Let’s get to know Andrew a bit over a plate of Spiced Pork Tacos from Blue Apron:)

I thought that today would be the perfect day to chat and have some time for you to get to know Andrew a little bit more over a beautiful home-cooked meal.  We will get to that in just a few minutes but first let’s talk about food.

Andrew had never tried Blue Apron until he met me and it quickly became his favorite.  When the refrigerated box of farm-fresh ingredients (with all of the right proportions) is delivered right to our front doorstep, he is realllllly excited about it.

Besides him knowing that the meal is going to taste delicious, it is a fun date that we get to have at home together.  We jumped right into that family stage and so a lot of our ‘dates’ happen at home together and Blue Apron gives us the perfect chance to make something amazing together and talk like crazy (ehhh… I talk like crazy, he talks normal) while the kids are asleep/playing/eating with us…  we never know what is going to happen with two 3 (almost 4) year olds.

We order the family plan now (they also offer a 2-Person plan) and either the kiddos eat with us or we have killer leftover for lunch the next day.

We started off making Vegetable Pad Thai (my all-time FAVORITE Blue Apron meal ever… it was so beyond good).

It made me happy to see the peanut butter that they sent:) Love this stuff.

Okay, back from that tangent.  The sauce in this dish was insanely good, so were the noodles and the toppings full of chopped peanuts and Thai basil.

Andrew was a big fan too.  Blue Apron gets us out of eating the same 3 meals every night and spending time in the kitchen together.   Blue Apron is CONSTANTLY adding new dishes (check out all of their recipes) to their menu each week so they always get us out trying new meals at home.  They help me to feel creative because I’m not naturally creative when it comes to cooking ha.

Last week after a day of painting it was so nice to not have to go anywhere and make some Spiced Pork Tacos w/ Crema, Pickled Onion & Elote-Style Corn.

Yeah, that paint was not coming off my hands no matter how many times I scrubbed them.

Both kiddos were gone that night so we just hung out and made tacos and corn together for our last meal at my apartment…

I don’t think I have ever made pork chops before (my mom always did when we were kids) so that was fun.

And the corn prepared with the Mexican crema, Cotija cheese, spices and cilantro—> it’s going to be really hard to go back to plain corn after trying that.

Okay, now it is time to get to know Andrew a bit better.  He will be on the blog daily so I thought you must surely know 10 random facts about him:

1. Andrew LOVES animals.  He would always sneak animals into the house when he was a little dude and really wants a hobby farm at some point.

2.  He loves to mountain bike and cycle… he just got a new road bike!  I need to teach spin again and have him come to my class;)

3.  Andrew is a licensed EMT!

4.  His favorite foods (besides Blue Apron of course) are pizza, raspberries and slurpees and he most definitely could eat those daily for the rest of his life.

5.  He went to BYU for college and majored in Exercise Science and Spanish.  He speaks Spanish fluently which was extremely helpful when we went to Mexico recently.

6.  He REALLY wants to visit every continent (he just needs to go to Europe and Antartica to fulfill that dream).  He also really wants to one day have us just grab our passports and some money and just randomly go somewhere with zero plans.

7.  Andrew’s first race was a 5k and his second race was the St. George Marathon… ya know, from 3.1 miles to 26.2 miles.  Also, the longest run he did before that marathon was 10 miles so as you can imagine, he was quite sore afterwards.

8.  He is a die-hard Angels fan.  He was born in Orange, California and grew up on Angels baseball.

9.  His FAVORITE time to run is midnight!  He runs mostly during lunch so he can spend more time with us and then on the weekends he runs in the morning with me.

10.  He is deathly afraid of BUOYS!  He hates swimming by them in triathlons.  He thinks it is trauma from watching Jaws as a kid.

I might need to try Blue Apron! I just learned how to cook (yes, I’m 31) this year, so it could probably be pretty helpful. :) And that’s kinda funny he went from a 5K to a marathon and only ran 10 miles before. I would have wanted to cry if I did that.

Lol, my husband did the same thing….went from a 5k to a marathon…with NO TRAINING.
Boys can just do stuff like that. So annoying.
He also bought his bib off of Craigslist so the entire time people were cheering on someone else’s name. That bib is now hanging on “our” medal display. ;-)

Great to get to know Andrew!

Todd trained me for my first marathon. I had only run one 10k before the race, so I was not really used to racing but it all worked out!

