Well, I couldn’t find any bobby pins for my run Monday morning so I ended up eating my hair the entire time. I remember one time before my blogging days that I forgot bobby pins/a headband for a race and my hair drove me crazy the entire time. But I think it was actually my secret weapon because I was so busy thinking about how annoying it was to have my hair in my face that I didn’t think about how tired my legs were and I ended up finishing faster than I expected.
8 miles @ 8:01 pace yesterday and some speed today (let’s see how that goes because I got to bed at about 3 a.m. today)…
Monday morning I set out from Andrew’s Grandparents’ house and found a dirt trail about .5 miles away. It was perfect. PS whenever I run somewhere new like this I make sure I have the address where I am staying in my phone and put it in my Google Maps and let my phone guide me back if I’m a little bit lost. The place I get lost the most often while running is Arizona… I have no sense of direction there.
A great place to just zone out, listen to Jimmy Eat World and enjoy sea level running.
Andrew’s grandma made sure to have a perfect breakfast waiting for all of us.
And then we were off to The Orange Outlets.
Brooke found some high-tops that she loved a whole lot.
The kids also got some laps in themselves.
I finally got a new Hydroflax just in time for all the hydrating that needs to go on over the next few weeks before the marathon.
Knox told me he wanted a picture next;)

Dinner was served and this bowl of fruit was perfection…. Brooke and I went back for 3 helpings of it:)
Pretty much the only trick (aka not doing anything special) I can do while jumping in the pool.
We all showered off real quick and then jumped in the car for the 9 hour drive home. Andrew’s grandma made sure to pack us her Special K bars—> they are like peanut butter bars but with Special K. Almost too good.
It was a long drive home with plenty of randomness with these two but for the majority of the trip they slept.

Andrew and I put together a meal plan for the next few days with the goal to cut back on our treats (this always happens after a trip… my body is ready to get back to normal meals/food) and then I came up with a list of all the fall things I am excited about. In no particular order:
*Cornbelly’s (we always get season passes to this—> it is a big fall fair/carnival thing about 20 minutes away)
*The Pumpkin Train… it is a 40 minute Halloween themed train ride up the canyon. PS Knox’s favorite holiday is Halloween so it is going to be such a blast doing all of the Halloween stuff with him.
*ALL OF THE FALL TRAIL RUNNING. Josse and I decided we are sticking to trails only for a month or two while we recover after the marathon.
*Making everything food related with pumpkin. Oh and all of the fall soups, those are the best.
*Going to the Bay Area with Andrew in October (I take Brooke out to her dad that weekend).
*I’m ready for sweater weather (*although, I’m not ready for snow weather*)
*The pumpkin patch and pumpkin painting
*Making caramel apples with the kids

I really love the fall. While summer is great, it’s nice to start wearing jeans and long sleeves again without sweating everything I have off. Plus, I love the crisp feeling in the air. :)
My favorite holiday is the Fourth of July, but Thanksgiving is right up there. I love being with family, eating lots of great food and watching football. It’s perfect. :) (Oh, and I have definitely gotten lost on plenty of runs and ended up running longer routes than I originally expected!)

Soon after we got our iPhones for the first time my husband called me on a run and said he was lost and could I use the find my phone feature and try to figure out where he was and figure out a map home? I then reminded him he had his phone…the phone he was calling me on…that could do that same thing for him. ?

It is SPRING in South Africa and I’m looking forward to everything summer!!! My son had his first swim for the season on Sunday, but I’m not that brave the water is freezing. My favorite holiday is Christmas! We don’t even get snow over here but I feel sorry for myself every winter, can’t stand the cold.

This is just a basic recipe for pumpkin bread, but it comes out so moist and flavorful. I think it’s originally from Bobby Flay.
INGREDIENTS
4 tablespoons unsalted butter, softened, plus more for the pan
1 3/4 cups all-purpose flour
1/2 teaspoon fine salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 1/2 cups sugar
1/4 cup vegetable oil
Scant 1 cup canned pumpkin puree, not flavored pie filling
2 large eggs
PREPARATION
1. Preheat the oven to 350°F. Butter a 9-inch loaf pan.
2. Whisk together the flour, salt, baking soda, baking powder, cinnamon, nutmeg, allspice, and cloves in a small bowl.
3. Beat the butter, sugar, and oil on high speed in the bowl of a stand mixer fitted with the paddle attachment, scraping down the sides and bottom of the bowl a few times, until light and fluffy, about 1 minute.
4. Add the pumpkin puree and mix until combined. Add the eggs, one at a time, and mix until just incorporated. Mixing on low speed, slowly add the flour mixture and 2/3 cup water and mix until just combined. Spread the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, 1 hour to 1 hour 15 minutes. Let cool in the pan on a wire rack for 10 minutes. Remove from the pan and let cool completely.

