We had a delicious and EASY dinner last night!
I browned some ground turkey (with a ton of taco seasoning… that stuff is money). I cut a red pepper in half and then placed quinoa (leftover from earlier in the week but you could use rice and/or beans too) and then the ground turkey inside of the red pepper. I baked them on a cookie sheet at 425 degrees for 12 minutes (I like my peppers to still have some crunch but if you like them softer then bake them for longer). I topped them with cheddar cheese and put them in the oven for another minute and then topped it with avocado slices.
Veggies, fats, carbs, protein, happiness.
I scored the nice stair climber at my gym which meant that I got in a killer workout today with a right foot that is feeling a million times better than last week.
Brooke is all about the yoga these days or maybe she is hinting to me that I need to do more yoga myself.
Okay, well this is awesome?!?!?
I received the absolute best package EVER from the Brownsburg Runner Girls yesterday to start off my bday celebrating right… it may have made me cry a little bit.
‘Try to catch me mama’—> repeated 100 times per day and right now I most definitely can’t catch her:)
