Non Lettuce Salad Recipe, Krispy Kreme and Independent.

Another successful day at the zoo.  I am pretty sure we are going to get way more use out of the rides than we are with the rest of the zoo.

DSC 3438

I was really nervous that Brooke wouldn’t like this car ride and that she would cry for me to come to her rescue.  Nope.  She absolutely loved it and thought she was so independent just cruising around in her red car and making her bell ring.

DSC 3461

I think Brooke was jealous that her hair doesn’t get the same volume as Luna’s hair.

DSC 3474

Towards the end of our zoo day my good friend that is 36 weeks pregnant was telling me that her biggest craving has been donuts.  I kindly and selflessly offered to go with her to fulfill her needs.  PS we went to a loser Krispy Kreme that DOESN’T give out free donuts when the sign is on…. every other Krispy Kreme in the world does but this one was an ‘outlet’ so it didn’t.  Heart broken.

DSC 3475

The glazed one is for Billy…. I don’t waste my time with anything non sprinklified or that isn’t dense chocolate.

DSC 3482

All day long I had been coming up with a non lettuce salad in my head that I wanted for dinner and Billy said at least 5 times while he was eating it that it was SOOO good.  You have to try it, it is crazy simple:

1 baked sweet potato

1-2 cups fresh edamame

2 ears of fresh corn cooked

2 cooked and cubed chicken breasts

1 can black beans

Mix it all up with some salt and pepper and as much Italian dressing as you like!  (I also refrigerated it for a little while so it was chilled)

DSC 3491

We couldn’t just have that salad for dinner so I made THESE breadsticks too.  Stomach officially satisfied.

DSC 3488

And then Billy went back to school, Brooke fell asleep eventually and I read in bed for a few hours… now it is time to run!

That salad looks so good!

LOVE Krispy Kreme donuts… My fave is the chocolate glazed. The traditional glazed ones are pretty amazing when they’re fresh out of then oven too.

Reply

I’m not a Krispy Kreme fan. Being Canadian, I am genetically obligated to be loyal to Tim Hortons. And besides, sometimes life isn’t complete without a TimBit!

Reply

I’m with you on the Timmy’s! Oh to be Canadian ;)

Reply

Oh my gosh those donuts look yummy. It was so nice of you to go with your friend ;) I haven’t had a donut in so long. The last delicious carb I had was pizza, about 8 days ago. Brooke looks so adorable riding that car.

Reply

Although I am totally with you on the whole every dessert needs chocolate thing, I’m a huge lover of plain glazed Krispy Kreme’s! Too bad they left Canada (for the most part).

Reply

I wish we had rides at my zoo! Last night.. salmon beets and kale… every night? fish, beets and kale. I. Am. Boring.

Reply

Last night I made spaghetti and meatballs! I love the donuts filled with chocolate cream. Last delicious carb I had was cookie dough cheesecake from the Cheesecake Factory

Reply

When we lived in Mississippi, we used to go to Krispy Kreme after church and get donuts. We’d sit out on the levy and munch away. It was one of my favorite times!

Last night we had leftover Indian food from Sitara which would make the best recent carb naan.

Reply

I went thru a lettuce less salad phase for a long time and still barely use any lettuce. I just pile a ton of veggies into a bowl and dig in. Last night for dinner we had tikka masala and it was soooooo good!

Reply

I am not a donut girl… never have been. Probably because they’re always around for breakfast and if I eat anything sweet in the morning my belly hurts all day so I’ve always stayed away.
It’s a shame too because I live in the land of Krispy Kreme- NC

Reply

Lol- oh i agree i wont waste my time on the glazed donuts either. i need a layer of chocolate and/or sprinkles on there. those breadsticks look delicious! i had a really good pasta dish over the weekend- it was king crab lemon ravioli – sooo good :)

Reply

Last night I had a lettuce less salad as well. It was made with qunioa. Which is also my favorite carb right now. My husband thinks we eat it too much.
I can’t have Krispy Kreme but when i was in Chicago last summer I found this tiny hole in the wall donut shop which made gluten free donuts. They were amazing. I’m not really sure what it was made of or the flavor. I just know it was amazing and have been searching for a gf donut since then. Since I will be moved into Arizona in 20 days I am sure to find a gf donut place which will be satisfying.

