Double Decker Oreo’s and Speed Walking

I am trying to make the below picture look 3d and that is why I am sticking my head so far forward from the rest of my body.

SARAH agreed to join me on a walk around the lake and listen to all of my rambling about who knows what.  I love that I meet all of my friends through the internet now.   I make them think I am normal through the world wide web and then once they agree to hang out with me in real life my weirdness comes out in full force.  We shall see if she agrees to another date.

While I was getting my speed walking on, Billy was at home making my favorite DEVILED EGGS.  My FIL went to Costco yesterday and thought he grabbed one crate of eggs but accidently bought TWO….120 EGGS for five people…..you may be seeing a lot of egg dishes on the blog in the next few days!

And for dinner we had cajun grilled chicken with a fruit salad (covered in coconut…try it, you will be happy), green beans (roasted in olive oil) and DIRTY rice (peppers, onions, garlic, butter and celery).

Dessert: DOUBLE DECKER OREO….have you ever seen one of these? Cookie, chocolate creme filling, cookie, creme filling and another cookie……I think it would be even better with another layer or two.  (Learn my favorite way to dip an oreo by clicking HERE it is truly life changing).

Guess where we are today?!?!   I will be seeing how many disney characters I can sneak pictures with, eating 5 frozen bananas, 6 churros, 8 pickles and I will be seeing how many consecutive times I can go on Splash Mountain!

My workout will consist of running from one ride to the next while carrying my neice…….cardio + strength training at the same time.

Ariel is my number 1 favorite Disney character. I also like tinkerbell, in middle school my screen name was Tinkrbell84 :) favorite amusement park is Disney 100%!!! Quiche! Throw some veggies in a baking dish. Whip up some eggs with a whisk, pour the eggs over the veggies and bake for 45 min on 450 or so. It’s my favorite quick thing to “cook.” I love some goat cheese and hot sauce or salsa on top.

Of course, eggs go great in double decker layered cakes too. Just sayin.

I love min donuts! The ones covered in cinnamon and sugar.

That’s so funny about the eggs! I love plain hard boiled and deviled eggs too…yum. I’m not too big on them otherwise, but once in a while I get a craving for a half whole/half white omelet.

Ariel is def my fave disney character! I was OBSESSED with the little mermaid when I was little (ok, I def have to bust it out every once in a while to curl up and watch it)

fave amusement park food is fried oreos and FUNNEL CAKE! obviously I love clogging the crapola out of my arteries. its classic jersey boardwalk food for me…hope to get down to the shore soon this summer. going to el salvador in two weeks though, seriously..maybe thats a bit better then the jersey shore ;)

personally i would just make 10 pounds of deviled eggs this week but ya know..that just me? how about getting fancy and making some quiches? :D

I thought of something to do with eggs! mini-egg veggie fritatas! or quiches or whatever you want to call them… chop up and sautee some of your favorite veggies, spray a cupcake tray with pam olive oil, whisk up some eggs (I use more egg whites than actual yolks) and put them in the cupcake tray with a sprinkling of veggies in each one. Add some feta or grated cheese if you’re a cheese lovah. Add some breadcrumbs if you like your quiches thicker. Then you just bake at 350 deg for like 10-15min (until they’re slightly browned on top and slide right out of the muffin tray!).

Make an angel food cake! They take A LOT of eggs and always look sooo pretty when they are all done up with fruit :)

Here’s a really quick thing to make with eggs…it’s called a savory tart here in South Africa:

Savory Tart:
Mix 2 eggs plus 1 cup milk
1 finely chopped onion
Add 1 cup cheese
25 ml flour
Salt and pepper

You can mix in a number of different things like: 2 tins Tuna, feta, spinach, etc…
Bake 180 C/ 40 min

Definitely Ariel – growing up we had this huge rock in our front yard and my sisters and I used to sit on it and pretend we were here…hahah.

Churros taste THE BEST at Disneyland, and I will always eat about 3 each time!

