaking of new territory, I was peed on for my first time ever while changing a diaper ha.  I forgot to cover:)

Walking has been feeling so good and I’m grateful Skye and Beck are big fans of it too.

And on Thursday, Andrew was back at work for some trainings so it was just the kids and me.

I have a few Friday Favorites to share!

*Liquid I.V. !!  I’ve been really focusing on my hydration right now (which I should always be better with but breastfeeding helps me to be extra aware) and this stuff is amazing.  “1 Liquid I.V. can provide the same hydration as drinking 2-3 bottles of water & contains 3x the electrolytes of traditional sports drinks with 5 essential vitamins.”  I love the flavors and it is helping me big time with my hydration game and it will definitely help me in the future with marathon training!

*Superhero muffins are saving me right now.  I need all of the snack (SO HUNGRY) and these have been my goto.

*A friend of mine brought over these enchiladas. I had to ask her for the recipe because everyone in the family loved them and she said they are so easy to make!

Beef and Brown Sugar Enchiladas

1.5 lb lean ground beef

1 can black refried beans

1 small bag frozen corn

1 can red enchilada sauce, divided

1/3 cup brown sugar— or to taste

1/2 tsp onion powder

2 cups grated cheddar cheese, divided

10-12 flour tortillas

Brown ground beef in a large pan.  Drain off fat & add refried beans, corn, 1/2 of the enchilada sauce, brown sugar & onion powder.  Mix well & bring to a simmer.  Remove from heat.  Fill one tortilla with about 1/4 of a cup of filling and 2 tbsp. cheese.  Roll up & place in a 9 x 13 pan.  Repeat process until pan is full.  Pour remaining enchilada sauce (I add more brown sugar to the sauce) over prepared enchiladas.  Sprinkle with remaining cheese.  Back at 350 degrees for 30 minutes.  Serve with sour cream, chopped tomatoes, sliced olives, diced onions, shredded lettuce, avocado or guacamole.

*My favorite podcast for the week was Des Linden talking with Tina!  They covered so many different topics that I haven’t heard on previous podcasts with Des and it made me love her even more.

*My sister-in-law that has 5 kids sent me her favorite swaddles that she has found and I am so in love with them.  They are so crazy soft and come in the best colors along with a little hat to match each blanket.  They keep Beck swaddled better than any of our other swaddle blankets!  I’ll be giving these as gifts from now on to friends that have new babies.

*Turns out this post is full of food… Andrew’s cousin brought over dinner one night and he made pasta and used this sauce from Trader Joe’s and you HAVE to try it.  It is so heavenly.

I know they are a kid’s food but I really loved uncrustables Pb&J sandwiches when I was nursing. My Mom found that pampered chef sells a tool called “cut n’ seal” that cuts and crimps the edges of a sandwich just like the ones you can buy at the store. My husband would make a dozen of them and put them in baggies so I could easily grab and eat throughout the day. We use the same tool today to make mini turkey sandwiches with a cucumber for our daughter’s lunch!

I love liquid IV too. Whenever I am feeling a headache come on- I guzzle a big bottle of water with the liquid IV powder and feel so so much better.

That liquid IV is such a great idea! I may have to get some, I’ve noticed with all day mask wearing and a busy schedule (nurse life here) that I don’t drink as much as my usual.

For stand and go snacks…when I had kiddos I would premake a plate of rolled deli meat, rolled up sliced cheese, cut up fruit and veggies and homemade gogurts (easier with no spoon and cup!) I also found that wrap sandwiches and PBJ were the easiest to eat so premake them. For heartier stuff, I found that mashed potatoes were an easier to eat hot food because if they spill, it’s not super liquidy! Baked potatoes and sweet potatoes are easy if you cut them in half then eat with your hands….let’s face it, we don’t get hot food anyways so having it luke warm isn’t a big deal ;)

Hey Caitlin! We have the Joovy ultra light BUT I can’t say we love it ha… we ended up deciding to just find a used one and this is the one we found. Maybe it is better brand new but it is not super smooth:). If you find one that you love please let us know ha. Have a great day Caitlin.

You are superwoman for taking care of four kids two weeks post partum! I still sometimes find it a challenge to be alone with three kids and my youngest is now 8 months, haha!

I recentst listened to an armchair expert episode with Lenore Skenazy and I highly recommend it. They talk about letting kids grow up with more freedom and more resonsabilites.

Weekend plans: going on a long (trail) run tomorrow with friends, getting cinnamon buns after that and studying (turns out nursing school is so interesting but a lot of work! I’m even more impressed with Andrew now!)

Thank you Sanne! Luckily, Brooke and Knox are huge helpers and 8 months is a HARD age because they don’t sleep all day like Beck haha. You are doing amazing. I NEED that episode, I would love to learn more about that! I wish I could join you for that long trail run and cinnamon buns… have the best time. EASY SNACKS (all that you can eat with one hand and zero prep)—> Hard boiled eggs (buy pre made, pre peeled), jerky, cliff bars, yogurt tubes, yogurt drinks, premier protein shakes in the cartons (they are pre made)!!

I seriously can not handle both beck and skye’s cuteness !!!

Beck looks a lot like Knox in these pictures ?
I loved that podcast Tina did with Des. It was so fun. Tina also had on Rich Roll last week too…. Very good! It was a long episode, but so good.
I remember with both of my boys, how much I loved walks. When my youngest was a baby, I would take both boys in/ on the stroller, and take our dog with too. It just made all of us so happy! It was often a daily “lifesaver” ha!
This weekend I will be cleaning the house and getting all ready for Thanksgiving. We’re not having anyone over, but I just want everything to feel like a normal, perfect Thanksgiving.?
Oh, and you are looking so great!!