Reply

I love black eyed peas in salads like that! I am not a huge glazed donut fan so krispy kream isn’t my thing. Growing up we had Wegman’s every where and they had the best cinnamon twist donuts AND peanut butter and jelly donuts, DROOL.

Reply

I might have to stop at Wegman’s on the way home…

Reply

Wegman’s obsessed!!!

Reply

I’ve never understood the appeal of glazed donuts either… my favorite have always been the chocolate ones or honey crullers. And since I’m Canadian, I’m going to have to go with Tim Hortons over Krispie Kreme… Last delicious carb I had? A huge bowl of cereal… it was just a cereal kind of morning.

Reply

I made BBQ chicken, grilled zucchini, and the most incredible flat-bread caprese pizza! I think it’s safe to say that the pizza was the best card I had last.

I haven’t had a Krispy Kreme in years! But when I last had one I think I preferred the plain glazed. They seriously just melt in your mouth!

Reply

We had Subway for dinner last night….I didn’t get home from work until 7 and I did not feel like cooking.

I will eat any donut that is given to me, but I prefer Dunkin Donuts over Krispey Kreme. Do you have Dunkin Donuts on the west coast?

Maybe add some kale or spinach?

Reply

Add avacado- that makes everything delicious! I just at two carb filled banana muffins :)

Reply

If you like poppyseed dressing try adding it to some rotini pasta, chicken, a little bit of celery, and a bunch of dried cherries! So delicious!

Reply

I would never have thought of adding sweet potatoes to a salad like that! Sounds yum.

Krispy Kreme has a pumpkin spice cake donut in the fall that is sooo tasty. I’m always mad at them when they stop making it at the end of the season.

Also. Reading in bed is just the best.

Reply

I heard Krispy Kreme was doing free donuts on Friday for national donut day, but I heard nothing about the light being on meaning there was free donuts!
Mac-n-cheese for dinner last night. I love my carbs.

Reply

Brooke looks so cute that car!! Your salad looks amazing and I am going to try it this weekend for a meal! Dinner last night was Chipotle! This will put me to shame, but I am not a donut fan at all! I know I am weird! The last carb that was amazing would have to be the corn flakes and almond milk I had for a snack.

Reply

Yum! I’ve had a similar lettuceless salad but never edamame. I’ll definitely be making this one!

Reply

I had a 2 bowl dinner last night: An enormous bowl of salad, and a bowl of mashed potatoes. Followed up with a jambu fruit.

But I made some cornbread the other night that was a pretty delicious carb. Either that, or a really gooey brownie. Mmmm… :)

Has anyone suggested avocado? It looks like an avocado might fit in there quite nicely! :)

Reply

You just saved my 2 lone sweet potatoes! I have been trying to use hem in recipes that my husband will eat—and he will eat a lettuce less salad! Thx! I’m personally jealous of Luna’s volume. ;-)

Reply

Krispy Kreme outlet? Are the donut cheaper?!
They close down all the Krispy Kremes near me. Sad, sad, sad.

Reply

How do you have a donut outlet? That just makes me nervous.

That salad sounds delicious! COBE put your leftovers in my fridge? ;)

Last good carb= the cereal going into my mouth right now

Reply

Definitely going to try that salad!

Reply

That salad looks so good! The only thing I can think of to add to make it even better would be maybe pickles :)

Reply

That salad looks so good!

The last delicious carb I had was the past with mushrooms and artichokes that I had for dinner last night.

Maybe try adding pineapple to a lettuceless salad? I’m an advocate that pineapple can be added to everything and taste delicious if done right.

Reply

That salad looks so good, I need to try that for sure. And how cute was Brooke in her car?? I can’t believe she’s not even one yet! lol

The last delicious carb I had was butternut squash ravioli, so good. I used low-fat alfredo sauce for it and mixed cinnamon and curry powder in the sauce before tossing the ravioli in it. so.good.

