Okay, since it is a Monday afternoon and my brain is all over the place let’s not even try to make this an organized post and I’ll just share a bunch of ‘important’ matters with you.

*I CAN’T WAIT TO RUN OUTSIDE AGAIN (mom, come home asap for many many reasons including an outdoor run please;).  I did 9 treadmill miles starting with an 8:00 mile and finishing with a 6:48 mile—> 7:28 average.  Not going to lie, I don’t feel like I am in very good racing shape (aka I haven’t been putting in the work to make improvements since my last 1/2 marathon) for this weekend but we shall see how it goes (cross every finger and toe for me please;).

*Andrew’s dog is quite the snuggler and I might get a little jealous at times.

-My goal is to almost break the chip because I put so much salsa on each chip.

*Otter-pop season.  When my brother was a teenager we used to give him boxes of otter-pops for his birthday.  And I think Brooke might want the same…

*I was FaceTiming my nephew the other day and he shared his very special sandwich ingredient with me—>  goldfish.  He says it adds the perfect crunch.

We had a vanilla and chocolate chip wedding cake – it was delicious :). I’m a ton of salsa on my chip, I love salsa – especially salsa with cream cheese – it will change your life.

My mom made a beautiful 3 tiered white cake for pictures and we ate chocolate sheet cake from a local Tex Mex place. It was awesomesauce!

I totally agree on the lots of salsa per chip!

I just ordered a new treadmill, yahoo!! It’s a Nordictrack 1750 Mine was shorting out on me so after 7 beautiful years together, it’s time to breakup.

I am currently working on setting a base level for a fall marathon.

Ours was carrot (no walnuts!!!) and chocolate with the yummiest frosting.

Because I also like plain tortilla chips, when I dip I really load the salsa on. No in between. Full on or nice and plain. Sometimes I follow up the fully covered tortilla chip with a bare one.

It was a bazillion degrees when I was able to squeeze in a run but glad to have done it! That’s a big monday matters for me-heat. blech.

Thank you for clarifying no walnuts… nuts do not belong in cake haha! Way to get in a run even in the crazy heat… you are amazing! I like your chip/salsa theory too:)

We had cupcakes instead of cake! I think we had about eight different flavors, including some alcoholic ones like pumpkin beer and strawberry margarita. They were a big hit!
I’m a medium amount of salsa per chip person-there has to be the right balance of salsa and chip.
My running has been progressing lately, which makes me really excited. I’ve set new 5k, 4 mile, 10k, and 10 mile PRs during the last couple months.

Our wedding cake was fake, except for the top layer… that way we could have the look of fondant, but not the taste! We had lemon with raspberry filling, spice with peach filling, and deep chocolate with coconut/pecan filling and chocolate ganche…. they were all so yummy!

I am a chip with a ton of salsa (or any dip) type of person!

I am trying to do the Runners World run streak, but my hamstring is killing me…. I’ve backed off to a realllllly slow 1 mile jog per day (it actually makes it feel better)…. hopefully I miraculously wake up tomorrow and am cured!

Oh my stars that cake looks amazing, I say go for it. We had red velvet cake that was dyed blue. Honestly, it was perfect.

It sounds like you are having a good day. I love top knots in the summer! It’s the only way to keep my hair in check.

Right now I’m just maintaining my running – nothing on the agenda race wise!

We had cupcakes – Vanilla, Chocolate, & Strawberry. We had a small wedding (30 guests) but ordered 50 cupcakes! We froze the leftovers and ate them for weeks. (OK, Fine… We ate them for days. Maybe two days.)
I hope I’m progressing with running! Still in get-back-in-shape-after-Baby-#2 mode and I’ve got a ways to go!

Definitely alot of salsa. Like so much that you should have a hard time getting it from the bowl to your mouth without dropping salsa. Mmmm…now I want chips and salsa!

I’m in a ‘run whenever I have some spare time or else it won’t happen’ mode right now. Life is crazy and I try to fit in anything whenever I can! Something is better than nothing, right?

Wedding cake – amaretto with raspberry filling (it was awesome) and mocha chip. Both were amazing!

My wedding cake was vanilla and chocolate swirl and just amazing! For the guests we had cupcakes: pumpkin, lavender honey, champagne, and chocolate. I made all the cupcakes even!
I’m in maintainence mode, since I’m recovering from a sprained foot. I start marathon training in August though and I’m already excited for it!