Hey Wendy, I love that you are seeing Knox in Beck, that makes me so happy. Oh I saw that she had Rich Roll… I definitely need to listen to that one. One of the BEST presents I got at my baby shower was a bunch of boxes of the mini Lara bars – they’re individually wrapped and only maybe a few bites each but I feel like they’re just the right pop of yummy energy. I put them in my nightstand drawer and they are perfect when are STARVING and can’t get out of bed because you’re nursing or possibly just don’t want to get out of bed :-) the only downside is my 5-year-old discovered I was stashing snacks in my nightstand and always checks there now…

I just made carbonara last week! I like mine extra rich so I tend to use lots of egg yolks and all the bacon. :)

So cute!! Had to laugh at the getting peed on comment- I feel like that’s a rite of passage for boy moms! One trick that was shared with me is to swipe a wet wipe below his belly button and wait a few seconds before removing his diaper. It causes him to pee if he needs to. I started doing this with my baby boy months ago and haven’t been peed on since! :)

Hi Janae! My fiance just bought me the koala clip after I kept reading about it on your blog and wanting it and it just arrived yesterday!! So I am really excited for trying it out now (I just washed it yesterday). My favorite pasta dish used to be lasagna but now it’s just plain old spaghetti and sauce, yum! Happy weekend!

Perfect bars are a favorite and have tons of protein! I also really like the Clif kids’ bars . . . I always have those on hand! And baby carrots for when I feel I need some more veggies. :-)

I’m just looking forward to sleep and hopefully some fresh air this weekend. It’s been a long week! I think I might also have to make some superhero muffins . . .

I just listened to the newest episode of Office Ladies. Such a fun way to revisit The Office (like I don’t rewatch it constantly :-)).

I love lara bars, RX and Perfect bars–all from Costco. I also make and freeze pb&j sandwiches–they are so good frozen with hot chocolate.

Awww baby snuggles! I miss those days (sometimes).

This weekend is going to be odd. I have to isolate from my family (kids and husband) for COVID reasons.I am in the basement and plan to make the most of not an ideal situation. Running, Christmas movies, naps, on-line shopping and reading are on my agenda…and going to school to prep for 2 weeks of a sub (not fun). I should probably do some cleaning too.

Frozen pb & j sandwiches… how have I never tried that!? I can’t wait to try them. I am SO so sorry that you have to isolate from your family. I hope this weekend flies by. I always remember feeling like prepping for a sub took more time and energy that just being there so I am sorry you don’t get to be able to be at school too. Thanks Becky and good luck!

I love the Sargento Balanced Breaks snack packs—they have nuts, cheese cubes, and raisins or cranberries. Costco usually has them, but your grocery store will have them too. They’re great as a protein snack, but they’re also good in a salad. Another thing I love is tuna salad made with hummus instead of mayo (I’m not a fan of mayonnaise). It’s still creamy and delicious but full of the extra goodness from the hummus.

I love to make eggg ‘muffins’ full of veggies /sausage and freeze-they heat up so fast!
Same with banana muffins with chia seeds to keep full.
And, nothing like a yummy baked sweet potato with nut butter!!!

I love that TJ’s Autumn Pasta Sauce. I make a spaghetti squash “lasagna” with it. Layer of spaghetti squash, layer of italian sausage and mushrooms with the sauce, layer of cottage cheese with egg and shredded mozzarella- repeat, bake. So good!

For quick snacks, I always baked tons of muffins and always had them in the freezer to pull out a few each day. I went heavy on the oatmeal in them and would add a dollop of PB to it to help it stick.

Errmm – does that swaddle come in adult sizes? Asking for a friend ?

My go to snack is trail mix – I like a cashew / almond / dried cranberry mix. The combo of fat / fiber / carbs helps stave off Hangry Amy.

This is a really simple cookie recipe that I bet Brooke and Knox could make, and they are super filling:
1 Cup PB (or any nut or seed butter)
1/2 Cup sugar
1 egg
1/2 Cup choc chips (optional, but not really)
Mix, roll into balls, smoosh down a little and bake at 350 for around 10 minutes.

Or the Powerballs that you’ve posted about, you can mix up the ingredients for whatever is on hand and a little more mixing involved, but no hot oven so could be good for the kids.

We leave for Arizona on Sunday!! It feels so good to have something to look forward to, especially with more restrictions happening here in California. I’m so sad for the many restaurant and small business owners here.

We are all about pasta over here! I LOVE making homemade pasta – every kind of sauce tastes better. I won’t tell you my favorite pasta, but I will share my favorite Italian cookbook – Rosalie Serving Italian (https://www.rosalieserving.com/) Rosalie’s son, Jeff, was in our wedding. Les has known their family for decades and he always said the best Italian food he ever tasted was at their house (this was before we actually went to Italy!) I have made so many of her recipes (including Cannoli) and they are fantastic!

I love humus and pretzels, or if I have time, the granola from Run Fast Eat Slow with yogurt or cottage cheese, and rolled deli meat with cheese and mustard. Beck and Knox look so alike in the above picture. Chicken Alfredo is my favorite and the best part of this weekend was picking up my son from college. Hadn’t seen him since August, that was the best hug!!!

My little boy is just a few weeks older than yours, he’s 5 weeks old, but we’ve been snacking on yogurt and string cheese a lot! Quick and easy to grab. Those swaddles look great.