Oh my goodness, I love Krispy Kreme so much! A hot original glazed is the best way to go, in my opinion! Here in Raleigh, NC every Feb they have a race called the Krispy Kreme Challenge. From the start line, you run 2.5 miles to the KK store, eat 1 dozen donuts, then run 2.5 miles back…. in under 1 hour! This year I finished with 12 minutes to spare! :) It’s a fantastic race! My two loves, donuts and running combined!! Also, I wanted to let you know tha tomorrow is “National Donut Day” and Krispy Kreme will be giving out a free donut to every customer (at least in NC they are). Free donut=happiness!

Your salad looks delicious I will have to make that soon! Thanks for sharing!

Reply

I used to live is Greensboro and they don’t make you eat the donuts in that race anymore. You can just take them with you. Too many people were throwing up. Personally, I think you should have to eat them AND keep them down to be a “finisher”.

The Kidless Kronicles

Reply

You’re right! Lots of runners wear backpacks to carry their donuts back from the store because they don’t want to eat them. They offer 2 divisions when you register now, “Challenger” (for those actually planning to eat the donuts) and “Participant”. Upon leaving the store you have to show your empty box of donuts to a race volunteer before you are allowed to cross over the timing mat, which records your split time. It’s the only way to get an “official” finishing time. And I agree with you about eating all the donuts! :)

Reply

The K2 Challenge is the entire reason I started running! I like to tell people I took up running and competetive eating at the same time. I even did the race this year at 12 weeks pregnant… I just ate fewer doughnuts per my doctors reccommendation.

Reply

I know I’m probably going to get kicked off the comments for this, but I’m not a Krispy Kreme fan. I loved donuts, but Krispy Kreme’s have a strange taste.

Reply

Brooke looks like she’s having a ball in that car ride.

Last night we had fish and chips for dinner.

Reply

I’ve never been muchof a donut fan… in fact, my coworkers brought in a bunch of free donuts yesterday and I avoided them. Hope we can still be friends. :-) When I do cave in for a Krispy Kreme, I agree – it must have chocolate, sprinkles… SOMETHING. Lol. I don’t waste my time with the plain glazed either. ;-)

Last night, the hubby had to work late so I bought a pre-cooked rotissserie chicken from the grocery store, and sauteed a bunch of yummy veggies to go along with it! Simple, easy and delicious!

Reply

we had wraps for dinner! mine had an egg and hummus and salami and sprouts… really random but really quick and a really good way to clean out the fridge.

Reply

Oh, and the last “delicious” carb I had… probably the Kashi Maragarita pizza I had on Sunday night, and some for the lunch the next morning! Good stuff!

Reply

I made watermelon salad recently and LOVE it. The recipe is actually watermelon, mint, and feta cheese. I didn’t have mint and used basil based on comments in the reviews. It was amazing. I will definitely try mint, too, because the reviews were all positive.

Reply

Last night for dinner I had a baked potato and a stuffed portobello mushroom cap :D

I actually despise Krispy Kreme donuts, but I think that’s because I got sick off of the glazed donuts and I refuse to go anywhere near them.

Lettuceless salads are endless! I really like cucumbers, tomatoes, and white onions mixed with vinegar, salt, pepper, and sugar, to taste. My mom makes it as a summer salad and it is amazing!

Reply

I’m pretty sure I’ve only ever had a Krispy Kreme a few times in my life…they don’t have them up here in Canada! So the only one’s I ever remember having were plain glazed but they had some sort of creme filling. I remember liking it, but I’m sure I would have preferred something with sprinkles ;-)

Last night’s dinner was tuna melts with shredded goat cheddar and some carrot sticks on the side. Simple and awesome :-D

Reply

Last night was leftover pizza.

I went to college in the headquarters town of Krispy Kreme and I can honestly say I hate them. I grew up a Dunkin Donuts girl. It’s like Pepsi v Coke, McD’s vs BK, Nike or not. You can’t be both.

The Kidless Kronicles

Reply

I haven’t had a Krispy Kreme for years! I do remember my last one….in Orlando Florida, on a late night with the rest of my family when they were right hotly made. So melt in your mouth perfect! :)

Dinner at our household last night was Hot dogs and fixin’s (chips, Pasta salad, etc…)

Reply

Frozen yogurt from Cherry Berry was dinner last night! It was the perfect way to celebrate National Running Day, of course :)

Reply

I made fettucini and a strawberry bacon salad, so yummy:)

Reply

Krispy Kreme is the best but i have never heard of free donuts when the sign is on. Here (NC) it just means that they are fresh and hot!

