An easy dinner idea and amazing healthy banana blueberry muffin recipe.

My sister has the most amazing healthy recipes. She is always whipping up something delicious. She really needs to start a blog. Maybe you should beg her to in the comments because I would really love to stalk her every activity when I am away in California.

You really have to try these Blueberry Banana Whole Wheat Muffins:

1/4 cup almond flour

1 cup whole-wheat flour

1/4 cup honey

1/4 tsp salt

3/4 tsp baking soda

1 egg

1/3 cup low-fat plain yogurt

1 tbsp low-fat milk

3 ripe bananas (mashed)

1/2 tsp vanilla extract

1/4 tsp cinnamon

8-10 blueberries per muffin (we fill up the muffin tin 1/2 way with batter and then put 4-5 blueberries and then top with more batter and put more blueberries on top!)

Mix dry ingredients and wet ingredients in separate bowls and then mix together. Bake at 350 degrees until golden brown and insides cooked through (she usually does about 15 minutes).

Makes 12 muffins.

Dinner was also pretty amazing. Whole wheat tortilla with a quinoa mixture of cilantro, tomatoes, feta cheese, cucumbers, yellow and red peppers and carrots. We made a huge batch to continue eating through the week.

After dinner we went to my cousin’s work. I have talked about this place a few times before on the blog but I just have to one more time.

At his work they have every game imaginable (pool tables, every board game, b-ball, golf, pogo sticks… you name it, they have it).

A huge gym for the employees.

They also have the kitchen of my dreams (only half of it in this picture). A cereal bar, every item from Costco, candy drawers, an entire freezer of popsicles, bagels, muffins, fruits and veggies. It is wonderful.

The employees are allowed to bring their family and friends to come hang out. Every time I come visit we manage to go at least one time.

And I spend at least a full hour here. I would be willing to sell all of our furniture for one of these bad boys.

While I was there I saw this bag of goodness and even though I thought it would be gross I had to try the combination of caramel corn and cheddar cheese corn. The verdict = amazing.

But my favorite combination of the night was drinking hot chocolate while eating a popsicle. As soon as I got too hot from drinking hot chocolate the popsicle would cool me right down.

I used to hate olives but now I love them!! I am in love with quinoa and want to try that quinoa tortilla idea ASAP. My job is pretty cool but the kitchen/gym (lack thereof) have a long way to go to reach those proportions!

I love pumpkin muffins (not just in the fall!) I use a gluten free cake mix, one cup of pumpkin, 3 eggs, 1/3 cup unsweetened applesauce and ginger, nutmeg, cinnamon and bake for 20 minutes at 350! We made them last week. I hate olives, too.

I also love blueberry muffins! I hate raw tomatoes. Love ketchup and spaghetti sauce, but cannot stand them raw. I can’t believe it’s possible for anyone to hate olives! They’re my favorite!

Note to self: when I start applying for jobs next year, make sure the kitchen is up to par. I now know to have high expectations. I’m so lazy, I don’t really cook very often but I think muffins would be pretty delicious right about now. If only they were ready for me when I went downstairs for breakfast…

I cannot stand sloppy joes. When I was a kid, my Mom would call them “Neat Chris-es”, in an attempt to appeal to my obsessive compulsive side and exploit the fact that I had a crush on a boy named Chris. No dice. Didn’t work, still don’t like ’em today. Blech!

She doesn’t care for Guac and bacon together? Because that is actually a really yummy combination if you have not tried it yourself. I do not like cooked peas and carrots.

My favorite muffin is my dads blueberry muffins because he puts a touch of lemon in them and sprinkles them with sugar when he bakes them off…not healthy to say the least but hey, there is fruit inside!

I don’t have any healthy recipes on hand but lately I’ve been loving fat free greek yogurt in place of sour cream with my mexican food. I just mix in a little salt and it goes great with quesadillas!

I cry a little inside every time you post about your cousin’s office, I mean pogo sticks? Talk about amazing!

Pretty much the only foods I can’t do are bacon and anything mayo based. When your mom cover’s your head in mayo to kill lice when you are little, it kinds scars you for life haha!

I’m at work! I’m at home waiting for my first client to get here to my basement gym so I can train her. Benefits of my job = I get to help people be healthy, and my commute’s not too bad either! :-)

I had the most delicious pumpkin ravioli when I was travelling in Italy a few months ago. YUM! When I’m not travelling, I LOVE sushi, I could eat it day and night.

