Happy Thursday everyone! Last night was crazy for me with a million activities going on but it always feels the best after a busy night to start the next morning off with an easy run (I did intervals yesterday so easy is needed)! Andrew and I have been eating out like crazy the last few weeks so it was really nice to slow down and make some good food at home. PS I’m really happy that Andrew loves food as much as I do because I love that he gets just as excited as I do over a good meal (or treat… he didn’t love sugar much before he met me but now he does ((oops)).
We did the family plan for our latest Blue Apron box. We usually switch off between the 2-Person Plan and the Family Plan. The Family Plan makes enough for four people but we usually have some leftovers (unless I did a long run that morning and I can’t stop eating;) with the Family Plan. The first meal we made was the Stir-Fried Chicken & Udon Noodles w/Asparagus and Carrots!
Like usual, we received the box on our doorstep full of farm-fresh ingredients with everything in the right proportions. Our box arrived while we were at the the splash pad but it comes in a refrigerated box so everything stays fresh until you get home. Perfection.
No trip to the grocery store with the energetic four year olds, a dream for me.

Once we finished cooking the chicken, carrots, asparagus, ginger and scallions we were ready to add it all to the udon noodles and amazing sauce (which was a combination of soy glaze, vinegar, créme fraîche and water)! We topped the noodles with cashews and the green parts of the scallions. It was perfection! PS each meal they send includes the nutrition facts which I love. This meal was full of protein, carbs (with fiber) and fat… I love having all of those things in one bowl.
This meal won Brooke’s heart. Turns out she is a huge fan of Udon Noodles which I would have never known because I’ve never cooked with these before!

I used to eat quinoa ALL OF THE TIME but for some reason I forgot about it. I’m happy to remember how good it is all over again:)
Our Tex-Mex bowls turned out delicious… I loved the seasoning on the beef and lime-seasoned cream that we made was perfect for this summer-time meal for us!
Andrew and I thought it would be a fun idea to see how Blue Apron prices compared to the grocery store for the same meal! Personally, I love Blue Apron for the convenience it gives me—> a NEW recipe with all of the fresh ingredients dropped off at my front doorstep. I don’t have to go to the store, I don’t have to forget something at the store (only to text my neighbor to borrow some random ingredient) and I get everything in the exact proportions that I need through Blue Apron. BUT, I wanted to know how their prices compared to the grocery store for the same ingredients.

Total price for this meal at the grocery store was $36.08! Now the meal would have been cheaper if I already had a bottle of soy glaze or a container of créme fraîche but those are definitely not items that I normally have. It also would be cheaper if I could buy the exact amount that I needed and not any more but that’s not possible at my grocery stores. One of the many reasons I love Blue Apron is because they give me the perfect proportion of an item so I don’t have to buy a big tub of something that I rarely use. They truly help our household to branch out and experiment with new ingredients that we’ve never used before to make a meal which provides a new taste and experience!
