I’ve been cooking more over the last few months than the previous 10 years combined. I absolutely love having conversations at our dinner table (or counter) over a warm plate of food with the kids and Andrew about their days each night. I am also absolutely loving having lunch take zero work each day because I have leftovers ready to be heated up. Our bank account loves when we cook at home and I feel physically better (and I’m sure that is helping my running!) from the meals we have been eating at home vs constant restaurant meals.
At the stage of life we are in—> Eating out just doesn’t work out with three little ones. We usually leave the restaurant saying we are NEVER doing that again, haha. This has been the product to really get us in the habit of eating at home now. We are loving all of the benefits.
The picture below is from the time our family tried to go out to dinner for Brooke’s birthday. Andrew and I just switched off roaming around with Skye and never actually sat down at the table at the same time to eat. Knox gladly joined Skye’s roaming too.
Eating meals at home together is a lot easier with our little circus! Less messes, less crying and the best conversations happen at dinnertime about the kid’s current crushes, their current recess game obsession and what THEY think we should do on the weekend:) Skye also gets to let her wiggles out more easily and chime in with the important things she needs to say too when we eat at home.

This meal was also super easy to put together and took us 23 minutes (yes, I timed it and that’s including picture breaks too) from start to finish!
Running 60-80 miles a week has lowered my patience for waiting for food! I need delicious and filling meals that do not take a lot of time to get to my plate.
Look at those colors! This was so good and Brooke absolutely loved it too. I’m so happy Brooke has reached the stage of wanting to try all sorts of new foods and meals. My niece even tried shrimp and loved it for the first time ever with this dish. For date night Andrew and I made the Orange & Sweet Chili Chicken together. We didn’t have to pay for a babysitter (the kids were just playing and then they went to bed) and we had the best meal together at the table while catching up on life. It has been so fun to hear about Andrew’s newish job and what he is doing every day. It’s amazing how much has changed since we met just about 3.5 years ago! He was working a job he didn’t particularly enjoy when I met him and then went to school and now he is doing something he is passionate about!
Random tangent but it’s almost our one year anniversary of being in this house. I sure love the kitchen we have to cook in.