Todd and I live in Louisville and run all of our races side-by-side. We mostly focus on the ultra distances these days. We have also done two Ironmans, but we gave that up after we realized a) we hated swimming, b) we hated biking, and c) I almost killed myself on the bike (broke my collar bone in 7 places, had major surgery, and then ended up squeaking through the Ironman 7 weeks and 6 days later). Now we just stick to running, though I still manage to fall quite often just doing that:)

I was born in Australia but I’ve lived in the US since I was 10. I miss it like crazy.
I’m the oldest with 2 younger siblings and 2 step siblings.
My mom passed away from breast cancer almost 5 years ago and it’s changed my life in so many ways.
I love to eat. A lot. All the time. Hah, this is why I have trouble losing weight.

I’m a morning runner, my legs are on a go slow after work. I trained for and ran half marathons and was talked into running a marathon, I survived and ran 03:31. I speak english and Afrikaans is my mother tongue.

we were required to take french, italian, and german in college for my major, so I can speak each with conversationally, but it’s been awhile. I really do love languages though and want to get back at it.

I’m a morning runner. Up before the sun is the way I want to be, there is nothing more peaceful.

I love to run late morning or just before sunset depending on the season.
I trained properly for my first marathon but sprained my ankle when my long runs were up to 15 miles so I had some struggle with the 18 and 20 miler.

I took French in school but don’t remember much.

Married 10 yrs and my husband and I grew up 5 minutes from each other, I worked with his brother and sister in college but we didn’t meet until after college. Dated 3 months and got engaged on July 4th. I prefer to run in the mornings because evening runs leave me to pumped to fall asleep. My first half I didn’t train properly and paid for it, those hills were the death of me. The next race I trained correctly and had a PR and those hills were nothing. I can speak french.

I am learning to OWS for my first triathlon and I am deathly afraid of the “wildlife” in the lakes! I think they must really like me because they literally come up and swim right to my face for a kiss. I hate them.

For my first marathon I had the opposite problem. I over-trained so by the time it was race day I was super burnt out and not feeling 26.2 miles. I ended up getting sick like 4 times too! I am being much smarter this time around :-)

We LOVE trying new meals and have been wanting to try Blue Apron for a long time. We enjoy our “dates” at home too, but not because of children… more so because we are super tired and too lazy to go out and that’s okay with us :-)

Ah Mexican street corn! My favorite!
I am pretty fluent in American Sign Language. I taught myself as a kid and then in college I took all the classes my school offered. I didn’t need the class since I had already taken 4 years of Spanish in HS (I don’t remember much of that at all and I think I was sick the day they taught the Spanish alphabet). I am not sure I will ever run into a deaf person who needs a translator or just someone to talk to, but it is something I plan to teach to my children. My husband took one class in college so when we can sign a little together, but he doesn’t remember enough.

Some random things-
I love the outdoors! Hiking, being out on the lake, anything. I run super early out of necessity, but love it more when I can trail run & enjoy the beauty around me.
I have 5 kids, with the oldest having graduated & moved out a year ago, and the youngest going into 2nd grade in a few weeks. It goes by fast!
My major was PE, but had a career change and have been teaching piano for the last 16-years instead. I love it! It’s so rewarding to see kids learn a talent that they can use the rest of their lives.

I don’t speak another language, but really wish I did so I have my 2 youngest in dual-immersion Spanish at school.

I grew up in Montreal so I know some french. I was definitely better at it as a kid though. I moved from Montreal when I was 9, and even though I had french classes in school up until grade 12 I lost a lot of it because I wasn’t using it in every day life.

I grabbed my passport and headed for the airport a few weeks ago and went to London with no plan. Just spur of the moment. It was fantastic and I think everyone should do it.
In the summer, morning runs. It’s the only time it isn’t blazing hot here in Texas. It’s hot at 5 a.m. but at least the roads have mostly cooled down overnight. The rest of the year I prefer the evenings.

Radom fact about me: my husband (Landon) and I only dated 3 months before getting engaged, had a three month engagement, and 3 1/2 months after the wedding, we found out we were/are expecting ! ;) Apparently, we like to do life fast.

I do most of the cooking and generally I like it, especially when I’ve had a rough day. Chopping is therapeutic. My husband likes to grill and make ravioli. (because he can just boil water). I like when he makes salad though, he breaks the lettuce up into perfect bite sized pieces.

Random thing – I like walking around farmers’ markets. It cheers me up after a rough day and I like figuring out what I’m going to do with all that fresh produce, meat and fish.

I have the most energy mid-afternoon but I like to get a long run done earlier in the day. Speed work and strength I like to do in the afternoon.