I can’t stand peas! I’m reading this at work :) I am a physical therapist waiting for my 8:00 client to arrive…. One perk is that we have a full gym. Also, my clinic is located in a hotel so I go down to the continental breakfast every morning before work. Yum :)

Reading blogs is definitely a guilty pleasure I enjoy during work breaks! I don’t like olives either. Or raw tomatoes, unless they are part of salsa. It’s the slimy seeds and inside that I don’t enjoy. But I love cooked tomatoes, tomato sauces, pretty much everything except raw!

Blueberry muffins are -amazing- especially when they’re paired with banana. Another good combo is chocolate chip and oatmeal :) But I’m definitely with you on olives being on the NO list. Same with fish, eggplant, mayo, and blue cheese. Ick :?

I work from home, and the perks are infinite. I can make my own hours, take time for a mid-day hike or run with our girl, wake up at 3 am and work if it’s best, wear running clothes while I work, stop for snack breaks when needed, etc.

My hub also works from home, so it makes for some great overlapping days with lots of laughter.

The top of any flavor muffin is the best. For some reason the top part is always the yummiest! But if I’m eating the whole thing I like chocolate chip or blueberry. The ones you made sound AMAZING! Olives are nasty. I also don’t like hamburgers. I’ll eat ground meat if it’s in lasagna or wedding soup but as a burger…yuck!

My last office had so much food in it! I am a government contractor now though and there is this whole not giving gifts thing because of it being considered “bribery” so my floor has nothing. If you go to a fed floor though they have 10 kinds of hot chocolate, coffee, and some snacks!

I HATE CHOCOLATE……….I am totally kidding. I literally love all foods….EXCEPT mayo & sour cream! I will eat mayo in coleslaw and in some pasta salads but I really am not a fan…and I never use sour cream on mexican dishes like tacos etc .. just never appealed to me!

I honestly don’t know if there’s a food I can’t stand. I’m not a picky eater at all and will eat pretty much anything in front of me. I have never had the stomach to try foods that are very obviously from animals (as opposed to being a block of pink meat)–pig tails or chicken feet, for example.

Such an amazing place to work! My new favorite recipe that I had for dinner a few nights ago was brown rice pasta with chicken and spinach and a sprinkle of parmesan cheese. SO YUMMY! I honestly love all foods. I will try anything once, and typically don’t hate it once I try it! My favorite muffin would have to be blueberry muffins!

I just made healthified huevos rancheros for Cinco de Mayo this past weekend – recipe will be up on the blog tomorrow!

There are really not many foods that I cannot stand – I’m an equal opportunist! However, I suppose sardines would fall into this category. Someone dared me to try them in high school. It SO wasn’t worth the dare.

I am so envious of your bro’s workplace. I’m a huge believer in workplace benefits. I’ve never worked at a place like his, but I did have a gym in the building once. It was heaven. My current workplace is a small business, so amenities are scarce. It’s a converted house turned into a business. I suppose the biggest benefit is peace and quiet :-)

Favorite type of produced muffins is Dunkin Donuts’ reduced fat blueberry muffin (it is not lowfat, I am sure) and my favorite muffin to make is apple cinnamon.

I work at Nat Geo and we have a gym in our basement, a delicious cafeteria with a professional chef who creates meals with local ingredients and focuses on sustainability. We also have a weekly farmer’s market, a bee hive, and of course our museum and speaker series, which we can usually go to for either free or a super discounted price. We also get to pick out two photo prints to be framed for our offices (I have a cube, so I haven’t ordered anything yet, ha). Best perk? Green Fridays! Throughout the summer, we get about 10 Fridays off to save on energy costs. It’s like an extra 10 holidays! I forget how to work full weeks and the fall comes as quite a shock.

That muffin recipe looks amazing! I just happen to have an overstock of bananas (I am allergic to raw bananas but can eat them in baked form or in a smoothie. Awful I know) and some blueberries at home. Looks like I’ll be making those muffins soon.

GUACAMOLE?! HOW?! How can someone not like guac?! Oh my poor heart, I am devastated. I agree with her on bacon though, even the smell of it makes me sick to my stomach. She does need to start her own blog. Your readers are seriously lacking in Curly pictures with you living so far away from them. It’s really the right thing to do on her part.

