Entering a famine

Every Saturday morning until the end of the semester Billy has practice mid-terms.  I try to convince him to stay party with us because they are just ‘practice’ tests but he seems to really be taking this stuff seriously for some reason.  Pancakes with crumbled up pieces of chocolate chip cookies & old episodes of Everybody Loves Raymond > (by a lot) sitting in a desk answering questions about cases.  He gets home at about one so we will just have to party extra hard when he gets home.

In the last post you couldn’t really see our bibs that we were wearing for our costume so here it is:

DSC 4614We tried our hardest to find lobster bibs but settled on the crab ones.

It is really weird to not exercise (even with past injuries I was still able to bike, swim or use the elliptical) in the mornings but I am wanting to give my back as much rest as possible because I become slightly more and more crazy every day I go without running so I must heal ASAP.  This also means I get to tell you all about Billy’s running (heaven forbid we are ever both injury-free at the same time).  He went on a 5 mile trail run yesterday with some crazy inclines and this is a picture he took while out exploring the mountains.

Before I forget, I have to ask you if you have ever had TJ’s pumpkin butter?  What do you eat it with?

I might have to make Billy stop at the store on his way home from school…

I feel like I am about to enter into a famine because stores will stop selling candy corn and so I need to go buy as many as I can to get me through the year.

HOPE YOU ARE HAVING AN AMAZING SATURDAY AND THAT YOU GET SOME DELICIOUS HALLOWEEN CANDY AT SOME POINT TODAY!!

We had our trunk or treat last night and I have SO MUCH leftover chocolate pudding (I made 10 boxes of chocolate pudding for the pie eating contest that ended up NOT happening). Looks like I’ll be making A LOT of chocolate cream pies tomorrow.

I saw this recipe using pumpkin butter that I thought looked pretty tasty (although healthy-ish) http://www.healthyfoodforliving.com/no-bake-pumpkin-butter-oat-bars/

I don’t think I could handle trail runs – even ground for me :) haha

I’m glad you’re being smart, resting and taking it easy.
I can not WAIT for the halloween chocolates to go on sale. It’s a big event my mom and I take advantage of every year ;)

I really need to give TJs another try (long story) because everything you post from there looks/sounds so tasty! Plus a friend of my was raving about her TJs the other day so…

I found an older post of yours with a dessert you threw together of brownies, vanilla pudding, graham cracker crumbles and chocolate sprinkles. I’ve made a large batch for our friends’ Halloween party tonight (and yes we taste tested beforehand :). Thanks for another great, and delicious, idea!

Hey Girl! So sad to hear about your injury :( I too have been toting around my son in his carseat and just praying I don’t trip over something and he gets hurt- so at least little Brooke is okay! Hope you recover in the next few days so you can get out and RUN like a wild woman again- I know I need to run everyday to kinda keep my sanity ;) And chocolate chip pancakes and candy corn are two of my most favorite things in the world!!I once ate choc chip pancakes everyday after university for about a year! Have a great weekend with your cute little fam!

Reply

yes, i agree with the others, janae! make it your #1 priority on thursday to get out for discounted candy!

TJ’s pumpkin butter is the best. Put it on toast, oatmeal, muffins, anything really! Oh it’s great on waffles with some peanut butter too.

I have pumpkin butter at all times for this reason: Apple Cinnamon Pumpkin Oatmeal. I threw these ingredients together last fall and it changed my life. First cook a serving of old fashioned oats (best with unsweet vanilla almond milk but water is just fine too) and while that’s cooking, sautée two apple slices with nonstick cooking spray and cinnamon. Top your oats with cinnamon chips, a T of pumpkin butter, and 2 T cool whip. Then, add your soft cinnamon apples to the top. It honestly tastes more like a dessert than a breakfast.

Homemade biscuits are the best with that pumpkin butter!!!! I always add real butter too so it gets all melty and gooey….

I am feeling your pain with your injury…every since last Sunday I have been having some shin pain in my left leg and I am afraid now that I might have a stress fracture. The pain has gotten worse and more constant. I ran on Wednesday and it hurt almost the entire run, so I haven’t run since then. I did Jillian’s Shred on Friday and I only felt the pain during the jumping jacks and high knees.
I plan to go the ortho dr tomorrow to hopefully find out what is going on. I am sad because I want to run so badly but I am afraid at the same time.
I know you had a stress fracture in the past so I am trying to channel your motivation to do other things (elliptical, bike, weights) but it’s really hard! lol

Guurrrll… THIS is what you do with TJ’s Pumpkin Butter:

My fiance LOVES Trader Joes, I think I’ve gone 2 times in my entire life and there is one close by. But I always ask for him to pick up the essentials for me, like Cookie Butter and Pumpkin Butter. I put pumpkin butter on bread or toast or crackers. Pretty sure my Fiance eats it with a spoon straight from the jar.

I love to make these bars with pumpkin butter – http://www.adozenyearslater.blogspot.com/2010/11/recipe-pecan-pumpkin-butter-bars.html

The recipe calls for the Williams Sonoma pumpkin butter, but I just made them again last week with the Trader Joes pumpkin butter.

Pumpkin butter + cream cheese +bagel/toast =breakfast of champions. Especially when combined with hot cider/hot chocolate.