I trained by the book for my first half-marathon but I was 40 and didn’t want to be injured or a DNF.

Grew up in Germany, so I am fluent in German… yay, for second languages.

Man, Andrew went from a 5k to a marathon… (he didn’t even do a half first, gasp!)… that’s crazy (and yes only guys can pull that off, right?) Currently training for my first half which is coming up… NEXT WEEKEND. Cue the freakout.

I prefer to run first thing in the morning :) I semi-trained properly for my first marathon. My training partner was injured, so I did a lot of pool runs with her and that didn’t exactly help my training but I did my long runs on the weekend and she biked with me (best friend ever!) I wish I was fluent in another language. Hubs can get by in Spanish.

We live in Bulgaria, which is in EUROPE, and we have 2 spare bedrooms, one equipped with two twin beds. The exchange from USD to BGN is amazing and prices here are incredibly low. You guys should come visit!!!

Favorite time of day/night to run?
My favorite time to run is before anyone wakes up. But since my 3 year old often wakes up quite early, like Andrew I typically run at lunch time in order to maximize family time.

Did you train properly for your first race or marathon?
Not for my first race, but I did plan out a year progression/training plan from a half-marathon to my first marathon.

Speak any other languages?

I am definitely am and always will be a morning runner!! A few months ago I did a 5k with my company and they all thought I was going to beat everyone. However, since they are runners they didn’t understand that the time you run makes such a difference and switching it is torture! The race was at 6pm, and I don’t even remember the last time I’ve ran after eating all day. Toughest 3 miles of my whole life!!

And a random fact is that I lived and studied in London while I was in college! (Too bad I wasn’t a runner back then because there would have been so many amazing places to run!)

Ok, I didn’t see any men respond to your blog so I hope I’m allowed. Lol. I really enjoy reading your blog. Very happy for you getting married. Hi Andrew. You two seem like your perfect for each other. We’ll I’m 47yrs old in 3 weeks. Married for 26 years. 1 daughter of 23 years. Just married last October. We have an 11 year old pug named Romeo. I’ve done 3 sprint triathlons, 2 5k’s and 1 half marathon this last May in San Luis Obispo. Ca.
Getting ready to start training for a half marathon in Vegas. Dealing with some runners knee issues at the moment. Kinda interesting fact about me is whenever we go out to eat I always order the craziest thing on the menu. For instants at a Chinese rest. I ordered a shrimp dish with coagulated duck blood. It was delicious . Lol

Totally awesome that you read, so glad you said hi! 26 years married, now that is awesome! Good luck with the knee issues those are never fun. I had something similar too and I had to change shoes and take some time off – not the easiest thing ever.

I love the adventure eating, I have done that quite a bit when I traveled for work all around. I have eaten things from termites, to cow stomach, guinea pig, to things I don’t know if I want to know what they were. I’m going to have to start doing what you do!

Hmmm… favorite time to run. I think if i got to choose, maybe… 9am? After a nice slow wake up, then that would be the first thing i’d do. In the summer, usually that’s a bit too late for it to be cool,but in the spring and fall it works out!

Random facts- I have 2 different colored eyes.. I call myself an aquaholic because I drink so much water.. I could eat mac & cheese all day long… I want to run a race in every state AND every continent.

I like to run first thing in the morning. Right when the sun is waking up.

favorite time to run is usually in the afternoon… but that’s hard to do in the summer and with work… sometimes I can’t believe that I would run in the late afternoon after school for cross country practice in the hot and humid midwest summer… now i’m in Denver, so at least the mornings are nice and cool… now i’m spoiled and hate running in the heat.

I’ve never trained properly… My first half marathon is probably the closest to training I did and ran 9 miles for my longest run… I’ve since done 6 other ones… Each time I try to follow a training plan, but it goes by the way side every time… My husband and I are actually running a half marathon up in the Rocky Mountains and a little nervous for our bodies… Plus bc we are great planners… we are moving into our first home this weekend, while my dad finishes up remodeling our bathroom (because he’s amazing), so to say we are stressed… is a bit of an understatement! ha!

Don’t speak any languages… which is pretty bad considering I’m half Korean and my mom grew up in Korea… So I bought a Rosetta stone and hoping that works!

I prefer to run in the early morning. I would love to be fluent in Spanish…it’s on my bucket list. I did the Disney marathon in January 2014. I didn’t really train for the race. Prior to the race, the longest distance I ran was 15 miles. Miles 20-25 were rough. Mile 26 I wanted to die, but the thought of finishing picked me up!!

