Toasted Coconut and Frosting In My Nose.

Since when did this turn into a trillion recipes a week blog?  That is what happens when my mind isn’t consumed by running 23 hours of the day.

As everyone else was getting dinner ready my mind was focused on what to make for dessert because obviously that is more important than silly dinner.

I looked around the fridge and pantry and found coconut milk and sweetened coconut flakes.  Tears built up in my eyes because I knew that those were the two ingredients that aren’t ‘normal pantry items’ that are necessary for my favorite cupcakes.

Martha Stewart’s website to the rescue….I used this RECIPE to make my heavenly creation……

Martha did make a mistake, but I will forgive her.  She doesn’t include adding TOASTED cocunut on top of her cupcakes.  It is A MUST if you ever make these!

These earned me +4356 daughter-in-law points, which I am really needing after living with them for 3 weeks so far.

The frosting is an egg white, sugar and corn syrup mixture and it is SUPER light and fluffy…which makes it totally okay to have the same amount of frosting as cake on these babies.

I do not recommend inhaling as you bite into the cupcake……frosting in the nose burns a little.

And if that doesn’t put you in a sugar coma, I think these might.  I present to you dinner.  A family friend gave us this pancake recipe and said it was the best in the whole wide world so we decided to make it for dinner (along with scrambled eggs….on a SEPARATE ketchup filled plate).

I topped mine with strawberries, granola, syrup and pb on the side to dip them into.

BIlly made a mighty pancake tower with pb in between each layer.

I keep telling Billy he needs to start sending out his portfolio to become a hand model, but he won’t do it.  Something about he doesn’t want to become too famous for me.

Have you ever been to Disneyland!?!?  Disneyworld?!?!  What is your favorite ride?

-YES and I really do love it.  We might be going with my sis and her kids this week if we can get a good discount from a friend….cross your fingers.  I NEED to spend my day in long lines with trillions of people and pay $4 for a pickle because nothing will be better than seeing my neices and nephew with ginormous smiles on their faces while riding dumbo!

Indiana Jones is my favorite ride!

Chocolate and coconut together have to be my favorite cupcake flavor!!! I have never been to Disneyland but I’ve been to Disney World and of course I love it! My favorite ride is Rock ‘n’ Roller Coaster. I had to trick Mike to get on it because he doesn’t like going upside down so I may have fibbed and told him it didn’t…when, in fact, it does about 3 times and its super fast. 0-60 mph in like 2.8 seconds. Ha, his face was priceless when he realized what he was about to get on. Muahaha I am sneaky.

I love COCONUT! I put it in my oatmeal, smoothies, and coconut flavour in my coffees! I AM MAKING THOSE CUPCAKES! (I got a bit over excited there)!

AND I have never been to Disneyland/world! I begged as a child and my wish never came true. I guess Canada is a bit too far away to make it an affordable vacay. BUT… the boy’s parents have a condo in Florida so we are going to make a trip soon! WOOO HOOO! Never too late to discover Disneyland!

As much frosting as cake is a necessity I say! And I can’t believe Martha didn’t top them with toasted coconut. Seems like such a Martha thing to do. Clearly the Janae thing wins.

I have to go with chocolate peanut butter as my favorite cupcake flavor.

Supper was BBQ’d chicken, corn on the cob, grilled veggies and dessert was a Kool Aid freezie!

I went to Disneyland about 14 years ago BUT we are going there this September to run the half marathon I cannot wait! I love the Indiana Jones ride too!

I love Tower of Terror, favorite ride! Splash Mountain is a goodie too but it was closed when I was at Disney in January :( Very sad. I love just a plain ole vanilla cupcake, boring but delicious.

I am totally in favorite of a 1:1 ratio between icing and cake. Also, I am loving Billy’s pancake toward idea–awesome peanut butter maximization.

So exciting about Disneyland!! I just went to Disneyworld, and it was magical, of course. My favorite ride is Expedition Everest (don’t know if they have that one in Land), but my close second favorite is SOARIN’ and I know they have that one!

o.m.yum! coconut cupcakes are my favorite. hands down. (the recipe i use is on my blog too). my family loves breakfast for dinner. we don’t do it often enough. i just love sunday dinner, no matter what it is. last night we had “taco chili” that i made in the slow cooker. yum-o! and yes, i’ve been to disneyland a few times but never disney world. husband and i are dying to take our kids back. i hope sooner than later. have fun!

Disneyworld 3x, Disneyland 1x when I was 2 and the only thing I remember was turning the knob on a candy machine dispenser without putting any money in it, and candy actually came out! It was like Christmas!

I am with you… coconut=heaven. I even mix coconut shreds in my oatmeal some mornings. love love.

And I am a Disney-a-holic. Two of my kids have gotten wishes from Make A Wish and we got to go to Disney World, and I have been to Disneyland lots of times. And, last year I went to Disney to run the Disney marathon and in January I am going to run the Goofy challenge (half marathon on Sat., full on Sunday). Can’t wait!!
$4 pickles are good, but everyone knows the best treat at Disney is the frozen chocolate covered banana! :)

Vanilla cupcakes from Babycakes are DA BOMB – there’s a location in LA, you totally have to go! They’re vegan and sweetened with agave rather than sugar…did someone say “health food”??

Sunday night dinner was 2 pounds of guac followed by Trader Joe’s indian food with my two besties from high school – so amazing that all 3 of us are in NYC right now!!

I am with you, I love, love, love rollercoasters and I don’t care if theme parks are cheesy and slightly grimy, I will always want to go to one.

