Weekly Favorites, You Control & Family Vacation!

We hit the track for our Wednesday workout.  The sprints were short but they sure burned. Our coach saw the video of all of our finishes from the last two races and decided we need to learn how to finish strong with a sprint.

50m sprint, 50m float (slower but not a jog) x 20!  Accelerating into sprint mode 20 times was a challenge for sure.  1.25 miles @ 5:55 average and with the w/u and c/d I did 8.5 miles total.

While we were there KSL (a news channel for Utah) was there filming Amber (she ran a 35 minute 10k at our last race taking first overall and setting a new course record.. she is next to me on the right)!  They are doing a special segment on her!

Our next stop—> the airport! We told the kids we had some things we needed to do in SLC and once we got to the airport we told them we were going to California.   They were very surprised.

While at the airport we left our laptop and iPad at security (luckily they have it!) so I’m blogging from my phone!  We realized once we were on the airplane they were gone so that was a stressful flight hoping that they would be in the lost and found!

I have a few favorite things to share!

*Anne’s no-bake pb granola bars.  Oh my goodness these are good and so easy.  Below is before I chilled/cut them but we also added a few chocolate chips and all of us have been gobbling them up.  SO good.

*I bought two new swimsuits for this summer and I am loving them.  I love to have swimsuits that feel sporty and stay in place because when I’m at the pool, I’m chasing around kids.  I bought this one and this one and couldn’t be happier with them.

*Skye is telling Brooke to step away from her popsicle.  These popsicle molds have been a hit and they are so easy for Skye to hold onto too.  Sara told me to try blending yogurt (whole milk yogurt for us!), blueberries and a little bit of honey and the kids love them.

*Toby sent me this video and it was pretty amazing (it gave Andrew  and me goosebumps).

-One time I left my passport on the seat on a layover in Japan… I was so lucky it was still there when I went back!

I got a swimsuit from Aerie this summer! I really like their philosophy of no retouching pictures on their website/ads and showing all body shapes/sizes. Plus the swimsuits are really cute!

I got a few good high-waisted two piece swimsuits from Cupshe. I love them!

Favorite granola bar recipe: (if you have ever had breakfast bars from a Whole Foods these taste very similar!)

2 cups quick oats
2 tbsp nonfat milk powder
3 tbsp old fashioned oats
1/2 tsp salt
1/2 cup butter, softened
1/4 cup cashew butter
1/2 cup light brown sugar
2 tbsp honey
1 tbsp almond extract
1/3 cup dried cranberries
1/4 cup almonds
1/4 cup sunflower seeds

In a medium bowl combine oats, milk powder, and salt and set aside. In a large mixing bowl cream the butters with brown sugar. Add honey and almond extract, beat well. Slowly add in the dry ingredients Once the oats are well incorporated, add all the other dry ingredients (nuts, seeds, cranberries). Pour out the dough onto wax or parchment paper and make two long skinny rolls. Use the wax paper to make sure the rolls are uniform from end to end, each roll about 12 in long and 1 1/2 in wide. Flatten each roll slightly. Put them in fridge and refrigerate for 8-12 hours.

Preheat oven to 315 degrees and put oven rack on top shelf. After dough has become very cold remove it from the fridge and cut each 12 in log into about 5 or 6 even pieces. Arrange them on a parchment or silpat mat on a rimmed baking sheet. Bake for approximately 20-25 minutes, or until dark golden in color.

That video made me cry. Amazing. I’m so glad you shared that.
My husband was holding my drivers license in the airport last year (while I was holding the kids) and he lost it. LUCKILY I also have a military ID. Haha.

Well, traveling with three little kids, I can ABSOLUTELY see how you would lose or forget SOMETHING!!!!! That can’t be easy!!!!! I bet it was a HUGE relief that everything is safe and sound.

I never lost anything big at an airport, but one time I was taking run selfies and left my wallet on the top of a pole at the running trail in not the greatest town. I guess that’s what I get for taking run selfies! ha ha I realized it about 15 minutes later and went back–by the grace of God, it was still there!!!!!

My swimsuits usually come from Target or Boden. I reallllly want this one from Albion Fit, but it’s around $155 for both pieces!!!! https://albionfit.com/collections/swim-tops/products/icon-wave-crop-orchid

The jury is still out on whether I”ll stay strong or weaken and buy it. That’s SO MUCH for a swimsuit though!!!!!

Wow, 35 minute 10K is cooking fast!!

I commend you and Andrew for traveling with your kids at such a young age, we all know it’s not easy. We didn’t do much traveling until our kids were older, except for a few trips to Kansas to visit my family.

I’ve got a few harrowing airport and travel stories, but I don’t recall every leaving anything behind.

I’m going in for my running assessment today at PT.

Did you know you can do your own running assessment? Just use your Ipad/Iphone or Android phone to video yourself from the front, back, and side. The slow-mo mode on my Galaxy S8 does 240fps. Then use an app like Hudle Technique or Coach’s Eye (both have basic free versions) to scroll through your video frame by frame. Very fun to play with and compare yourself to the pros. Lots of YouTube videos you can use for comparison and proper technique.

You should have your running coach check it out. With the paid app you can share analysis videos with your athletes, etc… Wish we had stuff like this when I was coaching youth sports 10 years ago!

