We are on our way back to Utah! Here are some pics from our Sunday with my brother’s amazing Chilled Mango Soup recipe at the end. You must try it! It is perfect for summer!
Utah scones on a Scooby plate. Topped with butter and honey. Another reason to come visit Utah because our scones are pretty much the best.
I think Brooke is going to be heartbroken that we are leaving Kentucky. Luckily, she has other cousins that just got to Utah to party with when we get home.
Kid size version of the chilled mango soup:
She steals all of our jewelry.
What happens when we have church from 1-4 aka her nap time.
Taco salad with a side of photo bombing.
Popsciles on a summer night!
Gils Meets World. And Cory and Tapanga have not aged one bit.
Saw this and you have to admit… it happens:
Chilled Mango Soup! My brother is really the best cook ever.
Chilled Mango Soup
Puree and strain 4 ripe mangos
1 cup freshly squeezed orange juice
1/2 cup water
1 cup sugar
1 large pinch of kosher salt
1 freshly squeeze lime
Mix it all together and then refrigerate until cold!
For the strawberry sorbet (amazing with the soup!)
Puree and strain 1 pint of fresh strawberries
1/2 cup sugar
1 tsp lemon juice
1/8 tsp of kosher salt
Mix above ingredients and chill overnight.
Churn it in an ice cream machine and top your mango soup with it!
PS my nieces and nephews did their core work today… did you? I hit up the Y for some strength training! I love workouts like the one I did today because instead of counting reps you do a specific move for a minute before moving to the next. I did THIS ONE! I’m slowly but surely getting stronger and more and more ready to start another marathon training cycle in a few weeks.
Have a wonderful evening and I will see you from Utah!
Travel safe!! I love Brooke’s “CHEESE” face!!!
Amy @ Rum Mom Run
That mango soup sounds amazing!
Safe trip back girl! How does she keep
Getting cuter and cuter? I can’t get enough of her little face!
Leah @ goodnight cheese
I love fruit soup! It goes so well with served with a rich dessert. I will be trying this mango one, it looks so simple and refreshing.
Danielle @ The Girlfriend Letters
That mango soup has me drooling. I love mangos more than anything so this would be a huge hit! Definitely going to have to try that!
The soup looks to die for
Sally @ sweat out the small stuff
I think you call that dessert! Lol. I make vanilla bean soup…I leave a pint of Haagen das out on the counter for an hour. :)
That chilled mango soup sounds/look so amazing! I must try, for sure.
We have church from 1-4 too, and baby L just goes cray cray. We have to ‘put her down for her nap’ in our arms. It’s awesome ;)
Have a safe trip back!! Come swimming with us soon, yah?! xo
Fiona @ Get Fit Fiona
That photo of Brooke and her popsicle is just too cute. She looks like she’s perfectly happy.
Rachel @ Blonde with a Chanse
What a fun Sunday! Family really is the best :) I love my Sundays spent with my family and church always rejuvenates me for the week :)
how is girl meets world? Is it good!?
The Hungry Runner Girl
It was pretty lame BUT I loved seeing Corey and topanga again!
Safe travels! This chilled mango soup looks amazing!
Have a great trip home! And haha, I must be tired. I thought you said SCOBY and not SCOOBY plate. Like, the thing you use to start brewing kombucha. Then I saw the butter-topped scone and thought, that’s not a scoby. Gah.
Megan @ The Skinny-Life
That mango soup looks so good I actually think it should be renamed mango soup desert! They’re never too young to start working on planks.
Hey girl. I thought you meant scoby too at first. Were your ears burning a week ago. Met an elite runner from Utah in the Dorms before Grandma’s that knew you. We chatted a bit about you. Made me miss visiting your blog so here I am reading about Scooby, Mangoes, and your sweet little girl. :) Hope you are well.
Brittney @ Sweets 'N' Greens
Cory and Topanga are basically frozen in time! Seriously they look just the same haha.
Katie Did What
Ooh chilled mango soup sounds so interesting!! I’ll have to try- perfect for hot summer days!! :)
Anna @ That DAMM Runner
I bet I would eat an entire batch of that soup. I’m not good at portion control when it comes to fruit…
I want that soup right now! Alas, the only ingredient I have in the house is the sugar. Oh, we have salt too… Next week!
Kristina @ Blog About Running
Brooke with that green pop is just too cute! Seriously!
I’m excited that so many of us are marathon training at the same time!!!! :)
Sara @ LovingOnTheRun
Have a safe trip back! I really wanted to watch Girls Meets World but we don’t have cable :( SO SAD!!
You can watch here!
Livi @ Eat, Pray, Work it Out
OMG that soup sounds so so good! I am so thirsty looking at it!
that soup sounds absolutely delicious!
Becky @ Ok, so here's the plan
I want to watch Girl meets world, but I’m afraid it’s going to be disappointing. Is it cute?
And I love that someecard – it’s totally true!
I’ve heard that Girl Meets World is definitely geared toward the teenage audience but it definitely hits the nostalgia factor quite well. So, basically, don’t watch it with the expectation that it will be the most amazing show you’ve ever seen–watch it to see the old characters you loved :)
Safe travels back! I really admire your ability to workout consistently while on vacation. It is just too tempting to let exercise fly out the window during vacations. I’m trying really hard to kick myself into a daily exercise routine now that I have a new job with a better commute :) It’s hard!
Kirtley Freckleton @theGistofFit.com
So thanks to you Janae I tried navajo tacos/nachos using sweet potatoes instead of chips or scones. STotally love it.
Now I super super crave a really good homemade scone. Maybe with homemade chocolate icing on it.
Your scone pic didn’t help ;) Thanks for your post today!
Liz @ Carpe Diem and Run
My goodness, Brooke is too cute! The popsicle shot is priceless :)
Leigha @ The Yooper Girl
I must make that soup recipe!! I’ve never had fruity soup before! We had taco salad tonight too :) so yummy!!
Have you tried the Nike Training Club app? Its full of exercises that use a timer rather than a certain number of reps. I love the “focused” section which has a bunch of 15 minute work outs that I do after I run. Have a safe trip home! We were just in Utah but in Zions…close enough?
[email protected] 'n' Snuggles
I watched Girl Meets World. I loved it! It was a complete throw back to TGIF where we’d all gather around on Friday nights with pizza! I was laughing away! Have a safe trip back.
Kristen @ Vitamin K Girl
I just bought mangoes at the store, it’s fate that I should make this soup.
Kris @ Canadian Girl Runs.
Have a safe flight! That soup looks interesting!

Unquestionably consider that which you said.
Your favourite reason appeared to be at the internet the
simplest thing to take into accout of. I say to you,
I definitely get annoyed even as folks think about concerns that they just do
not understand about. You managed to hit the nail upon the top as well as defined out the
whole thing without having side effect , other
folks can take a signal. Will probably be back to get more.

I was wondering if you ever thought of changing the layout of your website?
Its very well written; I love what youve
got to say. But maybe you could a little more in the way of
content so people could connect with it better.
Youve got an awful lot of text for only having 1 or 2 pictures.
Maybe you could space it out better?

This design is steller! You obviously know how to keep a reader
amused. Between your wit and your videos, I was almost moved
to start my own blog (well, almost…HaHa!) Great
job. I really loved what you had to say, and more than that, how you presented it.
