Oh how I missed you.

I don’t know how I didn’t update you yesterday half way through the day on what I had done so far?!?  It was one of those pregnancy bi-polar days….cloud 9 one minute and crying over a sandwich the next.  Hormones are scary.

The day started off awesome and I ate so many strawberries that my jaw actually got tired from chewing.  They were so good especially topped on waffles.  PS we originally tried making crepes but we were out of eggs and tried making an egg substitute but it did not work.  Any tips on how to make eggless crepes…we are determined to find a way.

My nieces and nephews can walk around with their toes going the wrong way and they can even jump and land on their toes like this.  It hurts to watch.  Curly had something else she wanted to show you.

For dinner we had the usual roast, brown rice and vegetable Utah dinner but the picture was boring.  We did have some fruit cocktail on the side which my dad decided needed whipped cream on top and he wanted me to quote this on the blog for him, “Everything is better with whipped cream.”

The best part of the day occurred later when I taught a cooking class to the kiddos.  The ulterior motive behind this was that I really wanted dessert but was way too lazy to make it and so I had those six hands below do it.

We made THIS and once again I was given the honor from the children as the favorite aunt (giving them seconds may have also helped me to win this award).

50-60 miles is the most I’ve ever done. Is it true that Billy didn’t start running until you were married. I think I recall a post where you talked about how he started training without telling you, and look at him now, whipping out 50 mile weeks!

Hormones make me emotional. I get pissed off easily and can cry over a corny commercial.

Girl, you are incredible!! Yep, he didn’t start running until about 16 months ago and really got into it about 8 months ago. Boys are amazing. Ha, he was bored out of his mind. Hope you are having an amazing day Julia!

I can do that move with my left arm on top but not my right … perhaps because I’m left-handed??

I may not have pregnancy hormones, but I did have (ahem, TMI) PMS hormones this weekend … which led to me eating about half a carton of ice cream! I haven’t done that in so long. I don’t know what I was thinking. But I’m not going to lie … I enjoyed every bite! ;) And Brandon just sat there in amazement at my ice cream-eating skills!

Oh good, I am not the only one to get frostbite from icing. Makes me feel a bit better. I also have had frostbite on my ear from being locked out of my car in -40 degree weather.

I do not miss the pregnancy hormones–they made me cry and yell. My poor husband.

Wow you and Billy are really racking up the miles! Awesome job! Is Billy still following a RW plan?

Yes! An all nighter. So far I’ve gotten a two hour nap in so I’m crashing way early tonight. haha
Oh how sweet, I would have loved waffles but thankfully the Cannon had some delicious omelets to compensate.

My sis can actually spell anything in the world backwards just as quickly as she can forward (assuming she knows how to spell it forward) It’s totally weird– like even like, multisyllabic words. Oh man, I feel your crazy hormone pain! I am crazy hormonal lately, my mom says it’s because I’m almost 30 and my husband says he has it marked in the calendar so he’s prepared;-) crazy pms!
My highest mileage week was a few weeks ag0 – 58 miles – I’m pretty sure it’s WAY too much for me. Lots of icing and stretching! I’ve never had frostbite, and try to be careful when icing because I have a tendancy to leave it on much longer than necessary.

I think the arm reaching behind the back thing is called cow in yoga, if I’m not mistaken. Just a random fact you didn’t need to know haha. Looks like you had a awesome family fun day :)

Haha I totally just tried doing that arm thing and success…both with my left & right hand on top :)- it’s a great stretch too! I’m pretty sure you can make eggless crepes with flax eggs? It’s worth a shot as I’ve only ever had success with flax eggs in place of the real deal! Substituting oil with applesauce/pumpkin has also worked wonders in the past for me!

I just tried that arm thing in my room by myself. Haha, oh boy. I can do both arms but the right one is a LOT easier.
I almost always substitute oil for applesauce of some sort. I think you can make a flax egg with flax seeds, but I’m not sure exactly how!!

