A decision I still regret.

Yesterday’s workout was teaching a sweaterific (my new favorite word) spin class, followed by some 8 minute abs with my main homie.  I have been doing this video almost every day for two weeks and I am positive that it is actually getting harder and harder to do each day.  Also, I really think we should go back to wearing the early 90’s workout fashion.

I took a picture of lunch but decided not to show you because the bowl of leftover macaroni and cheese next to the bowl of raisin bran didn’t really look very good together.  It was one of those days that both things  sounded delicious for lunch and so I had both.

A few hours later we took it to the park.  Brooke really likes other kids.

My friend and I went on a walk on the trail and then played at the park with the kiddos.

After the park Brooke and I went to the library to get some new books because I have now read every book that she owns to her approximately 12 million times.  We learned all about electricity, squirrels and the Berenstain Bears.

When Billy got home from school I told him that I was making homemade taquitos and this was his reaction.  I think the Cheetos really make the picture.

This is one of my ‘proud of myself’ meals.  It was really good.  First, I cooked two chicken breasts in the crockpot and then shredded them.  I mixed in a can of green chills, a tablespoon of taco seasoning and some salsa and filled the corn tortillas with the chicken mixture and some cheddar cheese.  Rolled them up, sprayed the tops of them with cooking spray and baked them for 15 minutes @ 425 degrees.  Served with some green peppers and apples.  

I am still regretting the fact that we didn’t have guacamole for the taquitos.  Next time.

Dessert was chocolate from Brooke’s Easter basket.  It is going to be a sad day when I actually have to ask her if I can eat all of her Halloween/stocking/Easter basket candy.

Poor Brooke won’t even know what hit her when her candy is gone. Your lunch does sound delicious. Leftover mac and cheese is almost as good as fresh mac and cheese. Today is a running day for me after pool running yesterday. It’s a need for speed kinda day!

I’m going to preface this by saying I normally think babies are not cute in the slightest (not sure why, just always have) but I can honestly say your Brooke is the CUTEST freaking little thing I’ve ever seen. Every picture she looks stinkin adorable. I cant get enough! You should be very proud of her :) (not that cuteness is everything in life but it doesn’t hurt, right?)

I have an easy paced 10 miler today and my favorite Mexican food is Chimichangas…basically fried burritos ;). Mainly I am commenting to say Brooke is the cutest baby on the Internet and I support all pictures containing Cheetos! I caught up on your blog this morning and thought your scale post was very brave.

I was told to rest today since I have a half on Sunday but I just can’t. So I’m doing the elliptical for the next couple days.
Then I have to post, make food, and go to work.
I love any and all mexican food. Fajitas are my favorite though, complete with side plate of all the toppings.

Haha love Billy’s reaction. Those taquitos look delicious! I must try them sometime :). Today I ran 7.5 miles. It’s been a good running week for me! Are you also running today too? The rest of my day will be spent applying for graduate school/applying for jobs/ studying for a final tomorrow!!!

I LOVE Mexican food. I think my favorite dish is veggie enchiladas. The last random meal I had consisted of a quinoa stir fry, peeps, and jelly beans.

You may have to pick me up from the airport because every picture of Brooke just makes me want to give her a big ol’ hug. She is too friggin’ cute!
Sadly I love any and all types of Mexican food. I’m so making those taquitos when I get off my sugar detox-they look yummy!
I am on day 54 of complete rest (except for stretching, PT exercises, and foam rolling) for a “it’s never going away” ITB injury. And I have a mini tri coming up in 7 1/2 weeks. Yikes!

Just got back to NYC from Australia. After traveling for 24 hours the 3 things I’ll be doing today is: 1. Order in and have breakfast in bed. 2. Have a nap later today. 3. Think about what I’ll have for dinner tonight.. Very easy day I would say:) My favorite Mexican food is veggie burritos with a lot of guacamole and the last random meal I had was vegetable fried rice and chocolate.

Mexican is my #1 fav food! I’m all about a burritos!

Todays plans: work, hopefully doing Bikram tonight, relaxing when I get home with a good movie.