This recipe is from my mother-in law, we love it.
Ingredients:
5 Eggs
1 1/4 Cups Veg Oil
1-15oz Can of pumpkin
2 cups Flour
2 Cups Sugar
2 – 3 oz boxes of Vanilla cook and serve pudding
1- tsp baking soda
1- tsp Cinnamon
1/2 tsp salt
Pre-heat oven to 350 Degrees. Beat eggs, add oil and pumpkin and stir until smooth. Combine remaining ingredients. Pour into 5 mini (Bake 50-55 mins) or 2 regular bread pans (Bake 75-80 Mins).
Fall is my favorite season, I like the cooler temps but its still sunny and no snow. I love everything pumpkin, I love the leave changing.
My favorite holiday is Christmas.

It’s 9 weeks away and my stomach just kind of bobbed as I wrote that.
Christmas is my favorite holiday.

Autumn is my favorite season! For one, my birthday is October 25. Also I just love the weather and the amazing colors of the fall foliage here in the north east.
I’m kicking the season off with an amazing trip with my boyfriend at the end of Sept. We’re flying to Seattle, taking a train to Vancouver and then renting a car and driving through Canadian rockies stopping at Jasper and Banff National parks! I can’t wait.

We’ve been home in California for a week and have loved this Fall like weather. Back to Oahu tomorrow, so back to heat and humidity. But I’m running the Honolulu marathon in December, so I need that kind of training.
Favorite holiday = Thanksgiving. It’s big for both of our families so we alternate between California and Florida each year.
When we first moved to Oahu in 2013 I got lost several times. Thank goodness for my phone! I always run with it. We use the Find Friends app, so I know where my husband is cycling and he knows where I’m running.

My favorite recipe makes 3 full size loaves, (which I love, cause anytime I can only do the work once, and save some for later, I’m a fan). Also I really like detailed instructions, so here’s everything I do.
Ingredients:
3 1/2 cups all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups granulated sugar
1 (15 ounce) can 100% pure pumpkin
1 cup canola oil
2/3 cup water
1 teaspoon vanilla extract
4 large eggs
1 bag milk chocolate chips
Instructions:
1. Preheat oven to 350 degrees F. Spray three 9×5 inch loaf pans with cooking spray and set aside.
2. In a medium bowl whisk together the flour, cinnamon, nutmeg, baking soda, and salt. Set aside.
3. In a large bowl, combine sugar, pumpkin, canola oil, water, vanilla, and eggs. Mix until smooth.
4. Slowly blend in flour mixture. Fold in chocolate chips. I like to coat the chocolate chips with flour before I stir them into the batter, this helps them stay suspended in the batter, and helps avoid them all sinking to the bottom. Evenly divide batter between the three loaf pans.
5. Bake for 60 minutes, or until browned and a toothpick comes out clean. Remove loaves from oven and cool in pans on a wire rack for 15 minutes. With a knife, go around the bread and loosen the loaves. Remove from pan and cool completely before slicing.
*Note-this recipe makes a lot of bread, so be prepared to share or put a loaf in the freezer for later.

Best pumpkin bread recipe: I think there’s a Betty Crocker recipe that’s good. All pumpkin muffin/bread recipes I’ve seen ask for 3 or 4 cups of sugar. Totally unnecessary. Cut it back to 1.5-2 cups and you won’t even notice the difference, I promise.