I’m a little bit of salsa on the chip, if any at all, type of person. I just love tortilla chips and could eat a whole bag in 1 sitting!
I have been working on speed right now. I just felt so unprepared for my last race and ran my slowest half, so it’s time to get back to where I used to be before my injury!

We had cupcakes at our wedding. We eloped so my parents threw us a big barbecue for family and friends to come and so cupcakes seemed to fit the casual atmosphere. We had 4 or 5 different flavors I think. I like tons of salsa but my husband would pour the whole bowl on his chip if he could. I’m in try to survive the Houston humidity mode right now which means I usually don’t run more than 5 miles in the summer because it’s so hot and humid.

We did three layers: bottom was dark chocolate with nutella filling; middle was vanilla cake with dulce de leche pudding, and top layer (the one we saved to eat on our first anniversary) was white cake with cannoli cream filling. Plus we did a full dessert service with chocolate fountains, fresh zeppoles, an ice cream bar, chocolate covered oreos, and a s’mores station (I don’t play when it comes to dessert).

Monday Matters: 12 miles feels a lot nice than 15 miles, why do 3 miles make THAT much of a difference, body, why?!

You’re coming to Oregon! How fun! We will be heading to Utah next month! Finished my second marathon last week (May 28), it was the hardest and most humbling experience ever! Did my first post marathon run today and didn’t die ? definitely a good thing!

We had a whole cake table at our wedding. We had a nice 3 tiered cake but we also had a bunch of smaller cakes. That way you can have all the flavors. It was fantastic.

I am just like you, as much salsa as possible. I could drink that stuff ha! My wedding cake was chocolate with white frosting and I think it had some pearls on it..maybe. Is it so terrible that I don’t remember and I have only been married almost 4 years haha?

We had French Vanilla and Red Velvet cupcakes for everyone, but our top tier cake was a french vanilla with raspberry filling. Our one year is this coming September, so i’m hoping it’s still good a year later! I just went to a wedding 2 weeks ago and they had a donut cake too! They had lots of different types of donuts as the tiers.

I used to just have little salsa on my chips and my older brother would yell at me for taking all the juice. But now, I go through salsa super quick bc I pile as much salsa as I possibly can! Chips and salsa are my favorite!

We had two flavors: spice cake with cream cheese frosting and an almond cake with raspberry filling/buttercream frosting. Looking forward to eating the spice cake topper on 7/18! The baker actually dropped our entire cake (one for pictures AND the sheet cakes) so we didn’t get those original flavors hah!

Love your hair, that’s an incredible cake, and it so depends on the salsa! I don’t like big chunks so I dip, if it’s a good consistency I scoop!
Also I’ve been in a running rut! My body is so stiff from my last race and I think I need a year of yoga before I run again…..

We couldn’t decide so we picked 2 flavors. We had a small cake on each table with rose petals as the centerpiece and a small larger cake for our cake cutting. Saved a lot on flower centerpieces and everyone loved it!

A few minutes at the pool every day would make me happy, too.

Our cake was vanilla with chocolate but the bakery made a special layer for my husband and I. Ours was all chocolate. :)

Must scoop up as much salsa as humanly possible. I love salsa so much sometimes I use it in place of salad dressing.

Where did you get those black running shorts from? I have been having issues with chafing lately and am on the hunt for some new shorts. I normally run in the speed shorts from lulu and also picked up the portman shorts from oiselle and have issues with them both unfortunately.

We had FIVE types of cake! We had a small three-tiered cake that was decorated for pictures and cutting, then we had several sheet cakes for the guests in white, chocolate, lemon, strawberry, and orange. Something for everyone!

I prefer a smaller amount of salsa on my chips, but if it’s queso, there’s no such thing as too much.

My wedding cake was a traditional 3-tiered red velvet cake with buttercream frosting and edible roses in white & purple (my flowers were white roses with purple accents). It was delicious AND beautiful! To be honest, we really wanted a cheesecake wedding cake, but keeping it cold was an issue, so we opted for my second favorite – red velvet!

I am definitely a lot of salsa per chip person. The chunkier the salsa, the better!

I am currently in maintenance mode for running (PRed in a half about a month ago). So now I’m working on keeping up the speed while decreasing the mileage and upping the strength training a bit. :)

We had three tiers – gin and lemon on the bottom, chocolate in the middle and banana on top. It was sooo good that there weren’t any leftovers haha. Wedding planning is so much fun – enjoy!