That video! Wow–she has so much determination. I had chills, too.
Skye’s warning to Brooke is so toddler (or me, LOL).
My favorite swimsuit ever came from Athleta (on sale a few years ago). Even though I’m not tall, I bought a tall size, which kept the tugging and readjusting to a minimum ~haha~
Many years ago, I was on a short flight to a connecting flight, so I just held onto my 2nd ticket instead of putting it away…and it vanished. When I reached the check-in desk for the connecting flight, I couldn’t find it. The desk crew called to have the flight crew double and and triple check the original plane cabin, I retraced my steps, and never found it. But I somehow convinced the desk staff to issue me a boarding pass anyway so I wouldn’t miss my flight and my friend’s wedding! That would NEVER happen with today’s security, I’m sure.
My run today will be last-minute errands and tiring out the dog for a long overnight drive to Kentucky!

Super awesome that you guys can have spontaneous family vacations!! I think I need you to adopt me! ha!! I love Skye’s face when she’s telling Brooke to back off! That’s my face whenever I have any sort of sweet treat! Ha!
I always have the hardest time with swimsuits. My last couple are from Dick’s Sporting goods and Athleta; I need to remember that Zappos carries more than just shoes – your suits are really cute!
I need to try your granola bar recipe! Looks yummy! We’re still hooked on the energy balls I made a couple of weeks ago:
1 C dry oatmeal 1/2 C chocolate chips
2/3 C coconut flakes 1/3 C honey
1/2 C peanut butter 1 Tbsp chia seeds
1/2 C ground flaxseed 1 tsp. vanilla
I’ve never lost anything at the airport but I walked away from my purse at Target once. I was gone for about 5 minutes before I realized it and to my pleasant surprise it was right where I left it when I went back!!
Today’s run was actually a 3 mile walk. My overly ambitious workout on Tuesday left my hamstrings SUPER sore and I didn’t want to skip getting some fresh air and me time so walk it was and they feel much better! I ran yesterday thinking that would help. It didn’t. Lesson learned!

Oh, I really need a new swimsuit! I think I got my last one at Kohl’s.

I’ll have a new cookie recipe on the blog tomorrow – Orange creamsicle cookies. They are amazing!!

Les left his Kindle on a plane once, but I can’t remember leaving anything. I’m guessing you don’t have TSA pre check? If you did, you wouldn’t have to take your laptop out of your bag. You also keep your shoes on and go through a separate line. It’s $85 but good for 5 years. Kids under 12 can go through the line with a parent without paying for pre check. We’ve had it for a few years now and it is totally worth it!

Les and I ran yesterday so I rode my bike today. I PRd a segment that I have ridden over 300 times! My running is slow these days, so it feels good to push it on the bike and still see results.

Huge huge congrats on your pr! You rocked it, that must feel so so good Kathy! Every single time we get to the airport we say we need to get TSA pre check and then we forget. Hi Janae! Question for you, and feel free to open it to other readers, as well. What are your tips for flying with Skye? As you know, my son is almost exactly her age and I CANNOT IMAGINE him sitting still without crying through even a short flight. He hates the car, and since he’s started walking, he even cries in the stroller. My in-laws live about a 4-5 hour (total) flight away, and we still haven’t been brave enough to visit them. Any tips?

Hey you! Great question and honestly I wouldn’t be brave enough yet to do a 4-5 hour flight with Skye yet unless I knew she would be sleeping the whole time ha. She is like your son too and hates the car and the stroller (unless I’m running bc I think going fast keeps her mind off of her desire to be free ha). We brought so many snacks for her that she loves and that take her a while to eat. She climbed back and forth onto me and Andrew, we brought books (that helped for 24 seconds) and we were in the very back so they let us walk around back there for a little while. 1 hour 50 minutes was her max, that is for sure and we are already nervous for the flight back haha. Luckily Brooke and Knox are at a very easy age to travel with but I think in about a year Skye will be easier when she is more interested in toys, coloring and shows! My biggest tip.. buy your in-laws tickets to come visit you guys:) I hope you are having an amazing day Stacey!

Too funny! Thank you so much. My husband is actually a pilot, so they fly for free :) They just want us to go down so they can show him off to their friends. I think we’ll wait until he’s older. Maybe… 16 or so? haha.

I got a few Cupshe swimsuits from Amazon this year and I’m digging them! I like to get a few new suits each year and I don’t mind doing so when I’m only spending $30ish on each one.

The last time I flew my medication and electric toothbrush fell out of my bag when it was under the seat :( I bought a new toothbrush and my doc called in a new Rx for me, whew!

Today was a 1 hour spin class on the Peloton. I got my boot off yesterday though so I’m super excited to rehab this ankle and get back to some running!

Oh my gosh that run like a mother vimeo made me cry like a baby! It really hit home for me as I am making a comeback to running after a long break and I now have two kids and work full time so I’m juggling everything. At first the thought of running again seemed so selfish but I’m realizing how much I need it and how much it is making me a better mom!

When I was in South Africa, we were leaving to head back home, we flew from Cape Town to Johannesburg and then to the US. On the flight from Cape Town to Johannesburg, I left my iphone 5 (new at the time) and didn’t realize it til we left the domestic part of the airport. They wouldn’t let me go back and I waited while customer service was using a CB radio to try to talk to the gate staff. It was one of those planes where you got off and then road a short bus to get into the airport. I cried and waited for 30 + mins frustrated that they couldn’t just CALL them… we had to leave to go through security on the international airport side and get checked into our flight without my phone. I thought I had lost all my pictures, but thankfully all but 2 were saved due to the icloud! My poor husband… he had to deal with a crying girlfriend on a 14 hour flight and we had just started dating a few months before that (but we had known each other for years). I’ve also left a jacket and bbq that I was bringing back from Austin. All were lost! But I did leave my kindle on a flight and they traced it back to me and I was able to pick it up on my next flight.
