8 pics from our Sunday and the BEST Chilled Mango Soup recipe!

We are on our way back to Utah!  Here are some pics from our Sunday with my brother’s amazing Chilled Mango Soup recipe at the end.  You must try it!  It is perfect for summer!

Utah scones on a Scooby plate.  Topped with butter and honey.  Another reason to come visit Utah because our scones are pretty much the best.

I think Brooke is going to be heartbroken that we are leaving Kentucky.  Luckily, she has other cousins that just got to Utah to party with when we get home.

Gils Meets World.  And Cory and Tapanga have not aged one bit.

Saw this and you have to admit… it happens:

Chilled Mango Soup!  My brother is really the best cook ever.

Chilled Mango Soup

Puree and strain 4 ripe mangos

Add:

1 cup freshly squeezed orange juice

1/2 cup water

1 cup sugar

1 large pinch of kosher salt

1 freshly squeeze lime

Mix it all together and then refrigerate until cold!

 

For the strawberry sorbet (amazing with the soup!)

Puree and strain 1 pint of fresh strawberries

1/2 cup sugar

1 tsp lemon juice

1/8 tsp of kosher salt

Mix above ingredients and chill overnight.

Churn it in an ice cream machine and top your mango soup with it!

PS my nieces and nephews did their core work today… did you?  I hit up the Y for some strength training!  I love workouts like the one I did today because instead of counting reps you do a specific move for a minute before moving to the next.  I did THIS ONE! I’m slowly but surely getting stronger and more and more ready to start another marathon training cycle in a few weeks.

We have church from 1-4 too, and baby L just goes cray cray. We have to ‘put her down for her nap’ in our arms. It’s awesome ;)

Have a great trip home! And haha, I must be tired. I thought you said SCOBY and not SCOOBY plate. Like, the thing you use to start brewing kombucha. Then I saw the butter-topped scone and thought, that’s not a scoby. Gah.

Hey girl. I thought you meant scoby too at first. Were your ears burning a week ago. Met an elite runner from Utah in the Dorms before Grandma’s that knew you. We chatted a bit about you. I’ve heard that Girl Meets World is definitely geared toward the teenage audience but it definitely hits the nostalgia factor quite well. So, basically, don’t watch it with the expectation that it will be the most amazing show you’ve ever seen–watch it to see the old characters you loved :)

Safe travels back! I really admire your ability to workout consistently while on vacation. It is just too tempting to let exercise fly out the window during vacations. I’m trying really hard to kick myself into a daily exercise routine now that I have a new job with a better commute :) It’s hard!

So thanks to you Janae I tried navajo tacos/nachos using sweet potatoes instead of chips or scones. STotally love it.
Now I super super crave a really good homemade scone. Maybe with homemade chocolate icing on it.

Have you tried the Nike Training Club app? Its full of exercises that use a timer rather than a certain number of reps. I love the “focused” section which has a bunch of 15 minute work outs that I do after I run. Have a safe trip home! We were just in Utah but in Zions…close enough?

I watched Girl Meets World. I loved it! It was a complete throw back to TGIF where we’d all gather around on Friday nights with pizza! I was laughing away! Have a safe trip back.