Disneyland is so super fun. Make sure you ask the ride attendant in the projection room of Indiana Jones (where they show the video of Sala talking about the Temple) about the “Hidden Eeyore”. It’s an old parking lot sign that they have tucked away in that room. They’ll shine a flashlight on it and show you. :)

Ooh and by Adventureland there is a Dole pineapple stand (it’s next to the Tiki Room) and it has super amazing pineapple ice cream treats. They’re so good!

I love the Black and White cupcakes from Sprinkles (while you’re down here you should go- it’s near Fashion Island in Newport… legendary). And… I hate Disneyland. I know, I know. I think it’s because I live down here and get annoyed by all the hype. I hate the lines, how crowded it is, and the prices. I totally understand the appeal for out-of-towners, though.

I love s’mores cupcakes! I really love any cupcake with lots of elements like filling and crust but s’mores always is a fav! I had a lame dinner last night-salad, sweet potato fries, grapes, a chicken veggie patty that I threw away since it was yucky, then I ate some bbq chips-you know for the protein I missed in the veggie patty? I love love love Disney World! Since I live in Orlando we have seasonal passes and it’s great! I really want to visit Disneyland though! I’ve also been to Disney Paris but it was before my blogging days so I don’t have very many pictures:(

My number one, MOST FAVORITE cupcake ever in the whole wide world is this flavor called the FAT ELVIS from The Kupcake Factory in New Orleans, LA. First, I am a huge Elvis fan (I even named my dog Elvis). Second, I simply CANNOT resist the banana nut cake part with peanut butter cream cheese frosting. I don’t want to even *imagine* how many calories are packed into just one of these babies, but on special occasions, I simple do not care. Fat Elvis = HEAVEN. :)

My Sunday night dinner came courtesy of my mama. She made green beans with Irish new potatoes cooked down in them and she also made stuffed bell peppers. YUM. Nothing terribly fancy but I loved it!

I have only been to Disney World when I was 8 years old. I remember LOVING the Pirates of the Caribbean ride and EPCOT Center. My mom is the world’s worst photographer so almost every picture that we have from the trip has someone’s head cut off, only half of someone’s body, is totally crooked, etc. Oh well! I got my Daisy Duke hat (complete with gigantic eyelashes) so that is all that matters! :)

Oh my goodness, what a sweet dinner…literally, lol! :-D Ahmazing :-)For my sunday dinner we had roast organic free range chicken, roasted potatoes and sweet potatoes, steamed green beans, at my Mum and Dad’s. It was soo much fun, especially because most of the meal was spent cracking jokes and laughing <3 love love love family time at weekends, we have been to my parents for Sunday roast two weeks in a row and I love doing it with all my heart! Hopefully it will become a tradition :-) haven't been to disney, but it sounds awesome! Please don't hate me but I've never eaten a cupcake, lol! I LOVE Coconut Cupcakes. My next favorite is Key Lime Cupcakes with a Graham Cracker Crust on the bottom.

Sunday night we celebrated my son’s 4th birthday. So we grilled hamburgers and hotdogs. I served some Chicken Pasta Salad I made the day before and Watergate Salad. For dessert we ate birthday cake.

We went to Disneyland 3 times last year. We lived only an hour and a half from it and my husband had business in Anaheim, so we took advantage of it. I loved it and learned that you have to get Fast Passes to cut in lines, which is helpful on any occassion.

Obsessed with Disney and their races!! I did the Wine & Dine Half Marathon last October and it is a night race that goes through all the parks!! I loveee Epcot and all the countries and the Impressions De France movie :)

Sunday dinner – salmon, potatoes, and yummy basalmic onions from Trader Joe’s! Oh and some TJ’s ultra chocolate ice cream for dessert – HEAVEN!

Favorite D-Land ride would be Space Mountain or Small World because it reminds me of being a kid. Now having kids, I enjoy Disneyland in a entirely different way – through them! Love taking them into Bug’s Land in California Adventure. :)

I’ve been to Disney World a ton of times; it’s one of my mom’s and mine favorite places to go together. I’ve never been to Disneyland but that will change in September, when I go out to run their half marathon! I’m doing it so I can get the Coast to Coast medal (did the DW half in January). I have high expectations for a good race – I did the DW one injured/sick. I also have high expectations for the parks! And I definitely had heard that Indiana Jones was an awesome ride.

Sunday night dinner was cookie dough and cookies, followed by a salad, followed by more cookies. I think I overdid the cookies, because I woke up with a terrible headache. But my coworkers seem to love them (brought them in to work today), so that’s good.

My Fave Cupcake: If I went with store-bought, I just couldn’t choose, so I’ll go with what I’ve made recently. I just made a cupcake with only greek yogurt, water and strawberry cupcake mix. I topped it off with cream cheese frosting (whipped) and it was AMAZE!

Sunday Night Dinner: A salad…and cupcakes. Because I was baking for my coworkers. I had to eat the mistakes…fortunately, there were a lot!

I love Disney World! That’s why I ran in the Disney marathon. My favorite ride was the Peter Pan ride when I was 12…I confirmed it was my favorite ride when I went back to ride it as a 23 year old ;-)

I am a huge Disney World fan!!! We go at least twice a year and have season passes even though we live in Delaware!!! I work on the Jungle Cruise, so I could be lame and biased and say that’s my favorite ride… but honestly, one of my favorite Disney rides is in Epcot in Disney World. It’s called Spaceship Earth. It’s super slow, and the entire thing is about the history of human communication. Seriously. I like plain chocolate cupcakes and learning about history. I am the weakest link.

Favourite cupcake? Anything with frosting! Actually I like classic vanilla (Martha’s recipe too) with yummy fluffy butter and confectionary sugar frosting. Sprinkles are of course mandatory and frosting should always be pink.
I make this Martha Stewart frosting for my Mum all the time. I love the fact that she is 50+ and still gets super excited about licking the bowl :)