Random meal: last night was a bit rushed as we met our friends newborn baby girl for the first time! I made them strawberry cookies. I ate one of them and made myself a quick “quesadilla” on a roasted red pepper wrap with just melted cheese and some franks red hot sauce. Microwave for 30 seconds, perfect every time!

Today is a running day for me. I’m getting so used to all of the cross training and rest days that it’s a surprise when I actually have to run. RLRF is a tricky training plan.

Today I get to: work, do laundry, and pack to go hang out with my little sister and run a half marathon! Hooray! It’s my first one of the year… It’s still pretty chilly in the Midwest :)

–Today was a sub-par cross training day that should have been a rest day!!! body tired!!!
— so far no random food today, but usually you can always find Kirkland Organic Tortilla Chips from Costco as a “side” to EVERY MEAL. so perfectly salty and crunchy : )

— today I plan on studying my badonk off, then CLEANING MY APARTMENT. this is so so needed. infact, I think it is a priority over studying.

Today I have planned a workout (already done!), making an awesome dinner, and doing my taxes (ew). I did cross training today, I have a stress fracture so I can’t run until May 14 (2 months off of running..I literally have a calendar counting down the days until I run again), so my workout was rowing, spinning, elliptical, lifting and abs! (20 minutes of each cardio)..

Favorite mexican food? Fajitas with guac!! I like the kind we make the best, I prefer my own “mexican” rather than going out for it…

Last random meal I had? Bowl of tun, bowl of cottage cheese, wheat thins dipped in both. mmmmm..

Your lunch sounds perfect to me. I get a lot of random cravings like that so something like a grilled chicken salad with a bowl of almond butter oatmeal on the side definitely isn’t a strange thing for me. And I have to say that cereal makes the perfect accompaniment to pretty much any meal.

And I’ve got a pretty busy day ahead of me with work and last minute birthday errands to run, so I should probably get on that instead of sitting here reading blogs ;)

It’s hard to pick a favorite mexican dish because I pretty much think they are all a delicious form of tacos, just compiled differently. You can make burritos (huge rice-filled tacos), taquitos (sort of like fried tacos), enchiladas (extra cheesy tacos), chimichanga (huge deep-fried taco). top them all with salsa, avocado, and sour cream and I am in heaven.

I have planned to eat lunch with my dad, interview for a summer job, and go with my fiance to pick up my wedding band! It should be a fun day :)

And today is a cross training day for me. I am hoping to get some strength training in and maybe go to a Pilates class.

Three things for the day: work, class, and Glee. Wow. I just realized how incredibly unexciting that sounded.

Favorite Mexican dish has to be some good chicken enchiladas, and by good I mean the recipe that comes on the side of the of the Campbell’s Cream of Chicken can (http://allrecipes.com/recipe/campbells-easy-chicken-and-cheese-enchiladas/), which is probably the most Americanized Mexican dish known to man. lol. I like queso too. Muy bien.

We often go out for Mexico food and then get there and realize all we really wanted were the margaritas, chips and salsa and then we leave and eat dinner elsewhere. I could eat a burrito bowl from chipotle daily though.

Tacquito’s are my favorite mexican, but I have never tried to make them myself. I just might have to now!

I am going to run tonight outside, it is a whopping 10 degrees celcius here near Toronto (50 degrees fahrenheit for you guys). I am moving across the country soon and the stress of it all is getting to me, so running will help me blow off some steam. I can’t wait :)

LOVE Mexican food. This week we made burrito bowls, which was basically just a delicious bowl-filled salad of spinach, chicken, guacamole, salsa, tomatoes, green peppers, brown rice, and black beans.

Hill repeats (which I was supposed to do this morning, but I slept in..oops), yoga and a 10 mile bike ride are all on the plan for today.

I am VERY sad for you that you didn’t have guac with your meal!! It’s just not the same. We made homemade taquitos last week. Mmmm. I think my favorite Mexican dish might be carne asada or tacos al pastor. But that is tough. I REALLY like Mexican. And since Ross went to Mexico city on his mission, we eat it a lot.

I went to the class at the new gym I am going to this morning. It is cardio and abs. All the box jumping, plank jacks and mountain climbers are giving me shin splints. Grrr. But I am really digging these new classes!