Reply

I made french toast for dinner last night. I like to make it (& waffles & pancakes) in bulk to freeze for quick breakfasts.

I love Krispy Kremes! It was one of the places I really missed when I lived in OR. My favorites there are the glazed blueberry, glazed chocolate and maple glazed.

What was the last delicious carb that you had? Greek pasta for brunch today!

Any ideas of something delicious to add to my luttuceless salad for next time? Avocado!!

Reply

I’m not a big donut fan, sadly. But I’m glad you could keep her company!

Mmmmm breadsticks. YUMM

Reply

Last night’s dinner was kind of lame- the boy and I did a 22 mile bike ride and came home famished. We inhaled a frozen pizza (Trader Joe’s Roasted Vegetable cheeseless pizza- seriously so good, you don’t even miss the cheese!) and a veggie burger salad each (also TJs, the Masala veggie burgers, amazing, over a bed of mixed greens). Delicious but not too impressive.

The pizza was the last delicious carb I enjoyed.

I feel like I’ll ruin any chance of a blog-friendship with you by admitting this but I don’t really love donuts and I have only had Krispy Kreme once. I’m sorry!

For lettuceless salads I love to add chickpeas, cucumbers, feta cheese, and so many more things!

Reply

Remember when Krispy Kreme gave you a free donut for every A on your report card? Well that meant that our family got like 3 dozen donuts for free and my mom would feel bad, so she’d actually buy another dozen, so we had lots of donuts at our house haha!
Last delicious carb was a Texas Roadhouse roll. Yum!!

Reply

I love non-lettuce salads! I make them with quinoa all of the time. Thanks for the doughnut craving, as always. ;)

The whole ‘no free glazed donuts’ when the sign is on is officially the most messed up thing I can think of. It is a toss up between the old fashioned glazed donut (or sour cream or whatever they are called) and the custard filled chocolate covered donut. Aaaannd now I want a donut. Badly.

I made spicy Thai lettuce wraps for dinner. Mmmm.

I ate one of those uncooked (but cooked of course) tortilla’s filled with scrambled eggs, avocado and salsa for breakfast this morning. It was good. And those tortillas are FANTASTIC carbs ;)

That picture of Brooke riding in the car and ringing the bell is so stinkin cute. And I don’t think Luna has anything on Brooke’s fabulous hair ;) Have a great run today!

Reply

I love salads without lettuce! Some of my favorites:

Hard boiled eggs, avocado chunks, tomatoes, crispy bacon, dressed with lemon juice (need it to keep the avocado from going brown), salt, and pepper.

Antipasto salad – this can be almost any recipe. My less traditional version is roasted red peppers, marinated artichoke hearts (both of those are cheap at trader joes), tender crisp cooked bag of broccoli and cauliflower, tomatoes, cucumbers, cubes of cheese ( eg provolone), cubes of deli meat ( I just use ham or turkey but italian meats would be more traditional), and strips of pepperoni. Add Italian dressing or even just red wine vinegar, olive oil, salt, and pepper. Can also add leftover cooked pasta.

Caprese salad – tomatoes, fresh mozzarella, fresh basil, drilled with balsamic vinegar reduction (just boil or microwave balsamic vinegar with sugar until it thickens) and pesto

Greek salad – tomatoes, cucumbers, red peppers, thin red onions, marinated artichoke hearts, pepperoncinis, olives, feta cheese, with dressing of red wine vinegar, Dijon mustard, olive oil, salt, pepper, dried oregano. Not traditional, but garbanzo beans are good in this and make it hearty.

Buffalo chicken salad – leftover chicken (roasted, fried, anything works) tossed in hot sauce, chopped carrots and celery, blue cheese crumbles, mixed with ranch or blue cheese dressing.

Reply

I have also had this idea for a while to make a salad using ingredients you would typically find in sushi… Like salmon, or tuna, or crab as the protein with avocado, cucumber, maybe green onions or carrots….perhaps a little pickled ginger flakes…some sort of Asian style dressing.