We had three tiers- vanilla, chocolate and strawberry and a groom’s cake that was a cannoli cake because my husband is Italian! Everyone loved the groom’s cake as it went first. The tier cake was beautiful though and had pearl lining and down the 3 tiers were the words- And they lived happily ever after. I love hearing wedding ideas and I think they all need personal styles- even the cake!

We had chocolate amaretto mousse in between vanilla cake layers and raspberry filling in another layer. The pastry chef made it work. It was spectacular. Your nephew is right about the goldfish. My 18 year old does bbq chips on his sandwich and I stole a bite and it works. I could taste the appeal though I wouldn’t want it all the time. Medium amounts of salsa. And trying to increase mileage and be more consistent on the weights. Good luck with the half this weekend!!

My wedding cake was the only thing about my wedding that wasn’t DIY and was a chocolate/vanilla combination with a buttercream & fondant frosting. But my truck broke down with all the wedding stuff in it on the way to the campground. The cake was one of the last items picked up and it slid back in the box and was a mess. My wonderful friends fixed it well enough you couldn’t tell in the pics. LOL

If the salsa is good, I like a lot of it. Otherwise, I will just dip for a coating.

My big goal is to BQ, but that has been put of until next year. Right now I’m working on long, slow distance on trails for a wicked 50K in Sept. Also, my husband is new to running so I have been running with him. That means more walk breaks than I typically take and overall slower times. It’s worth it to see him progress…. it hasn’t been that long since I was there too.

I agree with you, the chip must almost break. I adore salsa, especially if it has corn in it- oh and lots of cilantro!

Our wedding cake was simple (vanilla two layer cake with buttercream frosting), but delicious. I made it, so that’s why it was simple ;)

As running goes, I am in “preparing body for getting baby out as easy as possible,” mode. If that’s a real thing. So, really, it has been more maintanence mode, but I am thankful for the ability to run while pregnant!

Definitely a scooper of salsa. Speaking of salsa – you need to try the Matteo’s salsa from Costco. We buy it two jars at a time because it is THAT good! It has a yellow label. :)

Running has regressed because I have a hip issue that will eventually need surgery (torn labrum and femoral acetabular impingement which means I need the ball socket on the head of my femur shaved down). :(

I am getting married 8/6/2016 and we went with the cupcake option. That way we have a ton of different flavor combinations; Chocolate on Chocolate, Chocolate cake with vanilla frosting, Red velvet with cream cheese frosting, Vanilla cake with Oreo frosting, Vanilla on Vanilla, Carrot cake, and Vanilla cake with a raspberry and lemon frosting.

I am most excited for the cupcakes!

We had a lemon cake with Nutella filling, with a vanilla buttercream frosting. It was just the right amount of lemon and hazelnut without being, “OMG TOO MUCH NUTELLA”. Buttercream frosting is much better than fondant, and it can look just as nice as the smooth fondant look!

I did a cupcake tower with mini and regular cupcakes in multiple flavors! I did a small round cake as the “top” so that we could still keep up tradition :) The guests loved that they could try different flavors without feeling wasteful or gluttonous!

I have only done cake tasting for my wedding so far, but I’m SUPER excited about our wedding cakes. Mine is going to be amaretto cake with buttercream frosting and raspberry filling, and his is going to be marble cake with chocolate buttercream frosting. Ever since the tasting, I CRAVE these cakes – they were SO moist!

We got married in the Fall and my husband’s family is from apple country so we had apple pie. My mother in law and friends even made all the pies for 150 people. I might be the luckiest bride ever!

Love the donut cake! My fiancee and I just finished doing the design for our wedding cake: It’s 3 tiers with a purple ribbon and a thin band of crystals on each tier. We were able to pick out 2 flavors so it will be alternating tiers of salted caramel and cannoli cake!

Our wedding cake was the first thing I booked when we got engaged. Priorities, right? I knew I wanted a tier of cupcakes with a little cutting cake on top. We each picked our favorite cupcake from a local baker. I got cinnamon cake with caramel icing and he chose chocolate cake with whipped cream icing. And we got enough for each guest to have one of each because that’s what I would want as a guest!

My husband and I love chips and salsa and we both eat a lot of salsa per chip! For me, the chunkier the better but for him, he likes to get restaurant style every once in a while.
