Why don’t I eat Quesadillas every day? You take a flour tortilla and stuff it with cheese and other deliciousness and within 2 minutes you have the perfect meal. We hit up La Victoria’s in Downtown San Jose for lunch and my $2 quesadilla with their special yellow sauce in the background was the best way to start celebrating the weekend (now that I am not teaching I just get excited about the weekend because everyone else is excited about it and because Billy is home more).
I asked them for extra salsa in my quesadilla and they delivered.
Fast forward 6 hours and we got dinner together. Since my Bangs Friend and her husband are going out of town today (how am I going to live without them for 16 days?) we decided we needed to clear their fridge of all of their delicious leftovers.
I have NEVER had corn chowder until last night, definitely a winner. I made the salad (aka spinach, feta, cranberries and poppyseed dressing) and we put her leftover turkey on top.
We all decided that Brianna’s poppy seed dressing is the best salad dressing ever invented and our friend said that it is so good you could eat it on anything. We dared him to eat it on cheez-its thinking that he would think it was gross… he really liked it. I guess it is that good.
Did you know that there are people out there that actually do make the amazing things that they find on Pinterest? Did you know that there are also people that make those recipes they find on Pinterest and it even turns out better than what you see on Pinterest?
She MADE this Snickers Cheesecake. Close your eyes (okay, just close one eye so that you can still continue reading) and picture an oreo crust, creamy cheesecake filling with snickers in and on top of the cheesecake with caramel sauce covering the whole thing.
We ate our dessert while watching Modern Family (aka the funniest show that has ever been on television).
And for my own selfish desires a picture of Billy and Brooke because they make me happy.

I have to agree that the poppy seed dressing is one of my favorites.
My dessert last night was Pumpkin Pie Ice Cream from Publix. I made a special trip to Publix to get the ice cream to find that they were out. I went into panic mode, ran to the customer service desk, and waited for 10 minutes while they found someone to go to the back and open a new box. It is soooo good!
Getting ready to head out for a 9 miler this morning with one of my best running friends. Running with someone just makes the time fly by.

Seriously. Can I move to San Jose so we can all have cheesecake together? I don’t remember Luke’s comment about the gown, so I will have to watch the episode again! Sadly, I’m not running this weekend. I was supposed to run a turkey trot tomorrow, but I pulled my back on Wednesday. I van barely walk without pain, let alone run. I’m so sad because I’m in the middle of marathon training… Which I’m not sure I’ll be able to do now. :(

I LOVE quesadillas! I always ordered them when I was younger because it was the only mexican food I liked at the time, clearly I was a smart one. And I can imagine the dressing being good on cheez-its, My friend used to dip her goldfish in ranch, so it sounds kind of similar.

I just inhaled peanutbutter pie for breakfast, and the snickers cheesecake STILL looks good…i might have to consider taking one with me to thanksgiving dinner…since everyone else hates cheesecake (!!!what-th-wha?!) It could be all mine! MINE!!!

Poppyseed dressing is a hit or miss in my opinion. I’ve had some pretty awesome brands though. Lately, I’m all about the Honey French dressing. I don’t know about on cheese-itz, but it’s pretty good on salads.

Hands down balsamic vinegarette is my favorite dressing! So yummy! My Friday night desert was pumpkin cheesecake from the Cheesecake Factory. Their cheesecakes are Amazing and anything pumpkin during fall tends to get an extra thumbs up! My long run this weekend is my first ever marathon in Philadelphia! The best dressing ever is TJ’s light champagne vinagrette, it’s so good. And for dessert last night we had left over birthday cake from my little boy’s party. It wasn’t too bad, although the sugar rush was nasty!!

I’m a Bay Area native and I LOVE La Vic’s! Definitely a hidden gem of San Jose, but once you find it, nothing compares! Their orange sauce is amazzzzinggggggg (but unfortunately like, $6 a bottle, and I could drink it.)

I made strawberry salad dressing last week with frozen strawberries and I can eat it by the spoonful…it’s that good. I’m sure this is really healthy.
