Hi, guys!! My name is Kristen, and I blog over at “Confessions of a (Not-So) Domesticated Newlywed.”  I’m so unbelievably excited that Janae asked me to do a guest post.  I absolutely love Janae and her blog, so of course I jumped at this opportunity!!

But I don’t exactly have a ton of experience with all of the “wifey-duties,” such as cooking, baking, and cleaning.  So my blog shows all of my successes (and all of my failures!) as I work on becoming “super-wife” (I don’t know if this goal will actually be accomplished in my lifetime, but a girl can dream, right??).

Today I’m going to share a super easy recipe with all of you.  I’m all about easy, delicious, and (sometimes) healthy meals.  Make this dinner for your significant other, your mom, or maybe even that cute guy you’ve had your eye on.  But just make it.  And then pop a breath mint … you’ll need it after you consume all of the delicious garlic. ;)

Spicy Shrimp and Linguine

Adapted from: Shrimp and Linguine Fra Diavolo

*This recipe serves 2, but could easily be doubled.

Ingredients

2 servings whole-wheat linguine

Several broccoli florets

3 tbsp extra-virgin olive oil

½ cup diced onion (about ¼ of a medium-sized onion)

1 tbsp minced garlic

½ tsp red pepper flake (Note: This makes it pretty spicy. Adjust to your liking.)

½ can diced tomatoes (I use Del Monte diced tomatoes with basil, garlic, and oregano)

2 servings of large shrimp (I use about 16 shrimp)

Salt to taste

Directions

– Start out doing the prep work.  Chop your onions, and get your ingredients together.

– Cook your broccoli.  To keep it crisp and bright green, throw the broccoli into a pot of simmering water for 2-3 minutes.  Then immediately transfer the broccoli to a bowl of ice water.  After a couple of minutes, pour out the water and set the broccoli to the side for later.

– Next, bring a large pot of water to a boil.  Once it comes to a boil, add your pasta and cook for about 5-6 minutes (it will not be completely cooked).  You will then drain your pasta, but be sure to reserve just a little pasta water (about ¼ cup), in case you need it later!

– In the meantime, heat your olive oil on medium-high heat in a large skillet.  After the oil is hot, add your onion and let it cook for 3-4 minutes, stirring occasionally.

– Next, add your garlic and continue stirring.  After about 30 seconds, add your red pepper flakes and continue to stir for another minute.

– Now add your diced tomatoes.  Reduce the heat to medium and let the mixture simmer for about 5 minutes, stirring occasionally.  If you want, you can use the back of your spoon to crush some of the tomato pieces and make it more “saucy.”

– After those 5 minutes, add your shrimp and broccoli and continue stirring until the shrimp are pink (around 3 minutes).

– Next add the pasta to the skillet and continue to cook, stirring occasionally.  If you think the sauce needs to be thinned out, add a little pasta water.  Add salt to taste.

– Cook for 4-5 minutes, depending on your pasta (taste a piece to see if it’s cooked enough).

– And that’s it!!

Serve it up, and then pat yourself on the back for a job well done. :)

I’ve made this for my husband and my in-laws, and it was a huge hit with everyone.  It’s the perfect combination of spicy, salty, and a little sweet.

So try it tomorrow … and then feel free to sing my praises.  I promise I won’t blush.

I like seafood, but rarely make it at home. I want that to change, and your recipe reminded me to just do it!! Thanks for sharing.

I come from a ginormo Italian fam w/lots of ridiculously awesome old recipies. I think the kids fave is my homemade meatballs and sauce. LD loves lasagna. They all love when I bake desert breads :)

It’s a perfect meal to impress people because it’s so ridiculously easy, but it looks and tastes like you slaved away in the kitchen!

Impressive memory, by the way … I can’t remember the first meal that I made my husband! I think it may have been something with a food processor, because I remember slicing my finger on the blade! Yikes!

I’ve been married for nearly a year now (second marriage) and my husband LOVES it when I make ropa vieja, a cuban dish with flank steak that you make in a crock pot. SO EASY! It’s his favorite meal. I’ll be feturing it over at my blog soon. He also loves my chocolate chip cookies…And so do the kids (we have two)!