A great benefit at my job is their tuition reimbursement program. If I get an A or B I get 100% of my tuition, books, and lab fees reimbursed.

oh my goodness i LOVE olives. i always have a few different kinds in the fridge that i munch on while making meals (those, and pickles. lots of sodium i know, but so dang delicious). my absolute favorite are black ones though, i put them in almost every dinner i make :)
the last two nights i’ve had pineapple/chickpea tacos that are SO good. you roast a can of chickpeas with about a tbs each of olive oil and apple cider vinegar, salt/pepper/cumin/lots of garlic for about 30 mins, sautee some yellow onion and then throw some pineapple chunks into the pan for about 3-5 mins, mix it all together with whatever toppings you want in whatever tortilla wrap you want. SO good, i was amazed :)
and yes i am at work right now, shhh! we have an amazing kitchen here. but sadly, no gym

OMG, that place looks like heaven! Benefits from my job: free lunch on Thursdays, free spearmint Orbits, no working on Fridays during the month of August plus we close one week in August and one in December! Oh, and I’m the only girl so they spoil me ;)

Most hated foods: peas and liver. I also cannot stand duck!

Healthy post-run recipe: GARLIC SHRIMP WITH WHITE BEANS AND TOMATOES

INGREDIENTS:
8 oz medium peeled and deveined shrimp
2 tablespoons olive oil, divided
3 garlic cloves, minced and divided
1 bay leaf, broken into pieces
2 ounces (50gr) cherry tomatoes
1 tablespoon tomato paste
1cup white beans, drained
1 cup vegetable broth
2 tablespoons chopped fresh parsley

DIRECTIONS:
Heat a large skillet over medium-high
Toss shrimp with 1 tablespoon oil
Add shrimp to skillet
Sauté 1 to 2 minutes
Add half the garlic the last few seconds of cooking
Spoon shrimp into a bowl and set aside
Return skillet to heat
Add second tablespoon oil, bay leaf, and remaining garlic
Cook till garlic is golden, a few seconds
Add tomatoes
Cook till most of the liquid evaporates, 2 minutes
Add tomato paste
Cook till tomato mixture darkens
Add beans and broth
Simmer till it’s a thick stew, 5 minutes
Stir in shrimp and parsley
Add corn starch and wisk
Cook till heated through
Serves 2

Per Serving: calories 368 carbs 26 fat 16 proteins 29 sugar 3 fiber 6

I also add a cup of rice to it otherwise, I’d never get full!

Kale Chips (I know all of you probably just stuck your tongue out but hear me out!). Buy a fresh bunch of Kale, mix with olive oil and paprika, bake, and then sprinkle with sea salt. Great alternative when you are craving potato chips! Full recipe here:

I love that brand of Chicago Popcorn because its the closest I can get to Chicago Mix while I”m away from home. Garrett’s Popcorn is the best and original and if you ever go to Chicago, you need to stand in line for hours to get it because it’s totally worth it. I would not lie to you.

I don’t like cantaloupe or honeydew melon. I also hate the smell of bacon.

Disclaimer – I generally hate any weird, vegan, super healthy type food, esp recipes that try to mimic real things like potato chips……….. but KALE CHIPS ARE THE BOMB! They are super delicious and crunchy! You seriously have to try them, Janae!!

I work at a hospital, it is really beautiful, almost like a hotel. There is a Starbucks there.

I don’t get to read while at work, but that is good, the day flies by because I am busy.

I read this post yesterday morning and thought about the muffins all day. so when I got home, I made them. My boyfriend now thinks I am a cooking genius. I am trying to write a cooking/ running blog, but I keep forgetting to take photos of my food and I eat it too fast. Ah well, maybe with practice, I’ll get better. I love the discipline you show in so many areas of your life – blog posting, ab workouts, stretching – you rock!

Oh my gosh, I can’t believe you had never had the cheese and caramel popcorn combo before, did it change your life or what?! If you’re ever in Chicago you NEED to get the Chicago mix from Garrett’s, it’s legit the best popcorn you will ever taste.
Also I don’t understand how your sister can not like bacon and guac?! Those are probably the 2 best foods in the world…

I do have a muffin top, too and I am tyirng very hard to get rid of it.I am on protein diet. I must try african mango. I hope I can. I don’t think we have that here in Malaysia.