Reply

That salad looks amazing! I think I just may make it tonight or tomorrow! I have all the ingredients except the sweet potato and edamame.

Reply

The plain, glazed Krispy Kremes are the best when they are hot. They just melt in your mouth. You don’t even realize you’re eating them, and all of the sudden you’re like, whoa, where did those four donuts go…

That salad looks amazing!

Reply

Just curious How do you cook your sweet potatoes for this salad?

Reply

Hey!!! I just baked it at 400 for around thirty minutes (I don’t remember the time exactly but I baked it until it was soft) and then cut it into cubes!

Reply

Krispy Kreme is seriously da bomb. DD holds nothing on KK.

Reply

That salad looks really good!
Last night for dinner, we were in a hurry between errands and meeting up with some friends, so we just had green smoothies and a wrap with melted almond butter, honey, and cinnamon. It worked!

Reply

I like to make salads with quinoa as the base! I make one that has red quinoa, avocado, cilantro, red bell pepper, green onion, fresh corn, black beans, and lime juice. Yum!

Reply

I love grilled portabella mushrooms and asparagus, so maybe you could add them along with the grilled corn! Or avocado!

I don’t really like donuts (I know, I know) and I definitely don’t like Krispy Kreme lol!

MACARONI AND CHEESE is carb heaven in my mouth. Yum!

Reply

Last night my mom brought home Boston Market

I’ve never had a Krispy Kreme; I’m very sorry

Oatmeal with cinnamon, raisins, maple syrup, and peanut butter

Cucumbers!

Reply

I had left over Shrimp Pad Thai for dinner which was tasty and quick which is pretty much my favorite kind of dinner.

I’m not really a fan of krispy kreme although my old roomate made krispy kreme bread pudding once that was pretty much the most amazing sugar bomb ever

Reply

I made roasted chicken ravioli with a creamy avocado sauce. Easy peasy and any excuse to eat an entire avocado is good with me!

I haven’t had a Krispy Kreme in a loooooooonnnnggg time! I am a major donut lover though. I have heard a rumor of national donut day being very soon and I will most definitely be taking part!

Reply

If you like beets, those might go well in your salad! It’ll turn those whole thing magenta though.
Glad the kiddos enjoyed the zoo so much!

Reply

Janae! Today is National Donut Day! You need to celebrate National Running Day yesterday by eating a free Donut today!! Krispy Kreme should be giving out free donuts today!

I’ll be eating my donut today!

Reply

Last night I made Brussel Sprouts & Bacon Pasta – it was actually very good! And I loooove Krispy Kremes, but have only had them a few times in my life. There aren’t any near where I live! The plain ole glazed donut was my favorite :) The most delicious carb I had this week was a white choco chip and raspberry scone. SO GOOD!

Your lettuce-less salad looks DELICIOUS! Maybe you could add some avocado?

Reply

i had shrimp, quinoa, and veggies for dinner last night. i’m definitely going to try that salad – i love chicken, sweet potatoes, and edamame, so it’s the perfect combination! i would probably add tomatoes and hummus or avocado :)

Reply

Seriously, where does Luna get her hair done? He he. Crispy Creme- I can’t talk about it. HUGS! And PS- we really want to come hang with you guys. You are always doing such fun stuff!

Reply

The zoo looks awesome…almost as awesome as those donuts! But you are one day early, tomorrow is NATIONAL DONUT DAY! If I remember right, you missed national donut day last year?! My dad and I already planned the bakery trip for the morning…I have to get my Maple Donut!!

Reply

yummy salad!!

Delicious carb? I had huge A BERRIES in my oatmeal this morning. YUM.
Donut would of been a better choice ;)

Reply

Yay it’s working again!

Here’s the amazing no lettuce salad (taken from my boyfriends aunt):
Cut up mango, avocado, onion, cilantro, red pepper and throw together with corn and black beans. Then you top it with a little olive oil, some like juice and salt and pepper. Usually I love my salad dressing but this salad is so perfect the way it is! We usually make a huge batch and eat it for a week.

Last delicious carb I had was a raspberry shortbread cookie… Mmm!

Reply

I’ve been craving a sweet baked good for days and I finally craved this morning. Chocolate glazed donut with SPRINKLES.

