I’ve been cooking more over the last few months than the previous 10 years combined.  I absolutely love having conversations at our dinner table (or counter) over a warm plate of food with the kids and Andrew about their days each night.  I am also absolutely loving having lunch take zero work each day because I have leftovers ready to be heated up.  Our bank account loves when we cook at home and I feel physically better (and I’m sure that is helping my running!) from the meals we have been eating at home vs constant restaurant meals.  

At the stage of life we are in—> Eating out just doesn’t work out with three little ones.  We usually leave the restaurant saying we are NEVER doing that again, haha.  This has been the product to really get us in the habit of eating at home now.  We are loving all of the benefits.

The picture below is from the time our family tried to go out to dinner for Brooke’s birthday.  Andrew and I just switched off roaming around with Skye and never actually sat down at the table at the same time to eat.  Knox gladly joined Skye’s roaming too.

Eating meals at home together is a lot easier with our little circus!  Less messes, less crying and the best conversations happen at dinnertime about the kid’s current crushes, their current recess game obsession and what THEY think we should do on the weekend:)  Skye also gets to let her wiggles out more easily and chime in with the important things she needs to say too when we eat at home.

I was most excited to try the Shrimp & Black Bean Burrito Bowl with Creamy Guacamole & Nectarine Salsa.   Try not to drool when you see the finished product.  The 1st time I tried Blue Apron was when Brooke was 2 years old.  I am positive that each year the recipes just get better and better.   We could not believe how good this dish was!

This meal was also super easy to put together and took us 23 minutes (yes, I timed it and that’s including picture breaks too) from start to finish!

Running 60-80 miles a week has lowered my patience for waiting for food!  I need delicious and filling meals that do not take a lot of time to get to my plate.

Look at those colors!  This was so good and Brooke absolutely loved it too.  I’m so happy Brooke has reached the stage of wanting to try all sorts of new foods and meals.  My niece even tried shrimp and loved it for the first time ever with this dish.    Each week Blue Apron has 16 different recipes for you to choose from and having a big variety of meals makes dinnertime even more fun for us.

For date night Andrew and I made the Orange & Sweet Chili Chicken together.  We didn’t have to pay for a babysitter (the kids were just playing and then they went to bed) and we had the best meal together at the table while catching up on life.  It has been so fun to hear about Andrew’s newish job and what he is doing every day.  It’s amazing how much has changed since we met just about 3.5 years ago!  He was working a job he didn’t particularly enjoy when I met him and then went to school and now he is doing something he is passionate about!

Random tangent but it’s almost our one year anniversary of being in this house.  I sure love the kitchen we have to cook in.

The worst part of my day is always PLANNING what we’re going to have for dinner. I like cooking when I have a plan and the ingredients, so this is literally the exact thing I need. Thanks for sharing!

I never thought I’d be in the season of life I’m in right now (2 years after a very expensive divorce, rebuilding financially and emotionally and helping two kids deal with the aftermath). BUT, I can honestly say it’s the BEST season. The benefits of age (late 40s) and hindsight are wisdom and the confidence to make better choices in the future. To all your 20 and 30 year old readers, TRUST your gut and if something (relationship, job, etc) doesn’t feel right, don’t do it. Your future self will thank you and you will be happier even if it’s hard in the short term.

I really, really love this. I’m in my late 30’s. I’m having trouble trusting my gut because it tells me two different things: i.e. debating job offers and cities. Both have pro’s and con’s. The one with the job I’d probably like better and the better outdoors lifestyle is in a smaller town that does feel self-limiting at my age (and single). But, the other job in a big city that is not necessarily “me” (not great weather and not so outdoorsy etc). but could be better for me to meet more people. Tough. And I live in fear of making that decision I’m going to regret later…because I’ve already made lots of those.

Thirty five years ago I went on a missions trip to the Philippines. I was 20 years old. This Saturday Les and I are traveling with our pastor and his wife to the Philippines. We’ll both be speaking at a leadership training. I am beyond thrilled to finally be going back. I’ve lived a lot of life since 1984! My best dreams didn’t come close to how wonderful my life has been. I also never dreamed I would be without my parents before I turned 50. But life (and God) is good! Life is definitely an adventure and I’m so thankful for every stage I’ve lived.