To sub flax for eggs, use this conversion:
1 Tbs ground flax + 3 Tbs water = 1 egg
Things won’t be quite as fluffy, but it will make the dry ingredients bind together :) I use this conversion for most baking items, but not for cake–the one time I did it was too crumbly and dry. It works great in muffins tho!

Don’t worry your pregnancy hormones will get better. When I was pregnant, I cried all the time and ate too much, which doesn’t help when I was on bedrest for 6 months!

I would have to say 40 miles tops! maybe once or twice I have gone over but not really. I usually stick in the 30s. I have substituted eggs once but I don’t remember what I did. I googled it. I almost always sub oil for applesauce tho as well as sugar too.

I don’t normally subsitute much in baking but my sister subsitutes eggs for flax powder sometimes. I can’t tell the difference and think it’s pretty healthy to do so. Check out http://www.care2.com/greenliving/flaxseed-egg-substitute.html.

Ran two 100 mile weeks last year building up to the Chicago Marathon. Surprisingly my body loved it and I was not that tired. It was 90% slow and easy paced…that’s important.

I’m dying at your arms reach pictures. I cannot even come close to touching!

Pregnancy made me nutso…seriously those hormones will get you…so don’t even worry about it :)

I think my highest mileage week was around 46 miles.
Never had frost bite!
They make me cry for sure! haha
I use applesauce or banana for oil/butter, flax + water for egg, half the flour I use whole wheat and I almost always reduce the sugar – crazy I know ;)

HA, i was just telling my preggo boss that i’m hormonal all the time without even being preggo..kevin really loves it, i promise. they make me usually cry and sad and weepy over the silliest things. and my stomach likes to become bottomless..dangerous dangerous times ;)

I have over iced my foot and got minor frost bite. I didn’t know what had happened to my foot until I went to the pediatrist. My husband reminds me evrytime I ice now to make sure I don’t make the mistake again.

When my hormones are out of control I give the silent treatment. My husband even downloaded an app called Code Read. It is suppose to alert him when I will have PMS and give him all the right things to say.

I like that there is something from Coscto in every picture at your parents house, like every picture ever. That is how it is at my parent’s house too…and I LOVE it cause then they are always hooking me up when I am there :)

Sorry for your ‘off’ day. I hate days like that. Especially when there is no good reason. I usually get upset at the stupidest things and get angry. Then realize how silly I am being and start to cry. Gotta love being a girl. lol.

I use different kinds of egg substitutes a lot when cooking since my daughter is allergic (flaxseed, energy egg replacer, tofu, etc) and sometimes I do stuff for sugar, but NEVER in a dessert. I would rather just eat less and have it taste really good than be able to eat more. Speaking of, I need to make that dessert pronto. It looks awesome!

Also, Billy is crazy. That is all.

I have had frost bite a few times on some back country ski trips-no bueno. In fact, when I took my ice bath on Saturday after my 20 miler, my toes hurt so bad in the first three minutes that I had to get out and wrap a towel around them and then get back in. Again, no bueno.
My hormones go crazy one day a month-I can’t imagine that times 9 months.
No high mileage for this girl with all my foot injuries. I stick to about 30-35 miles a week and find success.

OMG your waffles sooo good!! My hormones are wacky when I get stressed. I’m really happy one second and then I’m freaked out. My highest mileage was around 74 miles for a week. I only did about 3 weeks of 70 mile weeks because it really wore me out. I’m not one to experiment with baking substitutions, but I’m always on the look out for how to make something a little bit healthier.

I make substitutions all the time because I never have all of the ingredients a recipe calls for. You can sub flax meal and water for eggs. I always use that because I don’t like eggs so I never have them on hand.

My highest mileage week was 65, but I like to stay around 50 normally

By the way I had a dream last night that I went to pizza factory while babysitting some kids and I kept looking for you. Did you not get the memo to be there last night?

i actually gave myself frostbite from an ice pack just a couple of weeks ago. i thought i must have been stupid to GIVE MYSELF frostbite, but it seems i am in good company, haha! i hope his leg heals quickly!