I ran a trail 1/2 marathon a few years ago with a girlfriend. We were doing it for fun and the wine after so we were chatting heavily while running. All of a sudden we realized we hadn’t seen anyone for a while and we came to a trail end. We had to turn around and after running for a while we saw the pink flag we had missed. By the time we got to the finish line we had run 16 miles instead. Oops! The good news is we still weren’t last! :)

This is the pumpkin pie/bread recipe I’ve been using since 2011. It also teaches you how to make it with fresh pumpkin (I use the microwave option to save time). I also cut the sugar down to 1.5 cups (3 cups is WAY too much). I make a bunch of these breads and send them off to people as gift packages. I get lots of compliments on this bread.

I am very thankful for Thanksgiving because its the one holiday left that my family up north still gets together for. However, with that being true my personal FAVORITE holiday is EASTER! Grandma Edith’s Pumpkin Bread
dry ingredients –
1 3/4 c. flour
1 1/2 c. sugar
1 1/2 tsp cinnamon
1 1/2 tsp. nutmeg
1 tsp. baking soda
1 tsp. salt
liquid ingredients –
1 c. pumpkin (not pumpkin pie mix)
3/4 c plus 1 Tbsp of water
1/2 c. melted butter
2 eggs beaten
Mix dry ingredients in a large bowl. Next add pumpkin, water, and eggs into the dry mixture while mixing with mixer on low to med. speed. When ingredients are well blended fold in the melted butter. Pour into loaf pans just less than half full. Bake at 350 for about 35 minutes or until tooth pick comes out clean.

Here’s a wonderful (& semi-healthy) pumpkin bread recipe. I always double it & freeze one loaf:
• 1-1/2 cups of unbleached, all-purpose flour (I actually use half white wheat flour & half all purpose; I tried all wheat flour once but it was too dry)
• 1-1/4 tsp. baking soda
• 1 tsp. salt
• 1 tsp. cinnamon
• 1/2 tsp. nutmeg
• 1/2 tsp. cloves
• 1 cup canned pumpkin puree
• 1 cup firmly-packed brown sugar
• 1/2 cup low-fat or nonfat buttermilk
• 1 large egg
• 1 Tbsp. canola oil
Preheat oven to 350 degrees. Spray a loaf pan with nonstick cooking spray. Mix flour, baking soda, salt, cinnamon, nutmeg and cloves together in a small bowl.
In a large bowl, beat pumpkin puree, brown sugar, buttermilk, egg and oil together. Add dry ingredients to wet, stirring just until moistened (overmixing will cause the bread to become too tough).
Pour into the prepared loaf pan. Bake for 1 hour.
I just made it this past weekend & added a streusel on top – oh my gosh, so delicious! But I love streusel on most of my baked goods. :) I basically eyeballed the streusel & didn’t really follow a recipe, but it’s something similar to:
1/2 cup flour
1/4 cup brown sugar
1 teaspoon cinnamon
pinch of salt
2 tablespoons melted butter
Mix all ingredients together & crumble over the pumpkin bread before baking. I think I doubled the recipe & had a lot of streusel to put on the bread.

Wow–seems like everyone has a pumpkin bread recipe. I of course love mine the most, but I initially had it at the Hominy Grill in Charleston, and then emailed them and begged them for the recipe–it’s got some weird things in it but hands down it’s the best I’ve ever tasted. It all works.
4 c. flour
1/2 t. salt
2 t. soda
1/2 t. baking powder
1 1/3 T. ginger
1 t. nutmeg
2 t. cinnamon
1 t. cloves
1 t. mustard powder
1/2 lb. butter (2 sticks)
3 c. sugar
4 eggs
3/4 c. strong coffee
2 c. Pumpkin puree
1 c. pecan halves
Preheat oven to 350 F. Spray loaf pans with cookiung spray.
Sift together all dry ingredients (flour through mustard powder)
Cream butter, sugar & eggs
Add ½ dry ingredients to wet on low speed.
Add coffee and continue to mix.
Add remaining dry ingredients and pecan halves.
Gently add pumpkin puree, barely mixing.
Fill loaf pan ½ way and bake in preheated oven @ 350 F for 1 ¼ hours. You can also use small loaf pans, same temperature but 30 minute baking time. They make really good gifts. :)

Bake at 350 for 12-15 minutes or until toothpick comes out clean.
It is the most moist, delicious, amazing fall treat! AAAAND you can make them into mini muffins OR top the bread with cream cheese frosting!
P.S. Enjoy sweaters for me… it is 94 in Texas today with no sign of fall in sight :(