I’ve started eating 2 fried/poached (or froached?) eggs on top of steamed veggies (*cough* broccoli *cough*) and it is sooo yummy! Try it, I swear you’d love it. The yolk oozes over the broccoli and it is LUSH! So have that several times a day. Or double up on the eggs each time, lol! ;-)
I LOVED Aladdin, the Little Mermaid, Beauty and the Beast and the Lion King when I was younger. We even did Disney shows as school plays. I was Lumiere in Beauty and the Beast…those are photos I do NOT let out of the cupboard, lol! Dressing in a full body candle costume looks pretty cool. Not. :-P I was also “antelope number 3” in the Lion King. My parents were so proud ;-) xyx

You HAVE to go on the Little Mermaid ride!! It’s so cute and fun! I love me some Ariel :) We are headed there on Friday!!! My BIL and SIL are driving to CA from TX and we are taking all of our kiddos. So fun!

Ariel all the way… I still remember my bf in high school bought me the soundtrack on CD… and I might have been 16… and it was one of the very best and most thought out presents I have ever received. Yeah, the soundtrack might be on my iPhone.

Looking forward to: Signing up for a Teaching-Certificate program and starting a new running program!! (I couldn’t run for almost 9 months because I had a stress fracture in one leg — then didn’t listen to my doctor, made it worse, and got another one in my other leg. Oui.)

If you’re at Disneyland you have to get a pineapple float! They are so good. It’s on the way in to the the Indiana Jones ride. We were just there last month.

Something yummy I’ve been eating with eggs is an egg white omelet with jalepeno jack cheese, chicken , and broccoli.

That’s a lot of freaking eggs! Deviled eggs are so worth it though! Perhaps make some super egg-y potato salad, yum! And Ariel was for sure my favorite too, with Belle as a close second!

i am obsessed with disney! the sick thing is that for three years in a row my sis and mom were going to d-world. each year i had my plans set up to go with them, and every year something crazy happened last minute so only I couldn’t go. got really super sick one time and had to go to the hospital, stuff like that…the gods ar against me. but my mom and sis have been three times and the rest of my family as well, now i still have yet to go but they all say they’ve ‘been there/done that’. before i die i must make it to d-world! i’ve been to d-land of course and it’s heaven!!! have fun! :)

I absolutely LOVE Disney! I went earlier this summer and used to go every year when I was younger :) My favorite princess is belle, because I was a brunette and so was she! I would have to say my favorite amusement park food would be the churro…or ice cream. An idea for eggs…you could make egg salad sandwiches, or wraps, or just eat it plain! To me, it kind of just tastes like a deviled egg all mashed up! :)

Okay, I’m definitely with you on frozen bananas and Disney churros… but there are two other AMAZING treats at Disneyland that you must try!

The first is Dole Whip – it’s outside the Enchanted Tiki Room. There can sometimes be a 30 minute line, so get it quick! It’s pineapple soft serve ice cream… incredible. I personally recommend the pineapple/vanilla twist. Not that I am obsessed with the stuff or anything.

The second is at the Refreshment Corner on Main Street U.S.A. and that little beauty is a cream-cheese filled pretzel. It’s amazing. When I was working full time at Disney World, I would go to the Magic Kingdom just to get a cream cheese pretzel. No joke, I’d buy one, eat it, and leave. IT’S THAT GOOD!

We are twins!!
I am OBSESSED with Ariel! The Little Mermaid is still my fave movie ever :) When I went to Disney World for the first time I was 14, in line to meet Ariel and get her autograph, and all of the little girls were trying to skip me! I guess they thought I was waiting on someone. Anyway, I was about to take them all out, but then I remembered that they are literally 1/3 my age, and there is no need for being mean at the best place on earth ;) haha
And I LOVE Splash Mountain!
P.s. Idk if you’ve ever tried oreos and peanut butter, but THAT, my friend, is life changing! I swear.. best. thing. ever. It’s the reason I used to puke during every 400 workout in high school.. apparently I just couldn’t stay away from them in the time between when school lets out and track practice.
Fave fair food? Funnel cake!! Yum :) I haven’t been to the fair in forev!

I love Disneyland! And I’m from Anaheim! I go probably twice a year (my friends mom works there so we get in free) Or we wouldn’t go as much. hehe
We are going Labor Day weekend- which is the Disneyland Half! I’m so excited! This was going to be my first half, but the girls at the gym got me to train for the Hurricane Half- so I did that, then San Diego Rock n Roll-(My mom lives there).
And right now I’m driving to Bryce Canyon for the Half Marathon and a friend is going to meet me there for her first half!
(I live in Hurricane)
