I really don’t think it is ever TOO early to start baking cookies together with your daughter. Brooker did an amazing job mixing the dough. (In case you were wondering, I did not eat any dough in front of her ((I went in the other room to eat it)) because that would just be cruel).

I wanted to make a cookie that would be perfect for ice cream sandwiches and I did it. I didn’t want them very thick but I did want them extra chewy.

Best Ice-Cream Cookie Sandwich Cookies:

1 cup sugar

1 cup brown sugar

1/2 cup butter

1/2 cup vegetable oil

Cream the above ingredients together and then add 2 eggs and mix and then add the rest of the ingredients.

3 1/4 cups unpacked flour

1 tsp baking soda

1 tsp baking powder

3/4 tsp salt

1 tsp vanilla

1/2 bag white chocolate chips and 1/2 bag milk chocolate chips (I did a few with semi-sweet chocolate chips because my friends are crazy and think that those belong in cookies?!?)

350 degrees for 9ish minutes

Makes about 40 cookies

Bangs Friend did something for me that I will owe her for for the rest of my life.

She made me my mom’s lasagna.

My mom has made her lasagna for me for my birthday every single year of my life and this was the first year that I was away from her and didn’t partake in her lasagna. Bangs made it so that I wouldn’t have to miss out.

I felt like I was at my mom’s kitchen table in Utah eating my favorite noodle/meat/cheese combination. It was the best way to end my birthday week celebration.

You really must make these cookie sandwiches. If you do make them you HAVE to use vanilla bean ice-cream because that made them extra amazing.

We do have the day off today so it’s a pajama play day for my kids. Lots of cuddling and board games for us and I’ll try to squeeze a treadmill workout in somewhere.

Every day is an off day when you are a stay at home mommy (actually no it’s not haha). We are meeting up with some friends for a play date and then getting my car inspected. Be jealous! Oh man HOMEMADE ice cream sandwiches made with chocolate chip cookies and lasagna has me drooling and I haven’t even gotten out of bed yet today. Especially since they’re made with love by Brooke. Those cookies look super easy, too. I’ll be making them soon for sure. With the ice cream, of course. I bet they would taste really good with caramel ice cream too! I’m not working today, but it’s typical for a nurse’s schedule to have random days off. Today I’m going for a run and continuing to house train our new pup! Two of my favorite recipes of my moms are her meatloaf and corn soufflé. I would love the lasagna recipe! And my vote is for vanilla bean. Aw, it was so sweet of Bangs’ Friend to make you lasagna. I’m sure that was a nice little post-birthday treat. Your ice cream sandwiches look amazing! Every time we buy vanilla ice cream, my husband and I spend at least 5 minutes debating/trying to figure out the differences between the different vanillas. We usually just go with what’s on sale. Our palettes are so refined.

I wish I had today off. I am at least spending the morning working from my couch instead of my office. That’s sort of the same thing, right?

Hey, I just copied the recipe because they look AMAZING. However, it says 1 tsp baking soda twice. Is there supposed to be 1 tsp baking powder or just 1 tsp baking soda and no baking powder?

Brooke looks like a fabulous little helper! Some of my fondest memories are of my sons helping me make cookies from the time they were little until they were in their teens! I think it’s great family time together; and you’re right, it’s never too early to start them! :-)

That picture of Brooke mixing the dough – I can’t even! I remember baking cookies with my mom when I was younger, and always being super impatient when it came to waiting for them to come out of the oven. Good times :D We do have the day off up here in Canada, but it’s Family Day instead of President’s Day, so I’m hoping that I can go hang out with my mom and convince her to do some baking ;)

I actually don’t have the week off… but today is only one class in the afternoon. I’ll be spending the morning doing a run with my boyfriend’s sister. She is running her first half marathon on Saturday!

No day off here; we don’t celebrate Presidents Day in Canada! But last Monday was Family Day, so it’s all good. :)

I ran my 10k race yesterday and got a PR!!! I took 5min off my old time, which for me who has only been a runner for a couple of years and had surgery last year, was a pretty awesome moment!

No president’s day here (UK) but it is half term and I’m a teacher so I have a whole week off! Yay! So far I’ve mostly slept :)

My fav sort-of-family-recipes are fish pie and lasagne. Lasagne is off the menu though as I’ve given up cheese for lent and he’s given up red meat. Planning meals at the moment is a bit of a nightmare!

I once lived my baking dream as a baker and mixer at a Whole Foods Market store. The Baker Team Leader even let me create my own flavored pound cakes!

My husband is amazed at what I learned from those years, and my fellow bakery team members remain some of the most special people to me.

My family has lots of favorite “recipes”, unfortunately my mom doesn’t really use measuring tools so she tells us things like, add SOME garlic, chop SOME onion, make SOME roux… she laughs if I dare tell her I need a little more guidence.

You know how “they” say you shouldn’t eat cookie dough because of the raw egg? If you use Egg Replacer (it’s a real thing for egg-allergic people) it works EGGZactly like eggs and tastes the same and there is no danger (perceived or otherwise) in eating the uncooked cookie dough.

Bangs is seriously the most amazing friend! I need more people in my life who bring me yummy food and make my tummy happy. I do have today off, and I came home from Sarasota super early (3 hour drive), took a nap, and am going to do some homework/be lazy/watch TV. I really like vanilla bean, it’s delicious.

My mom makes the best bowtie pasta. It’s so simple and delicious and I love it. She usually puts chicken in it, but since I became a vegetarian, she’s been omitting the chicken and she says she likes it better.

Good GOD both the cookies and lasagna look way better then what we are having for dinner – which btw is undecided at this point. Just put a batch of homemade granola in the oven while the boys are crashed on the couch. That’s so great you are already involving Brooke in baking activities! It’s very Montessori of you. So many people assume there babies/children can’t CFO something, or just don’t want to deal with the potential mess!