Yesterday I ate a can of tuna with crackers followed by some cuties. Sounds gross and random, but it worked. I get lazy at lunch time if I don’t have left overs to eat.

I swear with every picture of Brooke you post I think that is the cutest picture or my new favorite…and then you post another and I make the claim all over again!

I recently saw a recipe for buffalo chicken taquitos and this just reminded me that I still need to make them! Your version looks really good too, though… maybe I will just make both. :)

I love making homemade taquitos! I’m not going to lie I am SO looking forward to being able to take my children to the park. I love parks! My best friend and I used to make lunch and bring it to the park when we hung out in high school and college but now that we both have full time jobs we don’t have time for the park.

THREE things I have planned for today are I get to leave the house for the second outing since my surgery. I’m going to my second post-op doctor appointment. And then my dad is taking me to lunch. Of course, it will be to go because I have to keep my foot up, but I’m still excited about it! I don’t have a third thing…

Rest day, everyday. Or at least until I get the doctor release. I am going nuts with this one!

Very important information about guacamole for you:
YOU CAN FREEZE IT! Then, to defrost it, leave the package under cold/lukewarm running water, or put it in the fridge for a day or so. I do this with Wholly Guacamole packages, both the big ones and the cut 100-calorie packs I get in BJ’s (Costco prob. sells them.)
The moment I discovered I could freeze guac and it was just as delicious defrosted, I think I bought a case and shoved it in my freezer. It’s simply awesome to have it RIGHT THERE whenever I want it!

I have to stick to what my doctor says for now. I’m recovering from foot surgery. I honestly haven’t been running in two months and that worries me too much. I may or may not have cried this morning.
I had a random meal this morning after breakfast-er, snack. I melted PB and added m&ms. I love melted PB- only way I eat it! And speaking of eating things, I can’t stand Mexican food…nasty:)

Today I had a tempo run planned but I’m literally falling asleep on the keyboard…That’s what spring does to me! So the three things I got planned for today are: going home and sleep, going home and sleep, going home and sleep ;) Btw, yesterday I went to Trader Joe’s with the list of your favourite things: I bought the mandarin chicken, the fluffly brown (and white) rice, and the pear champagne vinegreitte (plus a whole bunch of other stuff!)! I’ll let you know how everything was!

I loved Berenstain Bears books as a kid! I think we had like 20 of them.

Three things: run, pick up a few things at Tractor Supply, eat dinner! (very exciting, I know)

Running day! We currently have a surprise snow storm going on… 2 inches and still coming down heavy. We will see how my planned 4 mile tempo run on the trail goes!

Last random meal- I ate a Luna bar for breakfast today, which was random for me. Usually I have a piece of fruit and a bowl of cereal but I was in a hurry. Luna bars are typically reserved for a pre-long run breakfast.

I have definitely noticed that babies really love looking at other babies/toddlers. They must be thinking, “I can’t wait to be a big kid!”

Um that sounds delish! My favorite mexican dish are white chicken enchilada’s. They are by far my favorite food ever! They have jalepenos and pecans (don’t hate until you try) and they make my mouth water just thinking of them!
BTW- my hubby has the same shirt as Billy and wore it the other day ;) Random, I know haha!
I totally had federal grand jury today! Crazy! I actually have to serve for an entire year and have to go the first and thursday of every month! I think that takes up the three things for today, because it definitely took forever! Very interesting though =)

How do you cook your chicken in the crock-pot? I usually make some concoction that involves covering it with broth and cooking on high for 4 hours. It’s delicious but takes too long! I’m hoping you know some magical secret that makes it even easier and faster :).

I buy frozen chicken breasts and just throw them in! That’s it! I season after I shred them!

We must be on the same meal schedule. When you had Chipotle, I had Chipotle. When you have mac & cheese, I have mac & cheese.

Today was a rest day for me. I love those days even if I passionately love running.

So I did the 8 minute butt workout last night and it was pretty embarrassing to have my brother in law walk in, what with the spandex bum close ups. BUT (see what I did there?), you’re right, they’re great!