Tomorrow is NATIONAL DONUT DAY & Krispy Kreme is giving away donuts for FREE. http://nationaldoughnutday2013.com/

Reply

Ahhhhhhh I love you so much!!! I will be going tomorrow now thanks to you!

Reply

We had leftovers for dinner last night – soup and chips and strawberries. Simple, but it got the job done. My favorite doughnuts are this local place by my parent’s Lake place – best sprinkled, frosted doughnut ever! Probably related to why I gain like 5 pounds every summer. .. but totally worth it!

Reply

That salad looks awesome!!

Reply

What a fun day! The doughnuts look great obviously but that salad looks awesome too!

Reply

Holy yum lady!! That salad!!! Want! I rarely eat donuts but when I do, I would devour right-off-the-hot-belt krispy kremes in a heartbeat. Looks so good!

Reply

I have to admit that I am not a donut fan and have never tried a Krispy Kreme! I actually realized that I might be a negligent parent when I went to my daughter’s preschool “Mommy & Me” breakfast, and my daughter picked up a donut hole and asked in a loud voice what the round thingy was. We do eat our share of delicious carbs, though, the most recent being a very gooey, glazed cinnamon role that was fresh from our local farmers’ market and big enough to share with my family of 4.

I sometimes make a lettuce-less salad with garbanzo beans, black beans, diced tomato, cucumber, black olives, a little Greek dressing and feta…chicken would probably be a good, too!

Reply

YUM! I love that salad idea. I made tacos for dinner last night, and a cinnamon chip muffin for dessert which was the last delicious carb I had. OF COURSEEEE I love krispy kreme- my favorite is the chocolate sprinkle one. The best.

Reply

I love Krispy Kreme and didn’t know about the hot now free donut!!!! How did I miss out on this when I went to HS in the same town as the original Krispy Kreme!

That salad sounds AMAZING. Even better than the lettuce based salad I had for dinner last night. Must try!

Reply

Mmmm, that salad sounds delicious! And sometimes I just get tired of chewing lettuce. Is that weird?

Reply

Dinner last night was TJ’s lemon pepper papperdelle (which I highly recommend) with roasted broccoli and tomatoes.

I’m not a big donut person, but if I’m going to have one it NEEDS to be a KK. I prefer the plain glazed and the chocolate one in the picture (chocolate cake??), blueberry is good too. Have you heard of the Krispy Kreme Challenge? http://www.krispykremechallenge.com/

Last delicious carb was pasta last night.

Reply

What if you added sweet red peppers to your salad? Yum! We used to sell Krispy Kreme donuts in high school for fund raising, but I’ve never been to their store!

Reply

I made that salad for lunch but added avocado and red onion. Mmmm. Post more lettuceless salads!!!

Reply

What did you make for dinner last night?
My boyfriend made us spaghetti :)

Do you like Krispy Kremes? Favorite kind?
I’ve only ever had glazed. If I get donuts, I prefer a local business called Krumpe’s Donuts.

What was the last delicious carb that you had?
Bread! And I love anything that involves bread.

Any ideas of something delicious to add to my luttuceless salad for next time?
I always use onions, bell peppers, cucumber, and avocados in my salads.

Reply

dense chocolate all the way. glazed are for the inexperienced taste buds. ha!

Reply

I am 35 years old and I have lived all my life in the town where Krispy Kreme was born. Our “Hot Doughnuts Now” sign is always on so I’ve never heard of them giving out free ones when the sign is on.

BTW, Did you know that today is National Doughnut Day and KK is giving out a doughnut free no purchase necessary? Dunkin’ is giving them out free with the purchase of a drink.

In my book, Dunkin’ never wins. I always go for the Choc Iced Kreme Filled at KK.

Reply

I always thought the light being on at Krispy Kreme meant they had hot donuts ready, but you still had to pay for them… I think I’ve been jipped all these years.

Reply

Hi there! I am a new reader to your blog and I love it!!! I was wondering what you do with Brooke when you run? I run with my daughter in the jogging stroller but you look like you manage to get some solo runs in. What’s the secret??!! ;)

Hey!!! I go before my husband goes to work so that means I get up crazy early:)