I know in vegan cooking people make flax eggs by using 1 T of flax and 2 T of water and letting it sit a couple minutes. I’ve done that before and it’s worked in microwave muffins, but I’ve never tried it with pancakes or crepes!

I substituted diet soda for the eggs and oil in cupcakes and it worked except for when I tried to make them in a cone (those made the cones all super nasty and weirdly soggy). For a friend’s baby shower, I was nice and just made it with all the regular ingredients and they like it much better :P

I think my highest week ever was 42 or something like that, sometime this summer I’d love to have a 50 mile week! I have to tell you something about my weekend though…yesterday I was part of a relay team and we did a total of 44.4 miles to raise money for cystic fibrosis here in Kansas City. If they have anything like this in Utah or wherever you and B move to, I highly recommend doing it! You could have anywhere from 2-10 runners plus one vehicle for supplies…it was an absolute blast and I think you’d love it!

I love sitting with an ice pack on my lower back for about 10 minutes before bed. I found a weird spot on my back and realized it must be some sort of burn from the ice on my skin. It doesn’t really hurt, but it’s not pretty.

Hormones, I must remember to use that excuse more often.

I substitute Macadamia Oil instead of Olive oil in some of my cooking and coconut oil for butter….just a matter of preference.

I can totally do it with either arm- I finally have a talent!! My mom will be so proud.
Hormones make me just plain moody. While pregnant I cry a lot. I have Grave’s Disease/hyperthyroid and those hormones make me anxious and grumpy. My husband is a lucky man.
I had some of my kids friends over for a playdate last week and made rice krispie treats with coconut oil instead of butter (one of the kids was allergic to dairy). It was actually pretty good!

i’ve never had nails long enough to click on anihtyng. i think i tried to grow them out once in junior high and my piano teacher hit me with a conductor’s baton during a chopin etude. i think that was the trigger for my neurotic nail-biting habit that i foster to this day.i wonder if when i’m pregnant and my nails are long, my baby will kick me when i click them on the piano. i’ll keep you posted…

Oh my…I am so sorry, I should have included that. I was so confused to when I was baking it and it took way longer. This last time I did it for 46 minutes and it was way better. I check on it every 5 minutes after the first 30!

I substitute all the time – in baking I use greek yogurt or pumpkin instead of eggs/oil. I also use truvia instead of sugar (or sometimes sf maple syrup). I use liquid egg whites a lot also.

Janae, your father is a wise, wise man. I will take his advice VERY seriously, I love it :) I wish my parents encouraged me to eat more whipped cream ;) Perhaps he could have a word with my dad?

I had frostbite and hypothermia once, separate occasions. The frostbite was mild, it resulted from an attempt to walk to the mall (with a BAD sense of direction!) in Ottawa in -40C in clogs. Poor life choices. My heel turned black! Hypothermia was even less fun – car accident in snow, I went into shock and took my shoes and coat off and sat in the snow waiting for the ambulance. I have no recollection of this, but I did end up spending hours in hospital with heated blankets!

Egg substitute…I’ve heard that flaxmeal and warm water can do the trick but haven’t tried it out. If you’re making a cake, I’ve heard banana can work in place of egg.

Hormones…can destroy your life and the lives of those around you. Need I say more?

You can tell Billy that I gave myself a bit of frostbite while icing my knee a few months ago. I used to ice everyday because of my cartilage injury and once I just fell asleep and left it on way too long. It hurt so bad when I woke up and took off the ice pack. I had a doctor appointment the next day and had to go in with all of these frostbite burns all over my knee. He was like, “yeah…you should only leave it on for 10 minutes” haha. Luckily I didn’t scar from the burns, but they were there for a few weeks!

i am the SAME way with hormones lately. ive noticed the difference between before and now (now that im preggo) when i cry now, i cry like crazy. i like, sob haha…and usually its for no reason. i tend to make something up but when i say it, its usually so dumb i have no idea why id cry over it? haha its so bizarre. im sure it scares the crap out of my husband hahah

I can do that arm thing too; both sides. I think my highest milage week was a 70 mile one, but usually I average between 50 and 55. I have never had frostbite; it almost happened on my ankle one when I did the same things as your husband and left the ice on way too long. Hormones turn me into a crying little girl with occasional outbursts, which my bf just loves.

oh my gosh, the foot curl walk!! u guys should make it event, but even better an obstacle course where u can take laps around the house but have to pick up and eat things from the table as u go…i’d be making a double trip thru for that dessert!! yummy!!! and way to go for the Billy man, great week of training, but let’s not have any more frostbite…hehe.

