Delicious red pepper tacos, tomato face and sentence per picture!

We had a delicious and EASY dinner last night!

I browned some ground turkey (with a ton of taco seasoning… that stuff is money).  I cut a red pepper in half and then placed quinoa (leftover from earlier in the week but you could use rice and/or beans too) and then the ground turkey inside of the red pepper.  I baked them on a cookie sheet at 425 degrees for 12 minutes (I like my peppers to still have some crunch but if you like them softer then bake them for longer).  I topped them with cheddar cheese and put them in the oven for another minute and then topped it with avocado slices.

Veggies, fats, carbs, protein, happiness.

I scored the nice stair climber at my gym which meant that I got in a killer workout today with a right foot that is feeling a million times better than last week.

Brooke is all about the yoga these days or maybe she is hinting to me that I need to do more yoga myself.

FMW = the best! Love them! I’ve never tried the flavored ones. I like the originals, what can I say!?

I think I got too much sleep last night because I’m extra sleepy today! How does that happen?!

My kids like trying yoga when they see me do it! I love that list – melting my heart – and I need to say more things like that to my kids on a daily basis :)

I love making those bell peppers although I call them “unstuffed bell peppers!”

I have a sister who is 18 months older than me and we’ve always been incredibly close and I live with her and her husband right now so maybe we’re a little too close :)

My sister and I got along pretty well growing up, and are now closer than ever. The red pepper taco idea is a good one! I’ve never thought of that.

There is the best greek shop near me that make the BEST stuffed peppers. They add delicious herbs and spices to the rice – so good!

Me and my sister weren’t like best buddies. We fought heaps but at the end of the day we have a strong bond and can always count each other when needed. She lives interstate so we don’t catch up often but we can always pick up where we left on. And I’m actually doing my first marathon in her state so she will be there to cheer me on!

I have one older sister and Todd has FOUR older sisters and no brothers. When I got him, he already basically understood everything about women. He was perfect!

Our sentence for the day is “It is RAINING, RAINING, RAINING and we are being vacation vegetables.”

I have an older sister; she detested me growing up, and I adored her. When we got to high school, the tide started shifting and we ended up living together in college. That article had me giggling and wishing I was hanging with her tonight. :)

I love stuffed bell peppers – so many great ways to fix them! I’ve done Philly cheese steak, Italian, and even chicken Alfredo. Now I need to try your taco version.

Definitely had a love/hate relationship with my sister growing up. She is 5 years older and loved telling on me. I may have used my hideous black rubber rat in her bed as revenge a few too many times. (I have no idea why I had that thing – I’m sure it would creep me if I saw it today!)

Hey girl, love reading your blog! I have question for you. What is your favorite running watch? I used to have a garmin 110 and then starting just using map my run because I wasn’t running as much or doing as many races! But I am thinking about ramping it up again and starting marathon training. I would love something that tracks my heart rate also without having to wear a chest strap (been there done that lol). Also something I could use in the gym for lifting, cycling, HIIT, etc. Any help would be great? Thanks!

Oh AMY!! Yay for marathon training starting soon and I hear ya on not wanting a heart rate chest strap! I AM LOVING my Forerunner 225! Love it. Here is my full review:

Aww I love that picture of the things to say to children! How sweet and perfect sentences! My sentence for the day was.. I got in my run just because I really needed to shower ;) Baby spit up in my hair and legs that needed shaved were all the motivation I needed. It ended up being a great run, though!

What a sweet care package! I have a younger sister and we totally didn’t get along growing up but we’re closer now. Only children don’t get the struggle of having a sibling lol

Reply

My younger sister and I would “fight” over ridiculous things about 20 times a day growing up… but we were the very best of friends! :D

Reply

I love the list of positive things to say to your child! It’s so awesome! Stair climbers kill me, way to go! I found a recipe similar to your red pepper tacos and I am so excited to make them for my hubby because they are actually on his diet. :)

No sports yet for my 3 year old (we tried gymnastics, but I felt like I was paying a lot of money for her to play instead of learn). But we have been killin’ it this winter with the following activities: making slime, and balloon paddle ball (paper plates with posicle sticks taped to them and a balloon). All. Day. Long.

Ummmm how weird that I read about your injury and a few days later I’m playing football (soccer) and I get my very own turf toe? So I’m happy to hear yours is feeling much better. I’m on day two and I’m definitely walking funny and not able to run. Ouchie. Hope yours is in tip top shape real soon! Thanks for helping me get a good perspective on it x

As an older sister I can 100% relate to that buzzfeed list! So hysterical.

And I am glad to see I’m not the only one getting the 30th birthday year started early. What an amazing birthday box! Frosted Mini Wheats are my all time favorite cereal – and I tried the Target brand for a while, it simply can’t live up to the original.

Have a wonderful night!

My son is in gymnastics too. It’s the best thing ever!

FMW are the best! I haven’t had cereal in a long time for some reason though.

I have been loving yoga lately, which is totally weird for me. I’m addicted to the Yoga with Adriene channel on YouTube.

Ha-funny sister stuff! I am the oldest of 8 kids- I have 3 brothers and 4 sisters……crazy but fun!

I have one sister (and one brother); we are almost ten years apart. Growing up dad was in the military and travelled a lot, so I took care of my siblings quite a bit and was like a second mom to my baby sister. Actually still to this day she is more afraid to tell me things than our mom because she knows I’m much tougher.

She’s 19 now and in the Navy and I could not be more proud of her. I think I raised a good kid! :)

No sisters but i got an awesome brother – about 5 yrs older than me. He has been a great friend since we grew up and stopped fighting :P
Big day at work today so sentence of the day “keep calm and do work” it is!!!
I ve never tried those cereals – not a big fun – I prefer cereal in solid form like energy bars.

We make similar stuffed peppers, but with white beans, allll the time! They’re my fav because they reheat really well for lunch!!
I do yoga at home a lot and my baby likes to crawl under my plank pose…I think she’s challenging me!

FMW – I loooooove the blueberry ones! I actually keep a box in my desk and when I have a sweet/crunchy craving, they make a perfect snack!

Reply

Sisters are the best. We did not get along until I moved out though ;) That is what happens when you are super close in age and sandwiched between two. I am hoping that Felicity and Annabelle have a relationship like you and your sister growing up.

We have blueberry FMW in the pantry right now. Surprisingly, Ross bought them. Even more surprising is that he doesn’t add even more sugar to them when he eats them.

I totally saved the image with the list of things to say to your kids. Loved it.

Also, can we talk about how your were on the stepmill for 61 minutes? Sixty freaking one minutes. Girrrrrrl, you are my stepmill hero.

The texture of mini-wheats is a little bit hard for me, though i have tried a few of the flavors.

Reply

I Love Frosted Mini-wheats! Unfortunately, I can’t have them in the house – too addicting. I find myself eating them right out of the box!

I have 3 sisters and I immediately sent that list to them. We are spread out across the country so this summer we are having a sister’s get together at Cape Cod!

I have a younger sister – 3 year difference. We fought a lot as kids but were usually a united front against the parents. She actually sent me that Buzzfeed article earlier this week!