It’s an interesting season of life for me. Several years ago I walked away from one profession and am currently in the process of rebuilding. I am not sure I would have imagined being where I am but it’s ok. I met my partner during this season and also some other incredible people. And what I learned is that every one, to some extent has a bit of a broken road to wherever they are meant to be. Some have been gracious enough to share their story with me and I am blown away by what some have gone through. There have been some tough lessons and tears along the way but I think this process has made me a more resilient person. And I realized we don’t always get to choose and control what happens in our life but we can always choose how we respond.

I only have one child, and we still avoid restaurants at all costs! haha! I have done Blue Apron in the past, and really like the convenience. I actually remade a couple recipes, so they are even nice for giving us meal ideas to use in the future.
I think I’ve told you, my husband is a pilot, so he’s gone for 4-5 day stretches at a time. I am 100% not a picky eater, so when he’s away, I almost relish in the fact that I don’t have to plan dinner. My son eats whatever I make, so we do a lot of omelets and veggie burgers. When my husband is home, I have to meal plan and try to be a little more fancy. I happily do it for him, though :)

Happy almost one year in your new house anniversary! Your kitchen looks amazing! ? I have been soclose to trying Blue Apron but I am SO paranoid and worried about the quality of the ingredients remaining intact throughout delivery. Did that make sense? Food poisoning has made me paranoid ? almost irrationally so! I do trust your opinion on things and now own many things you suggested! *deep breath* I want to try Blue Apron I really do! Moving on…
I’m currently at the stage of life where I appreciate everything! I have a gratitude journal and write in it daily even if it’s two lines. I see squirrels and talk to them! I want to cry when I see roadkill. I enjoy random acts of kindness like loading someone’s groceries into their trunk for them etc. ☀️ ?

I did finally run 3.1 without walk breaks but it took me 43 minutes!! ?‍♀️ It boggles my brain that you run so fast!!! Wowowowow!!!!!

Oh I absolutely love the stage of life you are in… that is beautiful sydney! Ahhhhh and congrats on the 3.1! That is huge… you did it! I’m very paranoid about food poisoning too (I got it from my dad… and it drives Andrew crazy because I throw out meat if I have the smallest concern). Every time I have ever gotten anything from blue apron (which has been a lot over the last 5 years! I have used different meal services (to compare) like this and did receive food that had gone bad! Anyways, I really love blue apron and the way they deliver it (the refrigerated box) really does keep things fresh! Have a great day!

Thanks for your suggestion on trying Pineapple Dole Whip! I tried it at our local frozen yogurt shop and was AMAZED! That is something I NEVER would have tried otherwise! (Especially when there are about 10 other options! LOL!) Thanks!

I’m in the stage of life right now where I’m learning about balance! It can be so tough! But I’m ultimately a happier person when I do what I need to do to keep my body and mind happy.

I love, love, love your blog, and I think it’s so awesome you post very day, and ask your readers questions, and respond to the comments.

Random question: as a well-trained endurance athlete, what is your resting heart rate? Has it gotten lower as you’ve gotten older or stayed relatively constant? Mine is 58 and less than a year and a half ago, it was 84. I work out a TON more than I used to, LOL!

LEAH! HUGE CONGRATS on dropping your resting heart rate… your heart is so happy with your training:) . Mine is usually around the same but right now it is a bit lower than usual with my training but I’m usually training for something so it is around the same. My stage of life is newly engaged, trying to plan a wedding, and also shopping for houses for the first time this weekend! Ahhh! It’s funny how things can stay the same for so long (we dated for 4.5 years) and now it’s like all of the sudden things are moving at light speed! If we end up moving to where we’re looking at it will also include a job change for me. Craziness! Also lightly training for the NY marathon within all of this…I’m trying to keep my life balanced so the training hasn’t been anywhere near perfect, but it will at least get me through the race alive and able to enjoy it (I hope) :)

I have always loved cooking and meal planning can sometimes be so difficult. My favorite way to figure out what I’m making is to imagine what restaurant I would have gone to and then I make what I would have ordered. Sometimes it requires a trip to the grocery store, but with a large family we have to eat in unless we have some awesome coupons to help alleviate the cost. Dinner time/ meal time is by far the most important thing we can do as a society. Did you know that if you have family dinner it decrease s the risk of children with substance abuse problems and other emotional health problems?
We can always do better at some things but for the most part, I am exactly where I want to be and be doing. I live being a Mom, I love the joy of cooking with my children and I live raising children on God. Thanks for such a great question and thanks for being such a great friend.