Totally off topic, but that dried mango in the third pic—complete staple at my house. Whenever we run out we panic and run to Costco.

I can’t come anywhere near doing that arm thing but I define apple shape and I’ve got giant arms and a really broad back. I hate it.

I’m a new runner so my highest mileage week was something like 23 and I was pretty proud of that! My stocky Polish/Irish build doesn’t allow much more than that just yet! (or maybe ever, but whatevs!)

I substitute things in baking quite often. I’ll use applesauce or yogurt in place of oil in quite a few recipes.

I made that cinnamon roll cake last week- oh my goodness!!!! Absolutely delightful!!! Love it sooo much:) And this pregnant is also craving straaaawberrrrries!!! I actually gave myself freezer burn (or maybe frostbite?) once. I wrapped an ice pack around my skin with Ace wrap and nothing in between the ice and my skin… soooo stupid! When I finally took it off, I had a horrible red mark that settled in and scarred. Took a few years for that to totally disappear and I’ll never make that mistake again!!

You can make an egg substitute with 1TB ground flax & 3TB water. Mix and let sit for 10 mins and it will gel like an egg. In baked goods you can also use banana.

Mmm I had a waffle with strawberries this morning too!
For pancakes and waffles I either leave out eggs entirely or sub them with flax/water. But, when I’ve tried that for crepes it hasn’t worked…

Your waffles look incredible! Hubby and I make waffles for the kids every Saturday, but they never look that beautiful.

My highest mileage week is 35, and I’ve done that quite a few times. I know it doesn’t sound like a lot, but that is how I stay away from injuries. It works for me and I can continue to run lots of marathons.

I am notorious for substitutions. Applesauce instead of egg, reducing sugar is always a must as well as trying different kinds of sugar (syrup, honey, agave, brown, white), flax eggs and chia eggs also work great too.

Oh, and sorry about the hormones. I’ve definitely been feeling my emotions go all over the place. My excuse is that I’m 35 weeks pregnant. I can get weepy, crazy snacks, but most of all snappy and irritated with the hubby. I’d feel bad for him, but I’m too busy feeling annoyed!

Love this post.. and yes I can do the arm thing.. my hubby cant he has ZERO flexibility.. Hormones are scary…I wish they were only during the pregnancy but the weeks after are even MORE SCARY!!!

In baking, I always substitute the oil with apple sauce. I always substitute plain yogurt for sour cream or mayonnaise in recipes, too!

Ahhh, hormones… when I’m getting close to that time of the month I feel like a walking water balloon and I get clumsy and just feel fat and uncoordinated. FUN TIMES!!!

I CAN do that arm stretch with both arms but I don’t know anyone else who can – even if it’s just your right arm I am (oddly) excited!! I’m not flexibly in the least, so I guess I have to credit my monkey arms.

And on a different note, those waffles are making me hungry. *drool*

Waffles topped with PB Greek yogurt + strawberry jelly + fresh sliced strawberries = HEAVEN! Reminds me of strawberry shortcake :)

I don’t bake often but when I do, I will sometimes sub egg whites for whole eggs or applesauce for butter/ oil if I am making cupcakes or a cake- not only are they lighter ingredients but I also think they make them fluffier! For cookies/ brownies I usually follow the recipe…

I LOVE curly’s move, it took me a minute to find her…I thought she was a pillow or something. I scrolled down the page to see her trick and no curly :) Those kids are so blasted cute. My cousin and I used to run all around on our toes like that…I don’t remember jumping though, that takes skill!!

So about that picture with the arms….I can do that linking my pinkies and pull it over my head without unlinking!!!