OMG. Afraid of buoys – that is hilarious! But we all have irrational fears. Mine is spiders. Like even tiny house spiders. I cry instantly and shake with fear when I see them.

My favorite time to run is in the morning just as the sun is rising.

My first race ever was a half marathon – I don’t think I had run more than 6 miles going into it. LOVED EVERY SINGLE MINUTE OF IT. Next race, 6 months later was a marathon. I think I trained a bit better for it! :)

I speak French fluently – I have to for where I live…most jobs here require you to be bilingual – English/French! :)

I love to run the local rail to trail run in the dark. Usually around 5 am. I used to do it with no light at all, just stars, moon and ambient light. But I bought a Sprinter Headlamp so I’m not so foolish anymore. Also ran up onto one too many deer that I didn’t want to run back at me.

I was pretty well trained for my first (and thus far only) marathon. I went from 5k in May to 26.2 in October but lots of races and running in between. The next one will be harder because I will have to train through the nasty winter. Psst, April 30th Big Sur.

I used to speak serviceable conversational German, but my vocab is shot due to lack of use.

I would say that my favorite time of day to run (a race / half marathon) is in the morning. I know exactly how to fuel in the morning and the one time I did a half in the evening, I was a mess with what to eat throughout the day prior. Hated that race. :(
But the thing that I don’t like about running in the morning is that is early…and I’d rather be sleeping! I’m a total contradiction.

I did NOT properly train for my first marathon and I struggled mightily.

It’s great to see you and Andrew cooking together and having a great “date” nights every night.
I cannot believe he went from 3.1 miles to 26.2 miles. It made me laugh!!! That’s something a guy (who’s motivated) would do. I think my friend’s husband ran only 10 miles too before his marathon and he still killed it by coming in under 3:20. I really wonder how their bodies are made. Did he finish strong?
And the favorite time to run- midnight. Sounds like my husband too- well it’s not his favorite time but when he’s working the night shifts and the only time he can get out to run is like 2 am, he will. I think that’s absurd but at least he’s out there running!!!
I speak Japanese, English, and a little bit of Spanish. I used to be fluent in Spanish but after so long of not speaking the language with anyone, it’s gone….

Love the 10 fun facts about Andrew. Running a 5k & then on to a marathon next is amazing! & frightening! Some of the pics you have posted w/ Andrew & Brooke are so precious! It is clear that they have really bonded. That is so wonderful for all of you! It is very difficult to blend families, but I think it’s much easier when the kids are young. I love running first thing in the morning when everyone else is asleep and when there’s very little traffic to worry about.

I felt prepared for my first 5k race — as I did a couch to 5k program and felt so strong (but slow :D).

**Question: how do you recover from a vacation? I’m still getting my runs in, but I’m not in control of preparing my meals — so I’m not eating as well as I should be eating (too many carbs, too few fruit/veg).

I LOVE running at like 4:30 AM when it gets light out at 5 when no one else is to be seen. I wish it was always light out that early, but in the winter it is impossible and I get freaked out. I am a teacher and I know you were, too. When you taught did you run before or after school? I much prefer to get it done with and feel waaaay better throughout the day.

I’m relatively new to your blog. Les deseo muchas bendiciones, alegrías y aventuras en su matrimonio!!! My first language is Spanish. I live in Central America with my husband and 3 kids. Ever since my husband became super into running marathons 6 years ago, we have been doing a lot of our traveling/vacations around races. His first full marathon was in Chicago. He got sick with a terrible cold but was able to complete it. Hopefully we will be able to do the Disney marathon, (1/2 for me) next. :)

And he’s been everywhere but europe?! But europe is so easy!!! How could he go to Africa and Australia but not europe?!??

I’m from Anaheim Hills!! Andrew and I were basically neighbors! I grew up going to the Orange circle and getting milkshakes at the pharmacy!

So fun to get to know Andrew a little bit better! I’m not sure I haven’t a favorite time to run, I just love getting to run with my best friend from college. We tried Blue Apron after seeing it on here a few months ago and love it. I am for sure going to schedule it when we have another baby!

My boyfriend did the same thing. Ran like one 10 miler before a marathon and beat me with a time of 3:20 something. I have no idea how he did it. Of course, he couldn’t walk for nearly a week after it…

my favorite time to run is right as the sun is coming up!

I’m working on my spanish right now, its so hard for me though! I really hope I can become fluent in the next couple of years but man idk how they do it !

I have been to all the continents! Antarctica was probably one of my favorites, I hope he gets to go there! I went with a company called OneOcean if he wants a recommendation :-)
